    Evening all..
    Toni I am finding it easier on my phone would you believe.. I can enlarge it easy and hold it near my eyes..just makes my finger ache..I cant text like the young ones do both thumbs.. :shock:

    Hello lovely cafe dwellers,

    I don’t know if this will be helpful - just a reminder (or information if we forgot to say :wink: )

    On the new forum community Val's cafe will be on its own like Living with Arthritis, so you could have 'Val and Aidens tasty treats' and inside there have Val's cafe and Aiden's Patisserie

    Obviously names are your own, mine are just to try and explain my tricksy words

    Maybe I’ll go for a bacon and egg breakfast, thanks for the idea - I’ve popped some shortbread biscuits in the tin, we got lots at Christmas, plenty to share around

    HOORAY TO OUR MODS

    Joan, Haggis is a Scottish dish using mince (you can use Quorn or other veggie mince) Here is the recipe using Quorn mince:
    IT'S VERY TASTY.

    To serve 4
    400g Quorn mince
    75g pearl barley
    75g jumbo oats
    45g vegetable suet
    1 smallish red onion, finely diced
    Oil for frying
    1 tsp salt
    2 tsp ground pepper
    Half tsp cayenne pepper
    Half tsp Allspice
    Half Veg stock cube/tsp stock powder or tsp marmite.
    50-75ml whisky according to taste (optional)

    Prepare the day before for best results.

    Bring a pan of water to the boil and add the stock/marmite and the barley. Simmer for 30mins.
    When the barley is nearly ready, fry the onion and Quorn mince in oil for a few minutes. Drain the barley and mix together. Allow the mixture to cool, then add the oats, suet and seasoning plus whisky if using.

    If you haven't obtained a vegetarian haggis skin (these can be ordered online) pack the mixture tightly into a heatproof dish and wrap the dish with tinfoil. Or ideally pack into a haggis skin. Or use a "boil in the bag" bag. Allow it to rest overnight or for up to a few days to mature.

    When your Burns Supper is imminent cook the haggis through until piping hot by ideally boiling for 30 mins if in a haggis skin, or steaming for 45 mins or baking in the oven for 30 mins if in a dish that can't be submerged

    Joan, you are welcome. I chose the Quorn recipe as I know you have used Quorn mince before, and thought it might be easier for you to try.

    Toni, Hmm eggs Benedixt, it looks delicious, thank you. One of our neighbours have two cats, a black one and a ginger one. But we haven't seen the black one for a while. But there is a new black and white one suddenly appeared and we've see him/her scapping with the ginger one (who is an original scaredy cat). So we wonder if new cat is a replacement for the black one. I wonder if Sleek has heard any announcements on the Daily Mews.

    Barbara, I think the Quorn one might be easier as you just add the Quorn mince to all the other ingredients. It's very rare that I post in any other thread except the cafe. Although I do enjoy the word challenges. But the cafe will always be my first love.

    Goat Cheese and Spinach Omelette

    SERVES: 2
    Ingredients:

    3 large eggs

    300g (10.5oz) baby spinach

    2 tablespoons of goat cheese in cubes (or feta)

    1 tablespoon of olive oil

    Small pinch of black pepper

    Recipe Summary

    Egg, in my opinion is a nutrient powerhouse. The egg white is packed full of protein while the yolk is a good source vitamin D, vitamin A and vitamin B2.

    Preparing spinach is easy. But people often forget how useful nutritionally this vegetable is. Apart from the association with Popeye, spinach; like eggs is packed full of nutrients. It is high in vitamin K, vitamin A, magnesium, iron and the list goes on.

    This quick cook recipe (14 minutes) also brings in goat cheese. While it is not to everyone’s palate, many of our members use this on a daily basis. If you don’t like goat cheese, feta can be use as an alternative.

    Method:

    Boil a small amount of water in a saucepan. Drop in spinach and cook just until wilted. Drain and chop coarsely. Stir in the cheese.

    Beat the eggs with a fork in a medium bowl. Add in a pinch of black pepper. Heat the olive oil in a nonstick pan over medium-high heat until hot. Pour in egg. Tilt the egg from side to side. Add in the spinach mixture over the omelette. Continue to cook until almost set, and the bottom is golden.

    I've had a word with Miss Sleek she is going to check in with Tosca (who reads all the papers) and actually do a recce around your area see what she can come up with. She is a bit concerned if pusskin is being bullied and reckons she might have to 'sawt thins owt'.

    Evening all..so sorry this is late.. mind you I usually am..my neigjbour had a meltdown..the poor thing was distraught..a friend is going to put her and the children up till the council can find her somewhere..but like she says this is her home... :cry:

Lucy had all sorts of gaps it seemed with hers but those who had tumours or breast cancer the gaps always seemed the same (allowing for ok blood results of course). Long may he keep well t4591

    Your poor neighbour must be heartbroken :( Still at least she's over that vile man and only had this loss to deal with. I hope she is lucky and the house the council finally find is in a good area for the kids ((()))

    I sit on a stool to cook always Barbara it makes a difference :) Tip - don't buy the ready made veggie haggis the recipe I PM'd from Kath is far far superior.

    Joan, Bless you, Holly picked up our few bits this morning bless her. Her dad has been taking Esme to school on these cold mornings. I see them go to the car park and she looks very grumpy. Vay stays home with her aunty and the dog.

    Toni, no ninny walking here, it's sunny, but that wind is freezing. I managed to wobble over to Holly's flat this morning. Got in OK, but on the way out Holly had to grab me from behind as I almost fell off the step. :roll: Good job she was strong and quick. It's not often I do that and now I know why. :shock: For goodness sake, it's only like walking about 2 yards! My GP sent the practice nurse to take my blood pressure this morning too, 150/80. It's the first check since she added my 3rd tablet. It's the lowest it's been for years. :D
    Breakfast, anything with egg is OK by me thank you.
    I hope Charlie manages to finishher eulogy for granddad. I like this by Christina Rossetti.

