    Toni, so sleek has a car as well as a motorbike and sidecar. Or are they one and the same (i.e. a broomstick in disguise) It's been chucking it down all day here too. How exciting for Tia to be a re-homing officer for the Dog's Trust.

    I rang dad this morning. He had to call an ambulance this morning as he couldn't get himself out of bed! They let themselves in and after helping him out of bed they asked him if he wanted to be admitted to hospital. He said no, so they took some tests and watched him potter. They suggested he be supplied with aids to help him get about at home. Anita's already told him that. He has grab rails all over the place. He put them up for mum years ago, but he needs some other things too. Watch this space. :D

    Aidan, we're the same here. No hills but there's one long brook, Golden Brook, which runs from one end of the town to the other. Some of it has been culverted but the bits that flow openly flood regularly. Then there's all the canals and rivers. We're often awash. Oh, I want that window view with the squirrel. Glad dad's toe is better. Thank you for the toast. Yum yum.

    Barbara, does Tony's GF know what tablets he takes? Perhaps you could send her an email, or phone her to ask. They are both so brave, and I'm so happy they have each other to lean on at such a difficult time.

    Vegan Shepherds Pie
    Ingredients
    For the filling
    3 tbsp olive oil
    1 medium onion, finely chopped
    2 celery sticks, thinly sliced
    1 medium leek, cut into roughly 5mm/¼in slices
    250g/9oz chestnut mushrooms, sliced or halved, depending on size
    1 medium courgette, chopped
    2 garlic cloves, crushed
    2 carrots, chopped
    400g tin chopped tomatoes
    2 x 400g tins lentils, drained and rinsed
    100ml/3½fl oz red wine (vegan-friendly) or water
    2 tbsp tomato purée
    2 tbsp yeast extract, such as Marmite
    1 tsp dried mixed herbs
    1 vegetable stock cube
    sea salt and ground black pepper

    For the mash
    1kg/2lb 4oz floury potatoes, ideally Maris Piper, peeled and cut into roughly 5cm/2in chunks
    100ml/3½fl oz plant-based milk, such as almond or soya
    3 tbsp extra virgin olive oil
    2 tbsp nutritional yeast flakes


    Method
    To make the filling, heat the oil in a large, wide-based non-stick saucepan or sauté pan and gently fry the onion, celery and leek for 5 minutes, stirring regularly. Add the mushrooms and courgette and cook for a further 5 minutes, or until softened and lightly browned. Stir in the garlic and cook for a few seconds more.

    Add the carrots, tomatoes, drained lentils, 300ml/10fl oz water, wine (or extra water), tomato purée, yeast extract, mixed herbs and crumbled stock cube. Season with salt and pepper and bring to a gentle simmer.

    Cook for 30 minutes, or until thick. Stir occasionally at the beginning and more regularly towards the end of the cooking time so that it doesn’t stick. Add a little extra water if necessary; it should look nice and saucy, but thick enough to support the weight of the potatoes. Adjust the seasoning to taste, making sure you are generous with the black pepper.

    While the vegetables are simmering, make the mash. Put the potatoes in a large saucepan and cover with cold water. Bring to the boil, then reduce the heat slightly and cook for 15 minutes or until very soft.

    Preheat the oven to 200C/180C Fan/Gas 6.

    Drain the potatoes in a colander then return to the pan and mash with the almond milk, oil and nutritional yeast. Add a little more milk if necessary, so that the potatoes are really light and fluffy. Season with salt and pepper.

    Pour the lentil mixture carefully into a 2.5 litre/4½ pints ovenproof dish – a lasagne dish is ideal. Spoon the potatoes gently onto the filling and fluff up the surface with the back of a spoon.

    Bake for 30 minutes, or until pale golden-brown and bubbling. If the topping doesn’t go brown enough, pop under a hot grill for a couple of minutes. Serve hot.

    Recipe Tips
    If freezing, defrost thoroughly and reheat in a microwave or oven until hot throughout

    Being in the top third at the quiz night, that's ok. You did have to iron a million table cloths, which was tiring enough, without taxing the grey matter as well. Hope you raised lots of money :D:D

    Agreed, Saddleworth is not a nice place at all, even in brightest sunshine on a warm day, driving off the motorway and onto the moor roads have always left me ice cold. In winter, it is so much worse. So glad we don't make that journey any more.

