Evening everyone
Well a busy couple of days it has been for me what with the eye test yesterday. And today I had drs appointment for my ears being very itchy and have noticed hearing not so good dr though itchy ear is a good sigh of wax build up which is what I thought it may be. The result of that appointment Is that my left ear is clear but right ear has lots of wax in I know have a spray to spray in each ear to calm the itchyness down and earex drops to soften the wax. She is also referring me to audiology for a hearing test. Just to make sure it is only the wax causing the problem.
Also today our Graycie went back to her second year in nursery. And Rubie started her first year in Nursery . Of course I have the pictures for you.

Barbara there wasn't anything you could have done for your eyes was there? It can't be prevented can it? I wish it wasn't your eyes, but I know it's the best of the two types of macular degeneration.
I read that we are going to be restricted all of us a bit more too no more than 6 inside. I wonder if that applies to groups like choir. Poor Bolton though.
Kath today's poem is very good indeed. I thought it related to that time of dusk when your eyesight struggles to adapt and driving isn't really safe, but wow another deeper meaning. How what we think we see isn't always what it is. Stereotyping and prejudging. Very good indeed.

Hello everyone, I hope you are all well. On Tuesday I saw Holly taking the girls to school. It was Eliane's first week back. She's in year 10. They both looked very smart. Vay starts nursery in April.
I've been on a spending spree, a new iPad and case (my old one is no good now). A 7 inch Lenovo tablet and ear plugs. I've also ordered 4 face masks from Macmillan Cancer. Toni, I'm all over that omelet. Ta mi duck. 😄
Beer Battered Tofish and Chips
Ingredients:
Tofu
- 400g tofu
- 200ml vegan dry white wine (or one of the minature bottles) (if you don't want to use wine just substitute for water). Check out the Viva! wine shop or ask supermarkets for their list of vegan friendly wines.
- 550ml water
- 3 tbsp lemon juice
- ½ vegetable stock cube
- 2 tsp salt
- Toasted nori sheets (roughly 3 sheets)
Gluten Free Batter
- 120g rice flour (plus an extra bowl with 4tbsp for dusting/coating)
- 15g chickpea flour
- 60g potato flour
- 1 tbsp onion powder
- 1 tsp salt
- 1 tsp pepper
- 220ml gluten free, vegan beer (most independent health food shops, with a licence, will sell this along with some independent off licences and supermarkets)
Method:
Tofu
- Slice the tofu into thirds along the narrow edge then cut each piece into 2 large triangles.
- In a saucepan, add the white wine, water, lemon juice and salt and bring to the boil.
- Add the tofu and reduce to a simmer for 15-20 minutes.
- Remove each piece of tofu carefully, with a slotted turner, and leave them to dry on sheets of kitchen roll.
- Cut the nori sheets to fit the shape of each piece of tofu and use one on each side (tofu doesn't need to be completely covered).
- Leave the tofu to sit while you get your batter ready.
Batter
- Sieve all the flours into a large mixing bowl, add the salt, onion powder and pepper and stir.
- Pour in the gluten free beer and whisk until the batter is smooth.
- The consistency needs to be quite thick (not runny) but not too gloopy either. Leave the batter to stand for 15-20 minutes then whisk again before use.
- You might need to use the first piece of tofish as a test and add more rice flour to make it thicker (if necessary) or more water to make it thinner.
- Heat a medium saucepan half full of vegetable oil on med-high heat or use a deep fat fryer.
- Dip one piece of tofu into the bowl of (dusting) rice flour then dip into the batter. Make sure it is completely covered in batter before lowering into the oil.
- Cook for a few minutes or until golden brown and crispy. If it sticks to the bottom of the pan, make sure you detach it immediately or it will brown too quickly.
- Remove each piece with a slotted turner and place on kitchen roll to soak up the excess oil until ready to serve.

Barbara it was such a shock our Aidan😔 I sort of hope Bill is in his new home before 9th December so he doesn't see Aidan suddenly pass out in front of his eyes on the 12 month anniversary, At least I got hold of you however i managed it.

The girls are so exited I must check in with them today see how they are doing. they have their rented until the 4th so they will take their time actually moving. Rosie needs to be kept nice and calm.

Daily Poem (I didn't get one by email today. I had to search for one, I chose this as it has a joy to it in spite of the hint of sadness. I hope you feel it).
My Mother, My Mother
When I was a child I would run
through the backyard while my father
yanked dandelions, daisies, thistles, crabgrass,
mowed, rearranged the stones around the porch—
the task of men, though I didn’t know.
Blushed with cartoons and chocolate milk
one Saturday, I found a bee working
a dandelion for its treasure the way
only God’s creatures can, giving
and giving until all that is left
is the act itself—and there’s faith, too,
my mother used to say in her magnolia lilt.
It comes as it comes—there’s a road to follow.
When I swat the bee, I plea in triumph.
My father, knee-drenched in manhood,
grins and his gold tooth glistens a likely tale.
And when the bee stings my ear,
I run to him screaming as my mother
runs outside hearing her only child’s voice
peel back the wallpaper. She charms my ear

Toni, I don't know why tat poem appeared twice. My laptop is a Lenovo, so is Chris's. Mines a bit cranky and won't get the Windows updates. But I'm really looking forward to my new tablet. Barbara, poetry is a funny thing. No two people will 'GET' a poem in the same way. I believe there are some people who don't actually like poetry! Can you believe that?

