Joan, I have 3 mouses. Well 2 now as one has broken. The second one osn't very good but thankfully the third one works fine so I'm using it now. All three are wireless.
Toni, whwt a shame you lost all those photos. It's a shame they aren't on a cloud drive then you would be able to get them on any device. BTW, I am very happy with Sleek's administrations to my tootsies etc. I think she gave me a steroid jab in my bum. But she had her eyes closed (out of respect) but it worked. I now have a numb bum so at least THAT doesn't hurt.

Barbara, I forgot to as how is Niamh doing at big school? The children my daughter Emily teaches are between 14 and 16 and have ADHD, some have Autism also visually impaired and deaf. She loves it. BTW I said she will be 40 this month. Erm she'll be 41 actually.
Sweet potato fries with Garlic herb sauce
INGREDIENTS
2 large sweet potatoes sliced in thin wedges
2-3 tbsp. olive oil
cracked salt and pepper to taste
1/3 cup olive oil
1 heaping tablespoon dried parsley
2 tbsp. fresh thyme
1/4 cup fresh chives diced, or about 1 tbsp. dried chives
1 heaping teaspoon minced garlic from a jar
INSTRUCTIONS
Peel potatoes and cut into wedges.
Spread sweet potato wedges on the bottom of a 10”x15” baking dish that has been sprayed with olive oil cooking spray.
Brush sweet potatoes with 2-3 tbsp. olive oil, then sprinkle with cracked salt and pepper.
Cover dish with foil and bake at 350° for about 20 minutes.
Remove foil and turn potatoes over so other side can cook.
Bake another 20-25 minutes, covered, or until fork tender.
Meanwhile, to 1/3 cup olive oil, add parsley, thyme, chives, and minced garlic.
Stir to combine.
Brush garlic and herb butter over top of the sweet potato fries.

Hi to all - somewhat late today :roll: :roll:
A short ish note, as time is running away and we are up very early today. Although I am not going with B to the village hall, I will just for an hour at lunchtime, with Mandy.
Was busy sitting looking decorous while B set up his table at the fair - 29 tables I think and a good idea that you can set up the night before, so no mad rush in the morning.

I did have an ok night, I just have an inkling that I am brewing a chest infection - wheezing and feeling "out of sorts" It will have to wait. getting dad to the hospital for his overnight stay on Monday, for custoscopy and biopsies, will be enough of a "do". Fasting from 6am, we will try our best and leave notes all over. Nothing else we can do. :? :?

The whole mobile phone issue is now behind us. Very upsetting, but I won't let it upset me for long. People are sending me pics from far and wide to fill the gaps left by the missing SD card so all will be well.

Sleek is back from France - yes via a gate and they took Tommy with them to practise his French not so Mrs D who wanted to stay with her Mummy. Tommy proudly sat on Mother's knee and took a while to use his French. Sleek was off chattering away, but as you can expect Mother's vocabulary was the widest.

I'm feeling quite excited. I just had a phone call from a nurse in our district - ABOUT SOMEONE COMING TO GIVE US A FLU JAB. I was amazed it's Sunday for goodness sake. But I am thrilled. Getting me a jab shouldn't be a problem as I am on the district work load, but my husband isn't. But I really hope they will give him one too. Happy days.
Joan and Sue, It rained all night and one of the flats nearby has a leaky guttering which absolutely pours. It keeps Chris awake all night as he sleeps near the window. I'm on the opposite side of the room so don't hear it so much. The sun is shinig now, but it's rather chilly. I hope you and the doggies are well and that your ankle isn't hurting too much.

INGREDIENTS
1 large cauliflower
60g olive oil
60g white flour, gluten free
600ml almond milk (or an alternative dairy-free milk)
4 tbsp nutritional yeast
20g ground almonds
1 tsp nutmeg
Salt and pepper to taste
DIRECTIONS
Pre-heat the oven to 180° fan / 200°
Cut the cauliflower into bite-sized florets and add to a large saucepan
Cover the cauliflower with water and bring to a boil and once boiling, boil for 2 minutes
Drain and place in a single layer on a baking dish
In another saucepan, heat the oil over a low heat then add the flour and mix into a paste using a whisk
Next, add the almond milk, nutritional yeast, seasoning and nutmeg
Whisk to combine then over a low-medium heat, continue to whisk until the sauce begins to thicken slightly (this can take between five to ten minutes)
Pour your sauce over your cauliflower ensuring all the cauliflower is coated in the sauce.
Sprinkle the ground almonds over the top

