I wondered if you had tips on quick healthy meals.

I anytired easily and dont feel i eat well sometimes because of this any ideas on quick healthy meals that will do me and family good.from Joanne

    I tend to cook things like stews/chilli/spag bol/cottage pie/etc in batches when I am feeling OK and then pop portions in the freezer..... they are so handy when I'm not on top form as they stop me from reaching for the take away menu!!!! :lol:

    I follow the weightwatchers plan and their website has loads of quick and healthy meals that taste fab but need minimal effort (my partner hates low fat food and even he loves their recipes!!!! :lol: ).

    Hi Joanne,
    I do the same as Poppy-cook big batches of spag bol, chilli, soup etc and freeze leftovers. I'm also very lucky that my lovely husband likes to cook and he has cooked everything all weekend! Macaroni cheese is quick too and there are some good pasta sauces in the shops-very easy and kids love them. There's always beans on toast :wink:

    I have a combi microwave, & one of our best quick meals is a jacket potato cooked in it on a mixed setting so it only takes about 20 mins and they do have a crispy skin.

    Partneered with baked beans, cheese (or both!) salad, coleslaw, chilli from the freezer etc they are filling, nutritious and best of all don't create loads of washing up!

    My other favourite at the moment is home-made soups. There is an endless variety of combinations. When I am struggling I throw everything into my food processor to get sliced, and then just throw it in the pan with some veg or chicken stock and cook - magic!

    there r loads of these recipes on chit chat forum.
    my quickie is corned beef hash.
    lg saucepan of mashed potato,mix in grated cheese or cheese spread.
    tin of corned beef(sliced thinly)
    layer corned beef on bottom of casserole dish.
    cover with mash potato.
    pop in oven for 20 mins or until golden brown.
    add tin of tomatos between layers or onions.
    serve with mushy peas or beans.
    quick easy & cheap.
