Evening everyone
Hope you have all had a good day to start the new year off with.we have had a good day. A quite relaxing one after All the busyness of Christmas. Our youngest daughter Stayed the night with us last night to see the new year in. She had to go home this morning as she had a St John ambulance first aid duty to do today. We had a very nice day at youngest’s house on Monday where she cooked a nice roast beef dinner for us all, we also had tea there early evening before returning home. Our Christmas went well I got an MP3 player from Mr t. He did ok with the presents this year. Our daughter got him really emotional on Christmas morning as her present to him was a mug with The last picture (she had with my help secretly borrowed) taken of him and his brother who passed away last Boxing Day. He absolutely loved it despite calling her names for getting him all emotional.

I did manage to stay awake last night to see the new year in but didn’t get up till late this morning. breakfast was yummy.

Barbara I certainly am going to try to make 2020 as good a year as it can be for me. at the moment mr T is a lot less moody, after me telling him that I appreciated it was a difficult time for him what with all the worry about the church being at present without a pastor. And of course it coming up to the anniversary of his brother’s passing, but it didn’t mean that he had to snap at me every 5 mins. He seems to be speaking to me more about church things now. So fingers crossed for that to carry on.
All my love to Bill and Tosca hope they are doing ok.
Well we had a very interesting call from eldest granddaughter today who asked it we still was looking for a cat as she has found out her cat is pregnant apparently one of our darling little great granddaughters let her out. So we will have to see Mr t says we will think about it it I think really feels it is time we had a pet again.

Morning all
Yes I am here in the morning unusual I know.
Joan yes our last pet was a dog but we have had cats before as well in fact it is unusual for us to have been without some sort of pet for so long a period as we have this time. Over the years we have been married we have had fish, 2 budgerigars, around 12 Hamsters in all, 3 cats, and 2 dogs. Hope you and Sue are ok and the doggies.

Toni Yes a kitten is a possibility I have seen on Facebook this morning that Gd’s cat had 2 kittens last night one born on the 1st and one born on the 2nd. She didn’t know she was pregnant until yesterday and vet had told her due within a couple of weeks. However they decided to put in an appearance last night. And as for Mr T I know how quickly he changes his mind so for about the next 12 weeks or so I need plenty of sparkles to sprinkle in his slippers another Aidan phrase, and maybe sleeks help too with This one. :P just reread your comment on sleeks disappearance think she went of to Margate Pusskin visiting.

Toni, thank you for brekky. So pleased that Bill's brothers are helping him with dad's stuff. I saw the new year in reluctantly. We had an early night but were woken by the fireworks and that was it. Which is why I wasn't in yesterday, we were sleeping.
Scottish Rumbledthumps
Ingredients
1 pound 5 ounces mashing potatoes (peeled, boiled and mashed or leftovers)
14 ounces swede or turnip (peeled, boiled and mashed or leftovers)
3 ounces butter (unsalted)
9 ounces Savoy cabbage or kale (finely sliced)
Optional: salt and pepper
1 ounce Cheddar cheese (grated)
Steps to Make It
Gather the ingredients.
Preheat the oven to 350 F/180 C/Gas 4.
Place the mashed potato and swede into a large mixing bowl and put to one side.
Melt 2 ounces of the butter in a frying pan, add the finely sliced cabbage or kale and cook gently for minutes until softened but not brown.
Add the cabbage or kale to the bowl of potato and swede, add the remaining butter and mash together thoroughly. Season with salt and pepper to taste. (Potato can soak up salt, so be generous with it to add a good flavor.)
Place the mashed vegetables in an ovenproof baking dish, sprinkle the cheese on top, cover with a lid or aluminum foil and bake in the oven for about 30 minutes or until heated right through.
Remove the lid and cook for a further 5 mins or until golden brown and if possible a little crispy on the top.
Serve piping hot as a side dish with a casserole, pie or any hearty foods.

The Three Little Pigs

Vegan Jambalaya
WHAT INGREDIENTS DO YOU NEED TO MAKE A VEGAN JAMBALAYA?
Most of this list is made up of your basic pantry staples that you probably already have on hand and fresh veggies, of course:
Onion
Garlic
Celery
Bell peppers of all hues (use orange, red and yellow peppers and they add fabulous color and nutrition)
Tomatoes, and tomato paste
Mushrooms, fresh and dry
Red kidney beans (you can use pinto or black beans with equally good results)
Paprika
Oregano and thyme
Creole seasoning (optional but nice)
Tamari, soy sauce or liquid aminos
Rice
Parsley or green onions for garnish
Salt
Ground black pepper
HOW TO COOK THE BEST VEGAN JAMBALAYA:
Now that you’ve got all your ingredients together, putting your vegetarian jambalaya is going to be the easiest part. You start out with a base of onions, celery and bell peppers — a combination described as the holy trinity of Creole cuisine.
Next, stir in the tomatoes and tomato paste with the paprika, saute for a couple of minutes, then throw most of the remaining ingredients in.
The rice goes in at the end, and make sure you follow instructions accurately, because you want the rice to be perfectly cooked and the grains separate.
This recipe makes 10 servings, so you’ll have plenty of food to go around for a party. And even if you make it just for yourself, this Vegan Jambalaya will be a party for your mouth!