    Hello all..Niamh has gone home now after 2 sleepover..last said again.and she wasnt well so I gave her children's paracetamol and the gel coolers for her head that Toni told me about...
    Aidan thankyou for the Pumpkin French Toast with Whipped Pumpkin Butter and Maple Syrup..I copied and pasted that.. :lol: and the apple scone were delicious..
    Glad you got your table at the T rooms..and you all enjoyed...the section of motorway near the moors is always slow..like you say its eerie..I am always glad to get past it..glad that Bs brother arrived safety

    It is slow, that stretch of the M62, coming down towards Milnrow turn off.
    It is a few years since we came over the moors, the last time it was to the Saddleworth Hotel, to our Nephews wedding. A stunning venue, but we left before the night time party started.

    He said when he was sat in traffic, a car came across in front of him, he thought they were just lane jumping, but the car swerved back out and ran into the central barriers - the man had fallen asleep at the wheel :shock: :shock: :shock: Little to no damage done, thank goodness, it could have been a nasty incident.

    We are at 5 siesta's now, not quite as long, but, I did nod off. Mother and Sleek must have a new spell. t115006 t115006

    What lovely Auntumnal mists were collected this morning apparently according to Sleek on her way back from Hogwarts. Apparently the kits did well and all braved the wall through to platform9 and 3/4. Sleek travelled on the train all the way with them and had a cuppa in the Staffroomwhen they arrived She was chuffed to bits :D

    She has to call in to Aidan's this afternoon to pass on lowdz of messigiz to Tosca too t4591 As Mother explained to you there is a tme-shift so I didn't even notice she'd gone :shock:

    Apparently Tosca is doing Sleek's 'reffranse' today....

    Hello Joan, I have a walker but haven't used it in months. I'd love to go a short walk but Chris won't let me out on my own and he can't walk well either. I miss our Magnum's on the bench. We still have ice cream at home but I used to enjoy hearing the birds singing.

    Sorry I'm a bit late on today but we've had another Amazon delivery. A new mouse and some loose fitting socks for Chris which are still on their way. I also ordered three packs of Tena Comfort 46 in a pack for £12.89 so that was just over £36 for 138 individual pads. Marvellous bargain for dribblers like me. :lol:

    Toni, Golden Brook does sound cosy doesn't it. It has also been called Brown Brook which is more realistic. It's pretty clear now but in Victorian times it was awful or so I've read. No magic properties sadly.

    Aidan, Cheesy Potato Breakfast Casserole don't mind if I do ta muchly.

    Barbara, my granddaughter Willow was born with learning difficulties and is the sweetest girl you could know. I'm sure Tony's GF is just as sweet.

    Apple Vegan Cake
    Ingredients
    1 cup all-purpose flour (maida, plain flour)
    1-1/2 Tbsp corn starch (corn flour)
    1 tsp baking soda
    1/8 tsp salt
    1/2 tsp cinnamon powder
    1/4 tsp nutmeg
    1/3 cup oil (canola or any vegetable oil)
    3/4 cup sugar
    1-1/2 cups apple sauce
    1 tsp vanilla extract
    1 Tbsp powdered sugar (for garnishing)

    Method
    Pre heat the oven to 350°F
    Square 8- inch cake pan, line with parchment paper and grease bottom and sides of the pan.
    Mix the dry ingredients together except sugar, flour, corn starch, baking soda, nutmeg, cinnamon, and salt.
    In a different bowl whisk oil and sugar together for about 2 minutes add apple sauce and vanilla extract mix it well.

    Add the dry ingredients to apple mix and mix it together gently making sure all the ingredients mix together well.
    Pour the mixture to cake pan and bake around 28 minutes, until cake begins to pull away from sides and/or toothpick inserted in the center pulls out clean.

    Let it sit for about 20 minutes bring to room temperature and slice the cake into 16 square pieces.

    Before serving lightly dust with powder sugar.
    Spread with butter icing or thick cream.

    Hope Tia has had a good first day at her new job t4591 t4591 Joan had the same thoughts as us, bringing new doggies home...........If it was a cat rescue, I would not be able to leave any of them at all - I would be crazy cat man.

    Aidan what a day Sleek is exhausted! :animal_busy: She was so proud of being invited into the staffroom bless her! Not bothered at all about ghosts nope not a bit!

    She has checked in on them periodically via Minerva's crystal ball and as you know they have already been there a term by now so are back with their parents as though they never even left!! Improvements in behaviour have been noticed though already :D

    Oh my goodness 'The order of Grand Wizard Pusskin!!' (you do know Tosca already had that award don't you? ) just wait until she finds out. I hope they award it to her in front of the kits - it will do them good.

    Hello all very late sorry.