Balsamic roasted new potatoes with asparagus
Ingredients
2 tbsp garlic-infused olive oil
4 tbsp balsamic vinegar
1kg new potatoes (such as Jersey Royal or another small waxy variety), cut into quarters
250g asparagus tips, cut in half
A generous pinch of salt and pepper
Method
- Preheat oven to 200C.
- In a large roasting tin, add the olive oil, balsamic vinegar and salt. Add the potatoes and toss to coat fully before roasting for 30 minutes.
- After 30 minutes, add the asparagus with a little extra olive oil, if needed. Toss to coat and cook for a further 10 minutes.
- Season with extra balsamic vinegar, salt and pepper.
- Serve and enjoy!

Evening all..not a good day..we unrolled our flooring well our son and hubby did.. put it down in the kitchen ready to cut and notice it was torn...then when we looked closer there were indentation from someone's shoes..not ours we hadn't walked on it..so rang them and they are picking it up Monday.. and giving us a refund.. never in my life have I seen vinyl tear like that...

Kath I loved that poem. It felt a tiny bit like my own childhood - the defined men's and women's roles...not so clear these days. Lucky Luther being loved so much. Nothing like a Mum is there or a Dad of course. I think you're right about poetry it's very personal how you interpret and all the more lovely for it. Sometimes you want to know what the poet intended sometimes not!

Hello you lovely lot. Have I had a funny 24 hours. My new Lenovo Tab E4 arrived yesterday and I've been busy setting it up. It is gorgeous. I've called it Len. I can thoroughly recommend it for those with Arthritic hands, or quite young children (take note Barbara and Carol).
Barbara, that is a horror story - I'm glad you will get your money back. I wonder if they will try and farm it onto someone else?
Toni, I'm glad P is doing well. We don't want you crying over your keyboard again We did love our Aidan so. My eyes are playing me up today and I can't quite make out what breakie is, but thank you anyway.

Rainbow Caesar Salad
Caesar salad but not as you know it! Traditional dressing (dairy-free of course!) with Cos or Romaine lettuce, crispy croutons and a variety of rainbow veg, salad and seeds... delicious!
Ingredients:
(These quantities are suitable for two people as a main meal)
Caesar Dressing
- 30g/¼ cup raw cashews, soaked for minimum of 2 hours
- 30ml/⅛ cup water
- 1 tbsp virgin olive oil
- ½ tbsp lemon juice
- ¼ tbsp Dijon mustard
- ¼ tsp garlic powder
- 1 tsp capers
- ½ garlic clove (optional)
- ¼ tbsp vegan Worcestershire sauce (optional eg Biona)
- 1 tsp vegan syrup eg agave (optional)
- ½ tbsp nutritional yeast (optional)
- Salt and freshly ground pepper black pepper, to taste
Salad
- 400g butternut squash, sliced or cut into chunks
- 300g sourdough bread, 1-2 days old (or gluten free if appropriate)
- 170g Romain or Cos lettuce
- 1 red onion, diced
- 125g Heritage Jewel tomatoes (the multi coloured ones), cut in half
- 50g toasted mixed seeds
You can use any veg or salad you fancy to make your bowl colourful, nutritious and delicious... these are just a few ideas for you to enjoy.
Method:
Caesar Dressing
- Soak the cashews for a minimum of 2 hours, drain, rinse thoroughly and add to the blender.
- Add all of the other ingredients and blend until very smooth.
- Add salt and pepper to taste and add more water if the dressing is too thick.
Salad
- Pre-heat the oven to 180ºC/350ºF/Gas Mark 4-5
- Roast the butternut squash in the oven with a little oil and salt until lightly brown, turning once. It will take around 20 minutes on each side.
- To make the croutons, remove the crust from the bread and then cut into large squares. Cover with olive oil and place into the oven for around 5 minutes on each side or until golden and crispy.
- Arrange all the ingredients into a bowl in the pattern of your choice and cover with the caesar dressing. Enjoy :)

About This Poem
“I wrote ‘The Check In’ as a response to a strange phenomenon I was noticing during the pandemic. After the murder of George Floyd and the uprisings that followed, I and other Black friends began receiving calls, texts, and emails from white people that weren’t necessarily close friends. Their attempts to connect with me really felt as if they were seeking an explanation or comfort for their own anxieties. Isn’t it always the case that Black people end up caring for white fragility? For me these messages felt like another kind of violence to endure. They made me anxious. I could not answer them, so I wrote this reply.”

