One of my favourites for mid week is Linguine topped with chicken in a wine sauce flavored with sun-dried tomatoes, vegetables, and fennel. Once you have all the ingredients ready to go you can have this delicious pasta dish on the table in less than 30 minutes!. found this recipe on the internet too..

Ingredients:

1 Tablespoon all-purpose flour
1/4 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon fresh-ground black pepper
2 boneless chicken breast halves, cut into 1-inch cubes
1 teaspoon olive oil
1 medium sweet onion, diced
1 carrot, peeled, cut into matchstick-size pieces
2 garlic cloves, minced
1/2 cup white wine
1 teaspoon fennel seeds
1/4 cup finely chopped oil-packed sun-dried tomatoes
1/4 cup chicken broth
1/2 pound linguine, cooked al dente
1/4 cup grated fresh Parmesan cheese
Preparation:

Place flour, sage, salt, and pepper in a large zip-top bag. Squish to combine. Add chicken cubes and toss to coat.

Place a large, heavy skillet over medium heat. Add olive oil to the hot pan and swirl to coat. Add onions and carrots. Saute for 2 minutes, stirring often. Stir in garlic and cook 1 additional minute.

Increase heat to medium-high. Add the chicken to the skillet cook until lightly browned. Carefully pour in the white wine. Cook for 2 minutes, then stir in the fennel seeds, sun dried tomatoes and chicken broth. Cook an additional 2 minutes.

Add chicken and vegetables to the cooked pasta along with the Parmesan cheese. Toss to coat. Serve hot.

*I use ready cut veg and chicken....better on the ol' hands.x

    I've been having fun trying to find gluten-free recipes, just need to be creative and I can actually eat quite a lot. I'm missing take aways though, I try to avoid cooking full stop at the weekends.

    Yesterday lunchtime, my hubby made us a spinach curry, which I love and had with some gluten-free crackers while the others had chapattis. For tea, I made some pasta sauce: fry onions garlic and ginger, mix in anything you need to use up from the fridge (so we had chopped mushrooms, bacon and prawns), add a tin of tomatoes and when nearly cooked, add some double cream. I cooked enough pasta for myself too (which I'm always doing) but also did some bacon and cheese potato skins in the oven while I was cooking and had them with rocket salad.

    I also cooked too many potatoes (can't seem to get the portion size right and I'm still trying to work out why I didn't just cook myself some gluten-free pasta so I could eat the same as everyone else?! So I took some leftovers to my dad at lunchtime today :-) Mum and dad cooked an Indian lunch of Parotas (chapatties with fillings) - they'd done a spicy potato filling - which I couldn't actually eat :-( But mum had gone to the trouble of making me a lentil curry to go with some rice, which was very kind, I still get spoilt by my parents at 33!

    For tea tonight we've just had leftovers and the girls had sandwiches, as we usually do at the weekends. We try to use up what's in the fridge but we usually have such a big Sunday lunch, that we're not that hungry come the evening.

    I've seen that website link on here before where you put your ingredients in and get a recipe, it's brilliant!

    You should have used lots and lots of garlic :-)

    For lunch today I have a brocolli, feta and quinoa salad. I got up early this morning to make it and it really doesn't look all that apetising :-( Still, I will give it a go and hopefully it won't be as nasty as it looks - smells OK though.

    Had kidney bean and potato curry last night with gluten-free crackers.

    Well Del, the salad was OK, won't be my favourite meal in the world but makes a nice change from salad or soup for lunch.

    I have a theory that people who eat a lot of garlic don't smell of garlic - we eat loads and don't smell of it but some people seem to reek of it when they've had a garlic-y meal the night before?

    Nina, I love a (gluten free) curry myself and usually have a G/F pitta bread or 2 with it.

    Are you aware these are available? They are quite tasty too!

    Delboy, you sound like a very handy cook.

    When I have some more time I'll share my avacado, orange and tomato salad recipe with y'all.

    Sorry, just catching up on this post as it dropped further down the list. I'm aware of things like gluten free naans etc, but I don't think they taste all that good so am sticking to crackers, rice and jacket potatoes.

    I made a carrot and potato curry this morning before work, will be having that for tea tonight with a jacket potato :-)

    Oh that sounds good. We're having ratatouille and chicken, all roasted in the oven. Nice and easy, only three things to wash up - pan and two bowls. DD

    Tonight we are mostly eating . . .Frankfurter Vichy. Ingredients, onion, garlic, celery, carrots, potatoes, frankfurters, white wine (of course) and chicken stock and tomato puree. Can be done on the hob or in the oven.

    Chop the veg (apart from the potatoes) and slice the frankfurters, I do them about 3/4 inch, then fry the carrots, onions, garlic and celery in butter (or oil) for a while, until you're bored with that bit, then luz in 250ml of chicken stock (I think, doing this from memory, never check it), a healthy slug of white wine, say two glasses, and two tablespoonsful of tomato puree, or enough for it to turn a nice colour, then add the sliced frankfurters.

    Stir it all together, have a slug of wine for yourself, then slice the potato, quite thinly otherwise it takes a while to cook. I usually chop it into small chunks. Stir that in too, sit back and wait for it to cook. It's done when the spuds are or it's all to your taste. Some like soggy veg, some like al dente. I season with pepper, sometimes sweeten with a little sugar if I've overdone the puree. Serve in a big bowl and eat with a spoon. Simples.

    I shall also be chucking in some green beans to use them up.

    I am a bucket cook. Wherever possible it's all done in one pan/casserole. I do a recipe properly once, then wing it. I hate cooking. This tastes OK tho - in fact it's very pleasant!

    So DD, what did you have then??

    S is cooking tonight - he is very accomplished in the kitchen ...he is making beef moussaka for himself and I'm having a lentil one ... we had to go out to get the mince and got soaked on the way home - which is the nearest I've got to a second shower ... so I'm not complaining!!
    He thought it great fun and legged it home ahead of the scooter!!

    Thats sound yummy!

    I had new potatoes mixed in creamy garlic and herb Philadelphia,
    gammon steak and pineapple and salad. It was lovely and tasty!

    Hello speedalong. I had a lovely time at our friends last night. I had some wine, lots of times - I vaguely remember eating something, no idea what it was. No pudding, definitely remember that. Then I fell asleep on their sofa. DD

    Tonight's dinner is chilli chicken, involving chicken (well duh!), tomatoes, garlic, kidney beans, fresh green beans, green chilli, chilli powder, ground cinnamon, organic coca powder (unsweetened) fresh coriander and fresh lime juice. Scrumptious. If anyone wants the recipe I will be more than happy to oblige.

    The Husband will be off to the pub to watch the footy. I will not. Hate the pub he's going to and am footied out. DD

    So glad S isn't into the footie .. he prefers snooker ....

    Every week me and my housemate have a Glee night, we watch the episode on channel 4 so its friday nights for us. For the past few wks we've had pizza or nachos and simple things like that to make it more special.
    tonight as its the last episode and we both have a distinct lack of money i'm making some tomato and mozzarella tartlets. we'll have a side salad with them. its the healthiest meal we've ever had for Glee night! although we're gonna be finishing the meal off with sticks of rock and candy floss, oh the joys of visiting the coast :D:D:D

    I'm coming round to yours del, I adore kidney. For us it's pies and lots of veg: potatoes, parsnip, carrots and leeks. Tomorrow, wholewheat pasta with home-made ratatouille (I add 1/2 teaspoon of cinnamon to my ratt, gorgeous) then Friday will be fish fingers, chips and peas 'cos I will be tired of thinking about food. DD