Kari and I enjoyed it very much....to be far we were a tiny bit creeped out at first sight :shock: soon got used to the cats though and when the matriarch came in 'Old Deuteronomy' (sp) and you would not believe it, but she was TOSCA!! most definitely based on our wise old friend t4591

Evening all..its been such a lively day we wrapped up and went to feed the swans and ducks..and I took my new binoculars..

Evening all
Blooming heck 3 days of January gone already think I need more hours in a day. Had my usual lunch/dinner out with mr t but then had a nice chilled out afternoon in my favourite place on my own as my friend was not able to meet me. Still it was lovely because I just sat there with my new MP3 player with my earphones in with a coffee in my own little world.
Barbara yes I am just hope mr t keeps on communicating and not keeping things bottled up it make the atmosphere indoors so much different. Yes we enjoyed day with youngest very much and worth the effort to get up the stairs to her flat she is the middle flat in a house. Hopefully mr t will agree to the kitten there is hope because we are due to go to Ramsgate at the start of February for youngest GD 18th birthday party and he says he will tell oldest Gd that we pop over to see the kittens then. He told me to tell her to keep us in mind so I am just hoping he dose not change his mind without a good reason.
Kath your great nephew is adorable. Yes if thing go right mr t will have to do a visit to Margate around April time when the kittens will be ready to leave mum. Loving the poem about those little piggies poor little piggies.
Toni Sleek has been over with the sparkles she says mummy said it was very important that she delivered them. Oh yes I know how naughty kittens can be our first cat had kittens and they were little horror especially when you tried to sweep the floor they used to attack the broom. They also used to have whT I called mad moments where they would run up and down the hall way and living room curtains followed by mummy pusskin. :roll: :roll: loving the word Aidan- isums. I think he would want us to continue using them and carrying on in the same way as we have always done. I am so glad Bill and Mandy have found another coffee shop.

Treasured Moments

Treasured moments
traced with sadness.
Times of joy,
times of madness.
Youth has vanished,
life is tarnished,
grief lies just beneath the varnish.
Memories that won't diminish,
waiting for the day to finish.
Dreams we had which couldn't last,
voices raised as hopes were dashed,
echo from the distant past.
Abandon customs of your culture.
Travel backwards, change your future.
Cast your spirit far and wide,
ebb and flow, like the tide

Carol, the piggy poem made me laugh, I'd never heard it before and didn't even know Roald Dahl wrote poetry.
Our Alexander is my sisters first grandchild. The last time she saw Ben and Emily was when she went over to NY for their wedding -I think. No, they came over here last year. :roll: I hope Mr T agrees to the kitten.

Vegan Crunchwrap
Ingredients
Adjust Servings:

THE TACO FILLING
1 Onion
4 cloves of Garlic
1 Red bell pepper
1 stalk of Spring onion
200 grams of Veggie mince or TVP
2 tablespoons of Taco seasoning
150 grams of Corn
250 grams of Kidney beans
1 tablespoon of Salsa
Sunflower oil
THE OTHER INGREDIENTS
8 Large tortillas
8 Small tortillas
Tostadas or tortilla chips
A sprinkle per crunchwrap Grated vegan cheese
A couple of teaspoons per crunchwrap Salsa
Lettuce
4 Tomatoes
A couple of teaspoons per crunchwrap Guacamole
Oil to fry in

THE VEGETABLES
Onion: Peel and finely slice.
Garlic: Peel and finely slice, or use a garlic press!
Bell pepper: Cut off the top and remove the seeds. Remove the stalk. Slice into cubes.
Spring onion: Cut off the top and bottom. Finely slice.
Corn & kidney beans: Drain and set aside.

THE TACO FILLING
Heat up a little oil in a pan and sauté the onion and garlic until the onion is soft.
Add the veggie mince/TVP and cook until the mince is crispy.
Add in the bell pepper, spring onion, and the taco seasoning. I used my homemade taco seasoning.
Sauté until the bell pepper is soft, but make sure the spices don't burn. Add some oil or water if the pan gets too dry.
Add the corn, kidney beans, and a tablespoon of salsa and heat through.

THE ASSEMBLING
Assemble the crunchwraps in this order:
1. Large taco.
2. Taco filling in the middle.
3. Grated vegan cheese.
4. Salsa.
5. Tostada or tortilla chips.
6. Lettuce.
7. Tomato slices.
8. Guacamole.
9. Small tortilla.
Fold in the sides sort of like a hexagon. Or look at my video and see how I do it.

I love the poem so clever well done. I think 'mi duck' is a Kath-ism, but one Aidan used to join in with bless him ((())) As Joan said I miss him too.
Is it your online delivery today? I know he always remembered when it was. It's mine at 6-7 tonight an eco delivery as someone else must be having theirs in the village too.
Today's recipe looks fabulous and I will definitely try it. I have ordered some bits to do the vegan haggis recipe you posted a bit back. I might take a photo when I cook it!

Don’t mind if I do yummy! Soon it will have to be a weigh in thread, my Mum has decided next Monday is her date - I still have some mince pies left :oops:
And then we are away for a few days in a week or so and I can’t diet on hotel food