    Dentist this morning to prepare my tooth for the crown,and when I came to sit up I had a funny turn..well not so funny..not good lying on my back at the hest of times.
    Anyhow thank goodness OH was there, they were going to call an ambulance :shock:

    Well it's Holly day, Esme gave me a smile but the little one is a bit off colour. She lay back in her pushchair with her baby bottle of milk. Could be a bit of a cold, or maybe teething trouble. Holly brought back a bunch of Roses which Chris put in a vase of water. :D

    It was a struggle to get up this morning as my hip and thigh were so painful. Extra Oramorph and some Fenbid gel helped. :cry: I was hoping the post man would deliver my Macmillan Journal as it has been delivered, but it's not here yet. Hope my prescription arrives today too.

    Aidan, I think you had our weather yesterday and we had yours. We were supposed to have a dry sunny day, but it pelted it down all day. Oh I see the stag is watching over us from the shelter of the woodland, and the squirrel too. Wild creatures look after us as much as we look after them. Thank you for the Apple Danish it went down well with my coffee.

    Barbara, I just knew your brother's GF would be kind and caring. My sister Anita would have shot straight round to dad's on Sunday and given him a good talking to about equipment to support him.

    Carol, thinking about you and hoping you are busy knitting away while Mr T potters around under your feet. :roll:

    A good scone is a symbol of hearth and home. You will win lots of brownie points with these. This ultra-simple recipe uses fizzy soda and cream to achieve a light-as-air result.

    Cheesy Rocket Scones
    Ingredients
    4 cups Self raising flour, plus extra for dusting
    1½ tsp Baking powder
    1 tsp Salt
    1 pinch Cayenne pepper, optional
    75 g Rocket leaves, finely chopped
    200 g Grated tasty cheese
    1 cup Cream, chilled
    1 cup Soda water, chilled
    1 Tbsp Butter, to serve, optional+ add to shopping list

    Directions
    Preheat oven to 200C fanbake and line a baking tray with baking paper.
    In a mixing bowl combine flour, baking powder, salt and cayenne, if using. Mix in chopped rocket and cheese.
    In a separate bowl or jug combine the cream and soda water. Make a well in the centre of the dry ingredients and pour in the liquid. Mix with a knife until just combined. If making in a food processor or electric mixer, pulse together flour, baking powder, salt, cayenne, rocket and cheese to combine. Add soda and cream, pulsing 3-4 times until mixture just starts to come together.
    Turn out on to a lightly floured surface and pat into a rough rectangle about 4cm thick. Cut into 12-16 pieces and place on prepared baking tray.
    Bake until scones are puffed and golden and they bounce back when pressed (about 15-18 minutes). Serve warm or at room temperature, split open and spread with a little butter, if desired. If you have any left the next day, they are also good split in half, toasted, spread with butter and topped with sliced tomato and a little salt and pepper.

    A quiet day here, Dad was ok when B went round this morning.

    Lots of immaculising was done yesterday, I overdid things cleaning the front of kitchen cupboards, only at my level, not high's and low's - B attacked the house bathroom floor, with the mini bissell shampoo machine. It looks like new. You cannot mop etc, as it is so non slip, everything sticks to it like glue :shock: . Great for not slipping, but not for easy cleansings :roll: :roll:

    Cushion covers (grey ones) all washed, dried and back in situ :) Therapeutic cleaning as my Aunt would call it. If it doubt, scrub something :lol::lol::lol:

    Time I was pottering, I am sure I can find something to fuss over.

    I am glad that your Bro's eye test was ok, but not so good that he is struggling with swallowing. Has he seen the Dietician and or the speech therapist, both can offer help and lots of advice with regards eating, drinking etc. I truly pray that the trial offers help and some relief from the problems he is going through. t4591

    First things first, I rang dad this morning. I messaged Anita on FB Messenger last night. She went to stay with dad on Sunday and stayed there until last night. He sounded so much better this morning to how he sounded on Sunday. He was up and about too. He already has an alarm to contact the ambulance station and that's how they got to him on Sunday. All their checks were OK and they gave him some Fenbid Gel and showed him how to apply it himself. He now has a DAB clock radio which Anita set up for him and he was expecting a lady to visit him today but couldn't remember why. This coming Sunday he's getting 2 zimmer frames. One for upstairs and one for downstairs and something else but he couldn't remember what. Perhaps it's one of those bed things that you have Aidan? Anyway I feel happier knowing he's OK. He thinks the cold weather had affected him.

    Joan, yes the Roses are lovely but I don't want her spending her much needed cash on us. :o It gives me and Chris a great deal of pleasure to know we might be helping her out a bit financially. I can remember what being a single mum is like - flipping hard. :?

    Toni, I love Sleek's REAL name, Daisy Ellen really suits her, so pretty.

