Been napping, as we went walkies this morning. So tired now.
So I'll just leave a recipe for you all to enjoy.
INGREDIENTS VEGAN APPLE CAKE:
200g self-raising flour
100g brown sugar
1 tsp baking powder
1 tsp cinnamon powder
150ml dairy-free milk
75ml sunflower oil
1 1/2 tsp vanilla essence
1 tbsp apple cider vinegar
2 apples
Vegan butter to grease the baking tin
Icing sugar
METHOD:
Preheat your oven to 180C (360F).
In a large bowl mix together all dry ingredients.Then take a measuring cup and add all wet ingredients.
Stir and mix with a spoon.
Using a hand mixer mix the dry ingredients and then pour the wet ingredients and mix together well until you get a smooth batter. If you don't have a hand mixer you can also use a whisk for it.
Line a baking tin with baking paper and then grease the sides with vegan butter. This is to make sure the cake doesn't stick to the tin.
Pour the batter into the cake tin and spread evenly.
Peel two apples, remove the seeds and cut each into 8 slices.
Now place the apple slices on the batter in a star shape.
Bake the cake in the preheated oven for 35 minutes.
Let cool down and then sprinkle some icing sugar (and optional cinnamon) on top.

Afternoon to all - misty day here, a bit of drizzle this morning, forecast is good though, from tomorrow.
Hi Joan and Sue I did notice on the Theatre at Blackpool that if you require a person to be with you (ie if you are disabled) then they get a complimentary ticket. There are 7 wheelchair spaces at the front of the stalls. Worth knowing, not that I will be rushing off.

Our neighbour rang, her hubby has had a car accident, all parties are ok, thank the Lord, but he blacked out apparently, prior to the bump, so they are doing a CT scan, she will keep us updated. There is always something going on. :shock: :shock:

Well update on yesterday after a very busy few days. i was in a coffee place foor a nice quite coffee when i see that i had a missed call on my phone from my cousin when i rang him back he told me the doctors at the hospital could do no more for my Aunt and that were stopping treatment. and sad to say she passed away at 8 .30 this morning. as I said to Mr T when I returned home yesterday hello it's welcome to limbo land again for the second time in less than 2 months. She was the last of her generation. so for Mr T and me its a loss of a loved one on each side of our family first his brother now my Aunt. My mind is in a total muddle at the moment which is the reason I just did not feel like posting. I feel like saying why us give us a break please.
on the up side this morning when I rang my eldest daughter to tell her about my aunt she had eldest GD and our Graycie and Rubie with her and Graycie said hello to me over the phone and the words lub (love) you Nanny, it was so lovely to hear her little voice. cannot believe she is at nursery a couple of days a week now. also on Sunday my grandson sent me a scan picture of our next great grandchild due in July.
this is just a little update as I really cannot write anymore without welling up just a tad emotional at the present.

Hi Barbara - I agree with the ambulances, they have been next door a few times over the past couple of months and each time I see them, my heart skips a beat, just reminding me of going on a blue light to Coronary ICU :? :?
Our neighbour's scan was fine, nothing wrong on the CT, could not find any particular reason why he blacked out. B saw them come back and had a natter. He is not allowed to drive for the time being, or climb ladders, (of course, his job is driving and going up and down ladders to do electrical work) :shock: :roll:
We are going over to my Aunt / Uncles, for lunch at their house, my Cousin will be there too, she is stopping with them for a few days. Not sure if she has flown over or come by Eurostar

Tosca came out to Pendle this morning to see the nymphs (Sleek had pre-warned them about her fur and the necessary trimming) they behaved perfectly and admired Mother Glitter sparkles before making her a pilchard latte with an extra shot of pilchards
Saturday is the day for visitors then? I much prefer the tunnel these days I get rather sick on the ferry! Bea will enjoy the ride out for certain.

