recipe for using up onions please.

We have tons of onions from the garden and as I hate to waste good food has anybody got any suggestions how to get through them all. An onion soup would be nice but not too much cream please!

    Hi Elizabeth

    You could give some away like we do! Are your onions ready that you planted this year then? Ours are not.

    We store them in string/net bags so they can breathe and hang the sacks on large nails in our shed. I check them from time to time and remove any bad ones. You have to "top and tail" them and generally tidy them up, after you have left them to dry out before you put them in the sacks, but you probably know that. :oops:

    When they begin to sprout the following year, I fry the onions up and put them in containers in the freezer and throw them into any meal that I am cooking, if suitable. Onions are often used in soups and I tend to put more in than the recipe says, because one does not have to be precise when making soup.

    Well, I guess soup is the obvious one, but what about chutney or an onion jam? Must be recipes somewhere on the web. Cheese and onion flan/quiche is an option too, and how about a savoury loaf of bread? DD

    Me too Elizabeth - I saw them string em up om Gradeners world the other day so i am wilting the stems to tie them up later this week.

    I do have a rfrecipe for onion soup which i will happily pass on, but it causes terrible after effects :shock:

    Dont worry about the side effects Toni. We did used to give them away but we are poorer now so have to economise.
    I have never been keen on freezing loads of stuff. Not sure why. I like everything as fresh as possible. Feel free to enlighten me on the benefits of freezing.
    We have still got lots of chutney from previous years but OH intends to make plum chutney soon as we have a plum tree.
    Savoury bread sounds a great idea. Anyone got any recipes.

    I was going to say , our Elna is the resident cook, but I am to late.
    I do like to freeze left overs, I hate to throw food away, and I think if you freeze it on the day, then it stays nice and fresh, must say though I dont leave it in the freezer for that long.

    Hi Elizabeth

    Just asked the master gardener and he says the onions are just turning over. so they will be brought home soon to dry out and I shall be summoned to "run" in and out depending on the weather to cover and uncover them :roll: :) Later the task of topping and tailing and storing them. They last a goodly while. We have noticed over the years that some "makes" store better than other and of course the colder the weather the longer they store. I have no problem with freezing fried onions at all. I no longer freeze green beans, toms as they take up too much room and the beans especially never taste anywhere near as good as fresh. I do freeze stewed plums/apples/rhubarb for crumbles in the winter - yum :)

    Cor! That sounds smashing - with a strong cheddar not bland at all. Add some milled pepper - terrific! Thanks babycham, I'll try that for lunch one day. Hang on, doesn't the cheese add to the cholesterol? Oh who cares, it sounds good. DD

    Toni have you found the onion soup recipe? I would like to find one that is thin so no cream maybe a French onion soup.

    We do freeze apples and crumbles but we dont have a large freezer so space is limited.

    i love this cheese and onion recipe,line a tin with pastry then layer of cheese caramalised onions another layer of cheese so on.finish with pastry on top,cook for about 20 minutes,nice hot or cold,

    Dell reminded me, we bought some onion marmalade from a farmers markets, it is delicious, let me know how you get on with it, if its easy I might have a go :)

    Can't stand onions just he smell of them literally makes me sick So my advice is grow beetroot instead :lol:

    Ok Elizabeth

    I use about 4 onions sliced so they look like 'O's

    cook them in a frying pan for about ten mins gently till they soften/ start to brown - I do this with butter or marge not oil.

    then put in a larger saucepan. Add one and half pints veggie stock and salt and pepper to season - I sometimes add a drop of wine if I have an open bottle or a bit of thyme.

    Then all you hae to so is simmer for about 3.4 an hour blumin lovelya and keeps the bed warm at night too :wink:

    Blimey that is easy. The stock I have is very salty although very nice.
    What stock do you use or do you make your own?

    I usually just use O*o veggie cubes unless i have been cooking anyway and have some.

    I reckon if yours eat meat it would be nice with chicekn one.

    Obviously you can fancy it up with croutons if you have the energy.
