Frankfurter Vichy. Trying the chicken variety of franks tonight, just by way of a change - I reckon, Rob, they will taste something like smoked chicken!
Onions, garlic, carrots, celery fried gently in butter (prefer unsalted as I don't like butter), then luz in about a 3/4 pint of chicken stock, enough tomato puree to make it look a nice colour and a good splosh of white wine, add the chopped frankfurters and diced potato, season with freshly milled pepper, cook until done, ie veg to the crunchiness/softness you like. I've got a really nice gammon joint boiling away in a pan at the minute.. Then, in the oven, maybe some pepper corns or something subtle with it while it cooks gently...
Meantime I've got some lamb kebabs in the griddle pan, ibs for pudding no doubt... It's getting to be pretty much anything I eat now... The ibs is thanks to our dear pal arthur apparently.. What am annoying shifthead he is.. Lol

Had a fabulous lunch today at the West Mersea Oyster Bar - a seafood platter consisting of cockles, mussels, rollmop herring, smoked salmon, shell-on prawns, chilli king prawns, peppered smoked mackerel and a half a crab. what a shocker... Once more I shall be having some spicey chicken :eek: :???:
Deep fried in batter made simply from pain flour with schw&rtzz cajun spice mixed in (a fair whack of this is a must, lol) and water..
Chicken cut into approx half inch cubes...
Hot fat.. Fry for a couple of minutes, keeping them moving if possible at first to stop em sticking together.
Constantly removing the 'scraps'... Or as I like to call them, crunchy buggeroos... Lurrvli...
Drain them off on kitchen roll...

Lasagne for us tonight. Lean beef mince, some finely diced chorizo (recipe says Italian Sausage, couldn't find any), loadsa chopped tomatoes and puree, basil, fennel, parsley, bit of sugar to sweeten, ground black pepper and paprika to deepen the colour. I was also going to attempt the bechamel from scratch but hands are playing up so that will be from a jar. Disappointing but I know my limits at the moment and am already exceeding them!Have you got the despatches? No, I always walk like this. Eddie Braben0

That was the best lasagne I have ever done. I will now do a batch of the sauce, with some variations too, and freeze it in pots so that I have it to hand when things are rough. Easy one tonight... been slaving over the bl00dy cooker all week, so:
Salmon fillet in soy sauce, fresh broad beans, asparagus and wedges with sweet chilli for the missus.
Bratwurst, wedges with sweet chilli and peas for me and the little man.No-one was injured in the making of this signature, however, quite a few electrons may have been inconvenienced.0 -
well, I'm making some chicken and rice for the three of us, with red, white and spring onion, maybe spinach if we have any. Cajun style of course... I likes mi cajun