HI to all - oooh, it's been a long day :shock: :? and everything is shouting - still, carry on we must.
We have had rain, more rain, sunshine, warm, then cold, more rain. I think we are both coming down with some cold bug, been near too many people who have been coughing and spluttering over the past couple of weeks. :? :roll: Maybe we will shake it off
Bill was off down to the hall, early doors and I went with Mandy, at lunch time, for an hour or so. Mandy knows a lot of people from the village, so she enjoyed nattering to people - networking and promoting
Bill did sell quite a few things, bracelets were the ones people fancied, but everyone admired his work and his skills/ patience, for all the jewellery.
All in all, much better than he thought
We had a small bite to eat at lunch time, they serve food, not much for veggies, but I did have a cheese butty and some mushy peas strange combination
All the stall holders get free drinks umpteen times during the day.
I think they are going to shorten the hours of the next fair, the craft fair, from 9 till 2. Most people have drifted away by that time.
Our turn for the ouchies tonight Toni. It wasn't cold in the hall and we don't posess a hot water bottle :roll: but a good idea.
Siesta's were very much needed - I did not need rocking, or magic spells, which makes a change.

Yes, we need to get Dads biopsies sorted. I took his pills round and a big note, to say no food after 6am and no drinks after 10. We have to be at Blackburn for 12.
He will stop in overnight, for 24 hours observation, post procedure.
Results, not sure, they will take tissue samples and then wait and see. No news from the CT scan as yet. Maybe they want to collate everything together.
Mother said they had a lovely nip through the gate, to France, delivering the supplies to the nymphs across the waters. Tommy's French is improving and Mother was helping him when they were ordering escargot - then he realised what they were, sat in a bowl, with garlic butter :shock: He was happy with pain au chocolat

First of all let me apologise for misleading you about my flu jab. I only had the phone call on Sunday, not the jab. I'm still waiting to hear about that. As Martin is coming to do my blood test and blood pressure on Wednesday, he might also do the jab, I don't know yet. I know Chris is entitled to a flu jab as he's my carer, but he's 72 so is entitled to one in his own right. It's just that like myself, he can't get down to the surgery. :roll:
Aidan, I thought you were giving us a fooyball result, Blackburn 12 against whom? Then I realised that was the time dad had to be at the hospital. We are all gathered there now with bated breath and prayers for dad's procedure to be successful. I'm still munching my Rustic Caramel Apple Tart, so if you find crumbs in the cape, blame me. :oops: Very happy that Bill had a successful day and looking at the beautiful bracelets I'm not surprised at all.
Barbara, flu jobs on a Sunday! Sadly not. Just a nurse on the phone, but I will get one eventually. I'm glad Niamh's mum came home. I won't ask what happened, none of my business. t4591 So Tony enjoyed his jacket potato with a fizzy drink to help it down. I have problems eating because of Sjogren's Syndrome. My tongue swells up and is really sore as it get's so dry due to lack of saliva. :?
Traditional Irish Pumpkin Brack This recipe is inspired by the traditional Irish Barmbrack or tea loaf. It’s soft, dense and moist, and tasty! And, it’s made from pumpkin.
A small bit of Pure soya butter for greasing
200g light muscavado sugar
200g grated pumpkin flesh (try squash either)
Finely grated zest and juice of 1 lemon
100g raisins
100g ground almonds
200g gluten free self-raising flour (normal flour will work too)
Pinch of salt
1tsp cinnamon
A generous grating of nutmeg
4 tbsp vinegar
4 tsp baking soda
The brine from one can of chickpeas
Preparation
Makes one loaf.
Preheat the oven to 170°.
Cooking Instructions
Lightly grease a bread loaf tin (22 x 12cm or something like that) and line it with greaseproof paper/baking parchment. (I forgot to do this actually…)
Weigh out and prepare all your ingredients.
Add the lemon zest and juice, raisins and ground almonds to the pumpkin flesh in a large bowl.
Add the baking soda to the vinegar in a food mixing bowl.
Add the sugar to this and beat using an electric whisk for 2-3 minutes until pale and creamy.
Add this to the pumpkin mixture and lightly stir.
Sieve the flour and add to the mix along with the spices. Fold it all in together until well combined.
Using an electric whisk beat the chickpea brine until it holds soft peaks like what egg whites would do.
Stir a heaped tablespoon of this into the brack mixture to loosen it and then fold the rest in as lightly as possible.
Pour the mixture into a prepared load tin and even out the surface.
Bake it in the oven for around 1 hour at the temperature recommended.
Check if ready by inserting a skewer or knife into the centre. It should come out clean, but if it doesn’t, leave it in for longer and turn down the heat if it is starting to burn out the outside. Remove the loaf from the tin and leave in the oven at an even lower heat near the end to ensure thorough baking.
Then let it cool on a wire rack before slicing. Don’t be tempted to slice into it before it cools! It could fall apart!
Enjoy with some soya butter and a cup of tea.

