    When we moved here I used Feliway in Sleek's cat box Mike? and continue to use it when it's a vet trip. I am convinced it helps a bit bless her. Vixen is adorable so tiny! Like a kitten. I am so glad Dad got some cat-cuddles - just remember no saying the 'V' word🤫

    Reshmi it is a very hard concept for some people to understand. Some of them have only just got their heads around the fact that some people are actually gay! Incredible to believe but true. They only thing to do is keep going and explore things and be true to what you feel inside yourself. Your sister will get her head around things in the end - I hope🤞 My niece will be ok our family is very accepting.

    You could try a feliway plug-in but they are not cheap.

    Morning ladles and jellyspoons 😘. Lovely morning here. I had quite a restful day yesterday, but now I'm back.

    Joan, both Chris and I used to have that problem with our old iPads. They had got the highest IOS they could, but being old, they wouldn't update any more. We had to buy a new one each which solved the problem. Rather expensive though. 😯

    Easy Nut Roast

    Quick and easy to make vegan nut roast. Perfect for a roast dinner, Thanksgiving or Christmas.

    INGREDIENTS 

    • 1 ½ cups (220 g) mixed nuts walnuts, peanuts, cashews...
    • 1 onion diced
    • 2 cloves garlic finely chopped
    • 2 tbsp olive oil
    • 1 cup (100 g) fine breadcrumbs
    • 2 tbsp soy sauce
    • 2 tsp dried herbs
    • 1 cup (240 ml) vegetable stock
    • 1 tbsp chia seeds
    • 2 tbsp dried cranberries chopped, optional

    INSTRUCTIONS 

    • Preheat your oven to 180°C / 360°F.
    • In a frying pan, cook the diced onion and garlic with the olive oil, until translucent and just starting to brown.
    • In a food processor, pulse the nuts until fine. If you are also making your own breadcrumbs now, process the bread separately from the nuts, as they will take longer to become fine.
    • In a mixing bowl, combine all the ingredients - the ground nuts, breadcrumbs, fried onion and garlic, soy sauce, dried herbs, chia seeds, optional cranberries, and vegetable stock.
    • Transfer the nut mixture into a lined loaf tin, and smooth the top with a silicone spatula.
    • Bake the nut roast for 30-40 minutes until the top starts to brown.
    • Remove from the oven, and leave to cool in the tin for 10 minutes. To remove from the tin, place a board on top of the tin, flip over and peel off the baking paper.
    • Before serving, you can add some extra nuts on top for decoration.

    NOTES

    Oven temperature

    Can also be cooked at 200C / 390F if you are cooking something which needs a hotter oven like roast potatoes, in this case it will be ready closer to 30 minutes. 

    Breadcrumbs

    We recommend homemade wholemeal breadcrumbs. See the post for tips on how to make them. 

    Tin size

    Loaf tins come in various sizes. Our loaf tin pictured is (measured at the top) 21cm long, 11cm wide and 6 cm deep and has a capacity of 1.1 litres of water when filled to the top. It gets about ⅔ full of nut roast mixture. If you use a different size tin and have a deeper loaf, you may want to increase the cooking time.

Yes, I’m well aware about some people’s acceptance problems, being of Asian origin, in some ways more than many, but thanks. Nice about your niece. Ty about C, it wasn’t exactly heaving, but each customer seemed to be indulging a monster sugar craving when ordering, also made me think about what I was doing, so I followed Elvis’ good example and left the building, lol. I’ll make the tea on the condition we have a healthy cake, lol, maybe malt loaf, nice and filling, also, do I smell bacon frying again? Oh my goodness, I may have to emigrate. Tc. X

    Morning Froggie. Vixen was back to usual yesterday, just coming in for food and going straight out again, no cuddles 😒 She seems to be spending most of the day sleeping on the plastic grass in the back garden. About 02:15 this morning she was kipping in my recliner though but she had gone out when I got up an hour or so later. When I was making my second brew of the morning she came in for scoff and ............... went straight back out again. My baby sister came over yesterday morning and said she would not be going anywhere over the bank holiday as the roads down here are chaotic with the number of emmets down here despite having the highest Covid rates in the UK. She went to a small bakery before getting to me so I had a couple of treats; there is a big sign on the door saying only 2 people in the shop at any one time and all to be masked, however there were 5 inside with no masks on. When she went in and made a comment about them the shop assistants were nearly in tears and said that they had had so much abuse from people not complying that they are not bothering to enforce their rules anymore. When my sister left there were 3 about to go in with no masks on and when she pointed out that they had to be worn she was sworn at and told it was not a legal requirement and they could do what they wanted!! I shall be staying in for a change, luckily the paralympics are on so I shall be getting through several tissues later. apart from that, same pain etc different day!! Have a good one.