I didn't sleep very well Aidan, so much pain overnight - and this morning Martin didn't turn up for my blood test. The DN that took my blood pressure a couple of weeks ago accidently deleted the appointment when she logged me off after the BP check. I wouldn't mind, accidents DO happen, but no-one rang me to let me know!!! Rang to make an appointment next Wednesday. :roll:
Sweet Potato cakes with poached eggs
Ingredients
4 eggs
50g harissa
200g Greek yogurt
handful micro herbs
For the sweet potato cakes
500g sweet potato, peeled and grated
200g gluten-free flour
1 small pack parsley, chopped
4 egg whites
50g harissa
olive oil, for frying
Method
To make the potato cakes, squeeze the excess moisture from the sweet potato, then combine with flour, parsley, egg white, harissa and some salt in a bowl until the mixture sticks together. Shape into 8 potato cakes. Heat a little oil in a frying pan. In two batches, fry the potato cakes for 2-3 mins each side or until golden brown and crisp. Keep warm while you repeat with the remaining cakes.
Poach the eggs in a saucepan of simmering water for 2-3 mins – the yolks should be runny. Remove with a slotted spoon and drain carefully on kitchen paper.
Spread some harissa in the middle of four serving plates and top with a dollop of yogurt. Add one potato cake to each plate then sandwich another potato cake on top with more yogurt. Top each stack with the remaining yogurt and an egg. The garden plans went by the wayside, with it being wet on Tuesday, B thought another day of drying out a bit, will help with the cleaning and tidying at Dads. So, today we will go round and I will "potter " in the kitchen, make coffee and do a little immaculisation, incognito.

We lived within walking distance to ALL my family. Gran and Granddad next door, with mum's younger bros and sis still living with them. Nannan and Granddad at the top of the hill. Eventually there was movement, with various uncs and aunts along nearby roads and all my cousins too. Until Uncle Gordon and Aunty Maggie went to Australia with their children.
I think I may have mentioned gran and granddad's caravan in Tattershall (Lincolnshire). I loved it there and spent a whole summer sitting on a branch of a tree with all my books around. Gran always got me an Eye Spy book for the journey, usually about castles or churches. In those days you were able to get places without travelling along motorways. We went through lots of little villages.

Aidan I don't think I have Fibro, but I know what you mean. No cake, probably just as well. I get through dozens of ice creams a week. INGREDIENTS
Crust
2 Cups Raw Cashews
1 Cup Medjool Dates, pitted (8-10 large dates)
1 Tsp. Coconut Oil
1 Pinch Salt
Cashew Cream
2 Cups Raw cashews soaked in cool tap water for 4 – 8 hours
1/4 Cup shredded unsweetened coconut soaked in cool tap water for one hour
3/4 Cup Coconut Oil
1/2 Cup Orange Juice
3 Tablespoons Agave Nectar
2 Tablespoons Fresh Lime Juice
2 Teaspoons Vanilla
Flower Decoration
1 Package (6 ounces each) Driscoll's Blueberries
2 Packages (6 ounces each) Driscoll's Raspberries
3 Kiwis
2-3 Driscoll's Strawberries
1-2 Mangos
DIRECTIONS
Crust
PREPARE an 11-inch tart pan with removable base by greasing it with coconut oil.
LIQUIFY coconut oil by standing the jar in a bowl of hot tap water for 5 to 20 minutes.
PULSE unsoaked cashews in food processor until chopped to medium size.
ADD dates and pulse again.
ADD 1 teaspoon coconut oil and salt.
PULSE again just until blended. Do not over-mix.
CRUMBLE cashew dough evenly into the tart pan.
PRESS the dough firmly and evenly into the pan and upward along the rim.
CHILL tart shell in refrigerator while you prepare the filling.
Cashew Cream Filling
DRAIN water from cashews and shredded coconut.
PLACE cashews, coconut, orange juice, agave nectar, and lime juice in a blender.
BLEND until mixture begins to flow easily inside the blender. If necessary, turn off blender and stir mixture with a long wooden spoon.
ADD coconut oil.
ADD vanilla.
BLEND for 5 to 15 minutes or until creamy.
POUR cashew cream into prepared tart shell and spread evenly.
CHILL tart in refrigerator for 1 hour or until firm.
Flower Decoration
FORM a circle of raspberries around outer edge of tart crust.
FORM a circle of blueberries inside the raspberry circle.
REMOVE green tops from strawberries.
CUT strawberries lengthwise into slices, each ¼-inch thick.
FAN OUT nine strawberry slices in a circle at center of vegan tart, points facing outward.
PEEL skins from kiwis using a potato peeler.
CUT kiwis into 9 wedges.
FAN OUT three kiwi wedges to resemble leaves in three places around strawberry circle.
PEEL skins from mangoes using a potato peeler.
CUT four slices from wide sides of mangoes, each ¼-inch thick.
CUT mango slices into flowers using a cookie cutter or a pairing knife.
CUT a hole into the center of each mango flower about the size of a dime.
PLACE one mango flower onto each set of kiwi leaves.
PLACE remaining mango flower onto center of strawberries.
FORM three semi-circles of raspberries inside the blueberry circle.
FILL remaining spaces with blueberries.
PLACE one raspberry into each mango flower hole.
CHILL tart in refrigerator until ready to serve.
LIFT base of pan to unmold vegan tart.