Just a quick note -
Dad went in at the allotted time, with B to wheel him up to the day unit. (only one family member, as there is no seating for family :shock: ) admission bits done and B came away, to find me in Costa, with my decaff.
Dad said, on arrival at the hospital that he had had a glass of milk a "while" ago . Well, milk is a food, not a clear fluid. Anyway, they knew about it and enough time will have passed, so things will have gone ahead as normal.
Will ring prior to siesta to check up on progress and which ward he will be on overnight.
Thank you for being under the cloak - it was very busy, we hardly had room to sit down with our coffee, there was a lot of swishing, but no one batted an eyelid and don't worry about crumbs Kath, did you see the floor in the Costa "lounge" :shock: :shock: Someone pass me a Dyson / Bosch / Polti / etc in fact, one of each.
Keeping anywhere spotless is almost impossible, when it is a drinks and snack area, with a veritable tribe of people every hour. I just sat at a little table, with my bag on my knee, clutching my coffee :roll: :roll:

Bracelets do seem the more popular, they can always be seen the wearer, which makes a difference. For special occasions or parties etc, then necklace and or ear rings are more appropriate.

Crispy haddock & sweet potato chips
To recreate the crunch of fish and chips, without any of the heavy breading, we've dredged fresh haddock fillets in a ground almond crust. Served with crispy oven baked sweet potato fries.
We deliver all this
1 1/2 tbsp oil
120g cherry tomatoes
1/2 red onion
1 lemon
1 tsp dried Italian herbs
2 tsp Dijon mustard
2 tsp smoked paprika
2 x 150g haddock supreme (skin off)
400g sweet potato
40g mixed salad leaves
4 tbsp ground almonds
Method
1. Preheat the oven to 200C / gas mark 6.
2. Cut the cherry tomatoes into quarters. Leaving the skin on, cut the sweet potato into fries. Place the sweet potato fries on a baking tray and drizzle with 1/2 tbsp oil, dried Italian herbs and a sprinkle of sea salt. Place in the oven for 20-25 mins, turning halfway through.
3. Meanwhile, place a small frying pan on medium heat. Add the ground almonds and toast for 2 mins, turning regularly to allow them to brown evenly.
4. In a bowl, mix together the toasted ground almonds with the smoked paprika. Season well with sea salt and black pepper.
5. Coat the haddock fillets lightly in 1/2 tbsp oil and then coat in the ground almond mix. Place on another baking tray and place in the oven for 15 mins until cooked through.
6. Meanwhile, finely slice the red onion. In a medium bowl, mix together 1/2 tbsp olive oil, Dijon mustard and the juice from half of the lemon. Stir in the salad leaves, red onion (to taste) and cherry tomato quarters.
7. Serve the crispy haddock on two warm plates alongside the sweet potato fries and the salad. Drizzle the remaining lemon juice over the haddock."Women and cats will do as they please, and men and dogs should relax and get used to the idea." Robert A Heinlein

Hi to all - half past three and just about in and sorted. Washer going, dryer going. Dad home.
The ward rang about 1030 to say he was ready to come home, so we changed and pootled on over to Blackburn - I think if we said to Hilde, go to Blackburn Royal, she would do :shock: :?
I waited in Costa, while B went up to collect Dad. He is a bit on a high at the moment, post op euphoria (not uncommon). We steadied him and took a steady walk to the car.
He was ready for his lunch and wanted to eat out, so we went to the GC, which was very pleasant.
They have done biopsies and cauterised two small areas that bled, to touch (with the cystography probe :shock: )
Out patients in 4 or 5 weeks, to discuss results etc.
Safely home and settled in now - Ward Sister said Dad should be referred to the OT's at our local hospital, due to his increasing falls. He says, oh, I am ok, I bounce - B and Aidan will sort me out. No, you are being referred, the more people that know, the better it is. Trust me, I was a nurse

We are all as bad as each other, doing that bit too much, on more than one occasion, each week. But, needs must. Things can be frustrating at times, but we are very protective none the less, if that makes sense.

Hi Kath - no puke alert, I can fully understand. Have you tried sterimar or the kiddies nasal sprays, both just natural sterile sea water, which helps things "move" - I can swear by them, for dry and irritated noses ************ see, I just swore :shock: :shock:

His GP is ringing B back this week, about Dads increase in falls. OT will likely come out to Dads park home to assess the risks.

I am so glad to hear Dad is home well and clearly still with his appetite!