How disappointing. I hope they don't have to wait much longer. 😥 Dad rang me for a change, he doesn't think he will be going to he Friday club next week. Although it as open yesterday, there weren't many in, and they are thinking about how the changes will affect them. All the members are over 80. 😕
Barbara, you and Carol make me so happy when you either 'like' or comment on my posts. There are so many members who never comment, it's very frustrating!
Joan, yes dad does rather well living alone. Although his memory is getting a bit hit and miss, to be expected I suppose. 💖
Mutta Thoran (Keralan Coconut Scramble)
This is a veganized version of a traditional Keralan dish and a delicious alternative to your standard tofu scramble!
Ingredients:
- 400g firm tofu (approx.), drained and pressed (or pat dry with kitchen roll or clean tea towel)
- 1 clove garlic, finely diced
- ½ tsp black mustard seeds
- 1 dried red chilli (ideal), roughly chopped or a pinch chilli powder
- ½ tsp turmeric
- 5 tbsp dessicated coconut
- 2 tomatoes, roughly chopped
- 3 tbsp soy sauce
- 1 tbsp nutritional yeast (optional)
- 2 fresh curry leaves (optional)
- Fresh coriander (optional)
Serve in a wrap or chapati with mango chutney, lime pickle or even vegan mayo... get creative!
Method:
- Using a little oil in a medium sized saucepan, lightly fry the mustard seeds until they start to pop.
- Add the garlic and fry for a further 30 seconds.
- Add the rest of the spices, stir through and fry for a further 30 seconds.
- Add all other ingredients (apart from fresh coriander), gently stir and then heat through for five minutes.
- Serve in a wrap or chapati.

Hi everyone. 39 pages since I was last here. I can't read through as my eyes are worse still. I do have my operation on 30th though, after 3 years of hospital visits and 14 months on the waiting list.
Still not back at work. Haven't heard a thing. I didn't get PIP. Apparently, although I struggle with things, I can still do them.
I've been turning in to a very big couch potato so, when the Great North Run threw out the challenge to run 40 times (it's their 40th birthday), I decided to do it. I did 9 GNRs up till 11years ago when it became too painful. Always wanted my 10th medal. So I've nearly killed myself and walked 300 miles in the last 6 weeks. And to add to it, I'm doing another 13.11 miles tomorrow morning in the official GNR. Not sure how long it will take me.

Tonight the poor girls must have been really looking forward to getting the keys..I do hope its not long..
So you other car needs a shoe..will you keep her alongside Penelope ..nice to have one to fall back on..we used to have the car and van but just the car now..
Yes Niamh has been..she is a breath of fresh air..and on the 20th our eldest gd will hopefully be coming for her birthday.on the 22nd..with her fiance of course..I am praying it will happen.. who knows with covid.. xx

Kath great poem that Nandi is a talented poet. Very very interesting that it read a little like a war was going on until I read the explanation then it so made sense.
Impressed your dad rang you! Maybe his club could stagger it in groups of less than 6 that would be safe enough i should think. Still that's up to the organisers to risk-assess isn't it I suppose. I didn't go to choir on Thursday in the end myself with my lungs I didn't think it clever at all to risk it.
The girls are ok now just worried about furniture (well ok only one thing everything else is second hand or they already own it) being delivered. Bless them they know they are lucky and all will be well. they can see weeds growing too at their beloved new home at the front.
I LOVE the look of that food. I have everything needed except curry leaves and dessicated coconut, but Kari will have the latter......
Barbara will I keep Dudley if i can get Penelope converted to electric??🤔 probably not...Charley will buy her off me (at a reduced rate of course, but we mustn't spoil them). We have enough vehicles with the van and motorhome to be and Paul's Midget!
I couldn't get Dudley a new shoe so on Monday morning (better get dressed!) Halfords tyres at home are coming to the house!

Evening everyone
Just realised its been 5 days since I last posted. Where do the hours go into the ever expanding shed as Aidan would have said. We are both ok we are back at church now since last Sunday it is all very different with all the restrictions we have to have to be able to be Covid safe.
Toni as Barbara says it’s my mum who would have been 99 not 98 last Tuesday she was Just 75 when she passed away at the end of September the same year my sister and I both dislike this month and wish we could go straight from August to October. Sorry to hear the girls didn’t get the keys hope they don’t have to wait too long. Can’t believe it’s been 9 months since Aidan heart attack.
Barbara my dad would have been 100 this year But he was very very young when he died he was only 47.

Our youngest daughter has been given a promotion in the St John ambulance Brigade to a member or the venerable order of St John she will get medal for this which she can wear on her uniform on ceremonial occasions. It’s quite a special award. Which is not just given it is one that has to be earned. She had her name in a government newspaper The Gazette on the 10th. Tomorrow I will post a link on here for you to see. When she gets the medal I will take a photo of it and show you this may be in awhile depending when Covid restrictionists allow.
before I go you have had a picture of all little peoples as they have gone back to school but there is on little person that is not big enough for school yet But he has just had his 1st haircut so