    Creamy vegetarian Pumpkin Pasta Bake

    INGREDIENTS
    1.8kg Kent pumpkin, peeled, diced into 1.5cm pieces
    Olive oil spray
    500g dried rigatoni pasta
    50g butter, chopped
    1 large brown onion, chopped
    2 garlic cloves, chopped
    1 teaspoon ground allspice
    1/4 teaspoon ground cloves
    2 teaspoons vegetable stock powder
    300ml thickened cream
    1 1/3 cups milk
    1 cup finely grated parmesan
    1 cup chopped kale
    200g Coles Laurent Pane Di Casa bread, crust discarded, chopped
    2 tablespoons pepitas
    8 cherry bocconcini
    Mixed salad, to serve

    Preheat oven to 200C/180C fan-forced. Grease and line a large baking tray with baking paper. Grease a large baking dish.
    Step 2
    Place pumpkin on prepared tray. Spray with oil. Season with salt and pepper. Bake for 25 minutes or until pumpkin is tender.
    Step 3
    Meanwhile, cook pasta following packet directions. Drain, reserving 1/2 cup cooking liquid.
    Step 4
    Melt butter in a large deep ovenproof frying pan over medium heat. Add onion and garlic. Cook, stirring for 6 minutes or until onion softens. Add spices. Cook, stirring, for 1 minute or until fragrant. Add stock powder, cream and milk. Bring to a simmer. Cool 10 minutes.
    Step 5
    Place 3/4 of the roasted pumpkin and cream mixture in a food processor. Process until mixture is smooth. Combine pasta, pumpkin sauce, 3/4 cup parmesan, kale, remaining roasted pumpkin and reserved cooking liquid in a large bowl. Season with salt and pepper. Place in prepared baking dish.
    Step 6
    Wash and dry food processor bowl. Process bread until coarse crumbs. Combine breadcrumbs, pepitas and remaining parmesan in a small bowl. Sprinkle over pasta. Top with bocconcini. Spray with oil. Bake for 20 minutes or until top is golden. Serve with salad.

    Evening all
    Blooming heck what a busy week we have had this week time has just run away with us. Shopping trip went well last Thursday however no Christmas presents were found. I did however buy myself some undies In M&S and when taking a fabric carrier bag out of the bag on my walker I found my bracelet I lost the day the family party at the beginning of September. I Rey happy with this because it was the one that Mr T brought me for at Christmas.
    The Chris de Burgh concert was fantastic as usual. Last Friday. Was busy with some shopping of fresh stuff on Saturday. And of course church service on Sunday. Monday was a bit of a relaxed day. Yesterday Mr t and me went to the Christian resources exhibition at Sandown racecourse arrived home around 3.30 pm and then went out again after a sandwich tea to the church prayer meeting. today is was knitting group. Blimey just read that back no wonder I’m shattered just reading it makes me feel tired. Oh well at least I have been busy. I am feeling lots better at the moment and still working my way up I am a lot closer to my usual self than I have been. Hopefully I am going to be posting a bit more on here.

    Our gorgeous Lillie was in her 1st Baton twirling competition on Saturday (she only started doing it April ) she finish the day with about 4 medals and a trophy. Pretty good for a 7 year old on her first competition I think. Of course I have some pictures and videos of her that GD put on Facebook so I am a very proud great Nanny at the moment.
    I will post a couple on here soon. Well it’s 5 days until Mr T takes his little trip to ramsgate to see Kian.

    Well that’s a little update from this end. And time has run away with me again. And it is time for a little potter again taken all for the love t4591 and hugs and sparkles t115006 (especially the autumn ones Aidan) from you all

    Evening all..sorry this will be short but been to my brothers and we rang the McMillan nurse..she came over bless her..she had a quiet word and it seen he is in the later stages.. :cry: so will probably need a feeding tube soon through his tummy..I am so worried has this didnt work for my eldest brother..and they tried so hard..
    Its Christie's tomorrow.. but apparently the trial is just that..it might not make a difference.. but we are staying positive
    I did read your post and will type more tomorrow.. oh and Niamh went to see the abominable snowman..

    Sleek was over at nap time, they watched something on TLC - it will have had weddings and bling in it, without a doubt. They plan to visit the Nymphs and possibly go up to the Castle in town.

    Hi Barbara - was your Brother having increased difficulty with swallowing and the MacMillan nurse came out?
    It is very upsetting to hear that news from the nurse, but, they are always kind and so caring. It is important that family know what stage your Brother is at.
    Are they considering a PEG feeding tube, directly into his stomach, or a nasal tube? The PEG ones are much better and procedures are always being updated and improved.

    It didn't work for your eldest Brother, which is very sad. Keeping as normal a level of nutrition is important, especially going onto a clinical trial.

    I pray that they can sort out a solution to his nutrition asap. t4591 t4591 t115006 t115006 Thoughts and prayers are being offered many times daily, by all of us. XX