Hi Kath, you had a lot of family close by, I guess with Dad being a Vicar, we moved around a few times and distances grew, visits became more irregular.
One of Dads friends who he studied Theology with, emigrated to Australia, to Perth, to be a Vicar, he used to fly, to visit parishoner's as his parish was vast.
I can just imagine you sat in a tree, reading your books. Very Swallows and Amazons We used to go to Mablethorpe, Skeggy etc, through all the villages from Nottingham, it seemed to take for EVER to get there. Then when you arrived and the tide was out, miles and miles away :roll: :roll:

You will have seen that we did, venture round to Dads, B just set to and was busy with the broom, moving all pots, sweeping all the winter trammel that gathers. Carefully putting large toad, back behind one of the pots
Dad was out with his broom too, doing bits and bats, he kept nipping inside, probably because I had the washing machine going within 2 mins of arriving :shock: I said it needed a rinse through (it was full of tissues :? )
That was soon sorted, another wash load was "necessary", so I had all the towels, T Towels etc, all in, hot wash, happy bunny
I could not find bleach spray ( Imagine the panic) mould and mildew cleaner is just the same thing, so I was away with that
I made coffee's and T's, cleaned out the cordless, whizzed round, well, as much as I can whizz. It is a galley kitchen with dining area opposite, so I was happy, shuffling from left to right, almost line dancing
By lunchtime, all the drive side was done and much better. The back patio and garden will have to be done another day. Small steps.................Dad was happy really and he doesn't mind me fussing.

No, I would not be on a ferry now. I remember going to the Outer Hebrides when I was young, with Mum and Dad, it was a storm and then some, I thought it was amazing, waves crashing over the ferry. Mother looked a little anxed. :shock: :shock: :? No one was allowed on deck, it was so rough.
Now, you would not get me on it if the sea was like a mill pond.
I tried not to think about the tunnel and where we were in relation to the depth of the sea, then how deep under the sea bed...........Just sit tight and smile :?

OOOh, Lentheric Tweed, I used to have a bottle of that. Mum always wore Estee Lauder but I can't remember which one. Another favourite of mine was Aqua Manda. I reeked of mandarins when I wore that. Haven't seen it for decades.
I don't really fancy this recipe, but I thought you might find it interesting. Turmeric and Aniseed Cake!?
Ingredients 1 tsp ground aniseed 185 ml (¾ cup) milk 250 g caster sugar 125 ml (½ cup) vegetable oil 300 g (2 cups) plain flour 1 tsp baking powder 2 tsp ground turmeric 80 g (½ cup) pine nuts whipped cream, to serve Cook's notes Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20°C.
Instructions Cooling time 1 hour
Preheat oven to 180 °C. Place aniseed and 80 ml water in a small saucepan over high heat and bring to the boil. Cook for 2 minutes or until reduced to about ¼ cup. Strain and cool.
Whisk milk and sugar in a jug until sugar dissolves. Whisk in oil and aniseed mixture.
Sift flour, baking powder and turmeric in a large bowl, then make a well in the centre. Pour in milk mixture, whisking to combine, then pour into a greased 20 cm cake pan lined with baking paper. Scatter with pine nuts and bake for 45 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
