Savoury Mini Muffins.

Simple, quick and won't hang around for long!
Ingredients
1/2 small red onion, finely chopped (I use an electric chopper)
175g self-raising flour (or plain plus 1 and 1/2 tsp of baking powder)
1 tsp cayenne pepper and 1 tsp chilli fkakes
1 egg
110ml milk - I use skimmed
125g grated cheese (I use extra strong cheddar but other types work as long as they are hard) (and I don't mean aggressive )
Method
Preheat oven to 160 degrees (no idea of the gas equivalent, sorry)
Fry the onion in a little olive oil until softened.
Grate the cheese and beat the egg.
Sift the flour (or flour and baking powder) and cayenne pepper into a bowl, making a well in the middle.
Add the egg and milk then stir to combine.
Add the onion, cheese and chilli flakes. The mix can be quite stodgy so be prepared for some heavy labour.
Lightly oil your muffin tray (I have a silicone one with 20 slots, I use a piece of kitchen towel dipped in olive oil and wipe each dip).
Put a small teaspoon of the mix in each dip then top up with the remains so they are all fairly evenly sized.
Put in the oven for between 15-20 minutes. Take out, wait for them to cool and then be gracious in accepting the compliments which will surely follow.

It's a pleasure, a friend made them over the weekend using leerdammer and chives which I might try as we have loads of chives growing outside the back door.

I made a more gentle batch this morning, the cheese was Double Gloucester with onion and chive, I added onion of course then a dozen or so strands of chive, snipped directly into the mix. They are OK, on the bland side for us but not everyone likes to have their socks blown off. Next time I will add ground black pepper to give a little background warmth. DDHave you got the despatches?