    Hi all, I’ve had a good idea, I’m going to write hi btj - not a new dodgy new boy band ( or girl band), but Barbara Joan Toni. That’s bound to save some time. Ty T and ty for the vegan bacon…though I could need antacids after that, lol. Thanks, yes, lot of sugar in most of those drinks, I went there today, early morning, got a takeaway tea, no sugar, but it wasn’t that great, may get a sugary treat from there at some point, but of course, I’m pacing myself with the sugar lol, Def no C treat today though, as excess family, still loving that phrase T, coming today for my belated birthday celebration and birthday cake! One of the baby nephews, the older one, said it’s his birthday too, so my dad decorated the cake with dinosaur, his favourite creature. Oh yes, forgot Kathleen in my acronym, so now it’s btjk. I wrote a poem recently, not really worth sharing on here, but I like it when I do creative things. It’s also the younger baby’s Christening- equivalent today, at home, just family, so not a COVID spreading situation, hopefully, my poor mum’s getting so stressed, she accidentally broke the pressure cooker, but all’s ok now, on the cooking side at least and the excess family are staying for Three Days!!Yep, that was a big waffling session, oh well, have a good bank holiday everyone. Xx

    Reshmi, don't worry about forgetting me - I'm used to it. Every time I ring dad he says "Oh, I forgot about you!" I'm only your eldest daughter pops,I don't count! 🙄

    Joan, it was my incontinence pads that fell on top of me, so no harm done. The iPads would come off worse than I would, LOL.

    Barbara, I think you must be hiding as I can't see you. I forgot to refresh the page before starting my post. 😌

    Mike, what a dreadful story about those shop assistants. People just don't care about others!

    Delicious Vegan Kebabs

    Prep Time: 30 minutes

    Cook Time: 30 minutes

    Impress your “veggie” friends with this mouthwatering starter. The combination of vegetables, gram flour (besan) and bread crumbs makes this dish a great starter or appetizer for a party. Your non-vegetarian friends will ask for a second helping, without a doubt. Make the kebabs of desired shapes, place them on skewers and serve your guests with pride!

    Ingredients

     3 cups Frozen or Fresh Mixed Vegetables (peas, carrots, beans and cauliflower). If you are using fresh vegetables, blanch them for 2 minutes in boiling water.

     1 tbsp ginger-garlic paste

     3 tbsp gram flour/besan (dry roasted on medium flame)

     3 potatoes (boiled and mashed)-

     3 tbsp bread crumbs

     1 tsp masala powder

     1 tsp red chili powder

     A pinch of salt

    Method

     1) Firstly, allow the frozen vegetables to thaw. Once done, crush them. Take a pan; add the crushed vegetables,  ginger–garlic paste and dry cook until the moisture has reduced. Do not overcook them. Take it off the flame and allow it to cool.

     2) Next, add the mashed potatoes, roasted breadcrumbs, and besan/gram flour.

     3) Add masala powder, chili powder, salt and give it a good mix. Mix the ingredients enough to get a good holding consistency and not soggy/crumbly. If it becomes soggy add more breadcrumbs/ gram flour to get the desired consistency.

     4) Divide the mixture into equal parts. Roll them over skewers (as done here) or give them a shape of your choice. Ensure that they are not too big or “fat” else they will not be cooked from inside.

     5) Deep fry the kebabs on medium/high heat till it turns golden brown in color. You can also grill it in the oven, barbecue them or cook them on charcoal grills.

     6) Serve them hot with green chutney, sliced onion, and lemon.

     Enjoy the kebabs! They're incredibly delicious and you can also serve these kebabs at big parties

    Hi K , I only temporarily forgot about you because I was in a such a rush to get things done before excess family arrived, lol. Don’t worry about your dad lol, my dad often calls me by my sister’s name, his favourite term for mum and I is “you people “. He has heart condition and ate loads of sausage rolls recently, because they were being wasted and out of spite, because I keep telling him to be careful with the red meat, he’s a real character Kathleen, like a petulant child really. Is your dad a difficult character? Or is he easy to get on with? Tc.

Mind ours are rising here too and rumours that the vaccine may be wearing off.

    The roads were horrendous up here too in fact I heard it was the worst day of the year. Luckily we didn't need to go far at all just to the hospice for me and to feed Tia's cats for her.

    It's raining here today - that's what you need to get Vixen to appreciate you! Some rain and your nice dry lap!

    Joan I read to P too. Some of her No1 Detective Agency book. I think she enjoyed it. They are nice short stories. We didn't introduce the cats again.     Morning Kitty Kat I hope you are as well as possible? Sleek has been over and left some extra vials for you as there appears to be a national shortage. Heard from Bill yesterday he has another new car! His Wisteria is growing well and my Wilhelmina is on her 2nd flowering so also doing well. We exchanged photos.

    Love the look of those kebabs I must see whether I have any mixed frozen veg in my freezer then I may well have a go at them.

    Antoinette is fine just rather posh and goes well with the rather posh eggs benedict. Paul's favourite. He always gets one at the airport when he has to travel as a treat.

    INGREDIENTS

    • 1 medium yellow or sweet onion
    • 4-5 cloves garlic, minced (more or less to taste)
    • 1/2 pound carrots, diced
    • 1 1/2 pounds potatoes, diced (peel if you wish)
    • 1 pound crimini or white button mushrooms, halved or quartered (omit if you dislike)
    • 2 cups diced or torn vegan “beef” like my Beef Seitan (see note 1)
    • 3-4 cups vegan “beef” broth (see note 2)
    • 1 cup dry red wine (see note 3, can replace with broth)
    • 2 tbsp balsamic vinegar
    • 1 tsp dried thyme
    • 1 tsp smoked paprika
    • 1 tsp agave, optional
    • 1 cup lentils, optional (if using, add 2 additional cups broth)

    INSTRUCTIONS

    1. Note about seitan: If you’re using my instant pot seitan (whether you use a pressure cooker or stovetop, instructions for both are included), make it before you start the soup and let it rest for 10 minutes before cubing as much of it as you’d like to use. I used about half of it for this recipe and kept half for stir-fries.
    2. Note about bread: Similarly, if you would like to make my vegan Irish soda bread to have with this, make it and let it cool for an hour before slicing to eat with this soup.
    3. Saute onions: Alright, so first, let’s start by sauteing onions in a large nonstick pot over medium high heat. Stir the onions frequently and cook for about 3-4 minutes or until translucent. If you cook with oil, you’re certainly welcome to start with that (I’d use a neutral flavored oil, not olive or coconut). Personally, I cook with water, so I just add a splash of water (about a tablespoon) whenever the onions start to stick.
    4. Add garlic: Next add the garlic and saute for another minute.
    5. Add mushrooms: Then add the mushrooms. Saute for another 3 minutes.
    6. Add veggies and herbs: Now add the carrots, potatoes, and herbs & spices and stir. 
    7. Add seitan: Add the vegan seitan chunks (if using) and red wine (if using) to deglaze the pot. Stir again. Note, if you’re using tofu, I’d add it once the potatoes and carrots are almost cooked through. If adding lentils, add them now (don’t forget the extra broth to compensate; 2 cups broth per 1 cup lentils).
    8. Add broth and cook: Add broth, agave and balsamic vinegar, cover, and set the heat to medium. Cook covered for 15-20 minutes, or until potatoes and carrots are fork-tender.
    9. Adjust the flavors if needed, and remove from heat.
    10. Serve: Serve with vegan Irish soda bread or a crusty French bread and enjoy! I love eating vegan beef stew with apples on the side. Something about the hot soft soup contrasted with the cold crunchy apples (I refrigerate apples… am I weird?) is just delicious.
    11. Store: Refrigerate leftover stew in an airtight container for up to 5 days or freeze in a freezer-safe container for up to 3 months.

    Hi btjk , thanks T, the creature is Oscar The Grouch from the kids’ tv programme Sesame Street, which I used to watch when I was little. He was a very grumpy character, v similar in nature to my dad, lol, he lives in a bin, with v little sense of hygiene, also a lot like dad, in all honesty, lol.It was actually not his birthday, but he said it was his too, I think just to guarantee his cake- eating rights, lol. Yes, the three day invasion idea did terrify me, but it was cut short, as unfortunately the older nephew ate a lot of icing and got tummy ache, so they all went early, but his stomach is fine now, so that’s the main thing. Thanks about the poem, but it really wasn’t that good and basically I wrote it when feeling sad, due to the female stuff and all that, but I’m going to try and back into the writing and if I write something good, I’ll def put it on here, I promise. Btw the nephew chose one of my gifts, some multicoloured Odd Auntie socks, ah he knows me well, lol. It’s rainy today, which I don’t mind at all. What’s your weather like? Tc xx

    Morning gang. Exciting outing today, off to hospital for x-rays on my neck, I am having real problems putting up with it lately and as the investigation issue has been going on for with the medics merely saying" it is getting worse" each time. It's about time it is sorted although a neurosurgeon said 12 years ago that he would not operate as there was too great a risk of paralysis. The only joints I do not have OA in at the moment is my hips, I have it everywhere else. Anyway, wheelchair accessible taxi booked and a trip out to look forward to. I found out from my baby Sister who found out from facebook that Elliott needs an emergency operation to remove the Ommaya (a small plastic reservoir implanted in the brain used to deliver medication) as it is damaging his brain! Don't know when, or indeed if it has now been done, but it will involve a trip to Bristol and a bit of a stay. Puts my issue into perspective anyway. Have a good one peeps.