    Kale and Mushroom Toasted Quinoa Pilaf

    SERVES: 4
    Ingredients:

    120g (4.2oz) quinoa
    600ml (1.05 pint) hot chicken or vegetable stock
    200g (7oz) sliced mushrooms
    2 large handfuls of kale (woody stems torn out)
    1tbsp extra virgin olive oil
    1 clove garlic, crushed (or you can use dried garlic granules or ready made paste)

    To season:
    1tbsp lemon juice
    2tbsp parmesan cheese (or for a diary free version, try nutritional yeast)
    Black pepper to taste

    Recipe Summary

    Here’s a warming, super healthy, arthritis friendly dish to start your New Year with. Quinoa (pronounced keen-wa) is a small seed that is cooked and served like rice or couscous. It is gluten free with a nutty, mild flavour and is unusual in that it is a complete plant protein source, containing all 9 amino acids. It’s quite widely available in supermarkets and health food stores nowadays. I find the flavour best if it’s lightly toasted first in the pan before you add any fluid. If you struggle to find it or want a substitute this recipe will also work well with brown rice but you will need to adjust the cooking times accordingly.

    Enjoy vegetables at their seasonal best. Kale is available in abundance in the winter and is a wonderful source of vitamin K which some studies suggest can slow cartilage deterioration in osteoarthritis. It also contains sulphurous compounds that have an anti-inflammatory effect. Mushrooms add a good dose of healthy fibre and folate.

    A good tip for using lemon juice when you have arthritis in your fingers, is to pop the lemon in the microwave for 10 seconds before cutting open to squeeze. This makes it much easier to extract the juice. If you don’t have a microwave you can also just roll it on a board firmly a few times before slicing.

    Method:

    Put the quinoa in a pan over a medium heat. Let it sit and toast until it begins to pop, then remove from the heat and stir in the olive oil, garlic, hot stock, mushrooms and kale.

    Cover the pan and simmer until all the stock has been absorbed and the little white edge of the quinoa seed has separated from the grain.

    Fluff up the quinoa and season with the lemon juice, parmesan and pepper. Serve immediately or allow cooling at room temperature. Enjoy as a warm salad.

That is good, but so long as it doesn't make you wobbly. Mine is usually 100/60-something. It was 90/60 when I was pregnant until I got pre-eclampsia :shock:

    Evening all

    The wanderer returns :lol: I have been a bit occupied.
    After my problem with the knee last Wednesday morning. Went to dr as I said in last post on here on Friday I went to the hospital for X-ray thank for your company under the cloak. The pain is better as long. I take all my doses of co-dydramol each day it gets a bit painful and stiff if I sit with my leg in one position too long so I have to keep changing positions with it. I have been sleeping with a cushion between my knees if lying on my side and under my knee when on my back and I am not getting up with as much pain in either my back or my knee. I have now brought one of these special knee pillows. Only got it on Saturday so we will see how that goes. I am now waiting for a appointment date with the physio. I am still asking for ramp on bus so still taking it fairly easy. As in 10 days we will be going to Ramsgate for our youngest GD 18th Birthday party on the 8th. Of February and we will be coming back home 2 later. So I have fingers firmly crossed that the knee continues to behave.

    Our eldest granddaughter has at last got a house out of the council which is great as she was in a really bad place before That was damp and always cold. She has moved to Minster which is the next station on the line after Ramsgate where everyone else is . It is about a 10 min train ride. It has 3 bedrooms and not 2 so Lillie now has her own bedroom. And the other 2 are in together. They moved yesterday.

    Thank you all for your good wishes with the knee and only time will tell.

    Toni Hope all goes well for Lucy and Charley at their grandads funeral. No ninny walking here it is cold and we are still a bit damp but none of that horrible white stuff.

    Kath I love the poem pottering a lovely reminder of Aidan and the cafe.

    And wow the cafe on its own part of the forum with different areas that’s fantastic thank you mods.

    Well that’s exactly Done for tonight must have a little potter as been sitting for quite a while now better get up and move.

    Carol I am very relieved to see you! Just sounds as though you've been busy getting things in order to make your knee more comfortable - very wise indeed especially with the tip to Ramsgate imminent. Hope physio apt comes through quickly for you ((()))

    What great news that your eldest GD is getting a property and that it means Lillie is getting her own bedroom bless her. Sounds to be pretty close to everyone else - will she have it for your visit so you can have a nosey?

    No snow here so far so no need for any Ninny-walking either long may that last!

    Today I am off to our nearby eco shop to discuss recycling for our village with a couple of others. Not sure what the outcome will be we shall see....I already do it but the villagers are interested in recycling stuff the council don't like crisp packets and pet food sachets....

    Miss Sleek is still out still trying to sus out the pusskins near Kath's she thinks all is well and has had a word about fighting so we shall see :animal_busy:

    Good afternoon café-friends :)

    back from our meeting about recycling at the eco shop. It was very interesting I think useful in terms of best Kept Village as well. Keeping the village well is also about tidiness and recycling so all good :D

    Joan I was picked up from my door and dropped back off so all good :)

    Thank you everyone is well. Charley's eulogy for her Grandad is all typed up now and printed off just got to get to Tuesday now.

    My neighbours house has sold..an hour after it went live on the net..and the good news they are buying all the furniture off her because they are renting theres out fully furnished..karma.. :)
    Joan you are so right and always make me laugh ...easy to fall over..but hard to get up..well impossible on our own...I hope you are are keeping ok...(((((()))))

    The recycling is so complex..its about time something was dont about the packaging that cant be recycled and all the plastics.. :roll:
