    Evening all..Its been a lovely sunny day today..and its staying light longer :D
    This cough has really got an hold of me..proper shivers has well..I dont remember the last time I had something like this..never mind it will go..
    Carol bet you are really looking forward to seeing all the children..I would live to see a photo of the little one with her baton.. bless

    Totally agree with you. Once you're gone you're gone and funerals are so expensive. Having said that the children and in your case GDs might want you to have 'a good send off' to be fair?

    Our wills were complicated too being as we are 2nd marriage Tia Pauls Lucy and Carley mine. Well done for sorting yours t's not easy, but so wise save lost of hassle for them all.

    Don't worry Tia is under strict instructions NOT to let Charley near any puppies!!! :lol:

    The Wait by Kath aka misery guts

    They wait.
    For breakfast,
    lunch,

    Very sunny here now, but FFFFFREEZING!

    Sue and Joan, Just looked up Akcees, it sounds a good alternative for DAR but only available in Swindon. I'm very glad for you and hope they run a reliable service.

    Babs, thank you for the lovely photo, and it looks such a sunny day when it was taken. We are surrounded by canals, rivers and nature reserves, so lots of swans, geese, coots and moorhens - not to mention ducks. We see and hear them fly over.


    Tuna Panzanella with Rocket

    INGREDIENTS
    150g Ciabatta bread, chopped into bite size pieces
    250g Cherry Tomatoes, halved
    1 Shallot, halved peeled and finely sliced
    1 Yellow Pepper, halved, de-seeded and sliced into thin strips
    1/2 a Cucumber, thinly sliced
    160g tin of Tuna, drained
    60g Rocket
    35g freshly grated Parmesan Cheese
    1 small handful Fresh Basil Leaves, roughly chopped
    4 tbs Olive Oil and a little extra for drizzling
    1/2 a Lemon
    Salt and pepper

    METHOD

    Pre-heat your oven to 200 degrees.

    Take your chopped ciabatta and spread in a single layer on a baking tray. Sprinkle evenly with grated parmesan cheese, a grind of black pepper and a drizzle of oil. Place on the top shelf of your oven for 10 mins or until the cheese is melted and the bread pieces are golden.

    Meanwhile, take a large bowl and add your halved cherry tomatoes, sliced shallot, yellow pepper strips, and sliced cucumber. Add half of the olive oil season with salt and pepper and mix through.

    Flake the tuna over the top of your vegetables followed by the rocket and the remaining olive oil.

    When your bread is ready, remove from the oven and mix through your salad. Finish with a squeeze of lemon and scattering of basil.

    Enjoy!

    If you would like to replace the Tuna with tinned tomatoes, it's a matter o taste. Recipe from The Ros Osteoporosis website.

    Aha! It's called the Flash :) We have what we call 'Pit Pools' here too though yours looks much nicer :)

    Thank you Lucy got on OK at the Dr and dentist. The M6 had an accident on it Lucy's Dr was trapped in the traffic jam and was HOURS late but we waited because Lucy is going up to Scotland now to try to get a job up there ( :shock: :cry: ) and couldn't remake hers.

    Then when we got to the dentist she was an hour behind too :roll: Ah well all done :)

    Joan, yesterday was really icy, but it's a bit milder today thank goodness. Dreading the gales overnight and tomorrow. I ran dad today instead of tomorrow, he's keeping well but a bit fed up as he wants to cut the grass and it's too cold. He's 89 for goodness sake! Chris is soldiering on thank you. How did it go with the new Akcess service yesterday?

    Toni, I'm so glad Lucy and Sleek are both doing well after all the tests. That hot lemon should do Barbara good. I'm all over that breakfast mi duck as Matron would say, looks gorgeous.
    The poem yes, it could be a nursing home or a hospice. No idea what made me write it. :? Must be getting old and doddery.

    VEGAN COCONUT PANNA COTTA WITH STRAWBERRY SAUCE
    4 servings | 15 minutes (+ time to cool down)
    INGREDIENTS
    PANNA COTTA
    1 can of coconut milk (200 g (7 oz) of the coconut milk cream (the thick layer of a coconut milk can))
    300 ml (1.25 cups) plant-based coconut milk (from the milk carton)
    40 g (1.4 oz) agave syrup
    3 g (0.1 oz) agar-agar
    5 g (0.17 oz) tapioca starch
    ADDITIONAL
    300 g (10.5 oz) fresh strawberries
    100 g (3.5 oz) almond slices
    INSTRUCTIONS
    Heat the plant-based coconut milk (from the milk carton) in a small saucepan. Add 200 g of the thick layer of a coconut milk can and stir.
    Add agave syrup, agar-agar, and tapioca starch. Stir well and let simmer for 2-3 minutes.
    Fill the panna cotta in 4 or 6 small jars. Allow to cool down completely and then let cool down in the fridge for at least 3 hours (better overnight).
    Before serving: Wash the strawberries and remove the stalk. Purée strawberries to a sauce and top the panna cotta with the strawberry sauce.
    Roast almond slices in a pan without oil and serve immediately.

    Chickpea and mushroom curry
    This cracking recipe is on a mission to prove that fast food doesn't have to be unhealthy. With an abundance of vitamins and minerals in this tasty curry, it appears it's mission is accomplished!

    Serves 4

    Ingredients
    1 large onion, chopped
    Vegetable ghee (see notes below) or oil
    2 cloves garlic, crushed
    2 large tomatoes, chopped
    Salt
    1 tsp turmeric powder
    1 tsp garam masala
    Chilli powder or finely sliced red chilli to taste
    1 tin (420g) chickpeas, drained
    1lb 2oz (500g) mushrooms, sliced
    2 tbsp water
    2-3 tbsp coriander leaves, chopped
    Method
    Fry onion in oil or vegetable ghee until soft.
    Add garlic and chopped tomato. After 2-3 minutes stir in a pinch of salt and the spices. Add sliced chilli, chickpeas, mushrooms and water. Simmer with the lid on until mushrooms are soft.
    Mix half the chopped coriander leaves into the dish and sprinkle the rest on top before serving.
    Season to taste.
    If you prefer more sauce add some tomato puree with a little vegetable stock and adjust the seasoning.

    What is vegetable ghee?
    Instead of using dairy-based butter, you can use vegetable ghee. This is a product made using vegetable oil and sold as a vegan-suitable alternative to dairy for making curries and other traditional indian foods

    I do miss Lucy already, but she needs to get on with her life now :(

    Short story (for a change)

    The Great Escape

    Goldie was notorious on the Crescent where I lived next door to my cousin Stephen. She was always escaping.

    Stephen bred rabbits; or rather he helped my uncle breed rabbits. Old English to be exact. Beautiful white rabbits with a black stripe down the middle of their backs and black smudges down each side.

    "No two rabbits have the same markings," he told me. "Each spot is like a fingerprint." I wasn't entirely convinced, as most of the rabbits looked exactly the same. Only one day for some unknown reason, one litter was born which consisted of four tiny black and white bundles of fur and one tiny brown one. She (I was assured it was a she) had a gold patch on the back of her neck. I instantly fell in love with her and named her Goldie. After much pleading on my part, mum and dad let me add her to our menagerie of two cats, one dog, a tortoise and three budgies.

    Her career in escapology began quite early: but one dull damp Saturday in autumn she excelled herself. I was certain I had secured her cage the night before and covered it with a tarpaulin as it was pouring with rain. When I went out the next morning with a fresh juicy carrot, everything looked normal. I threw back the tarpaulin expecting to see Goldie, her nose twitching in anticipation. But she wasn't there so I assumed she was in the other end of her cage that she used as a toilet.

    "Goldie!" I called and tapped on the wire mesh. I didn't want to embarrass her by opening the door while she was - well, you know. I listened but I couldn't hear Goldie scraping or bumping as she buried her droppings in the straw. So I decided to open it; but it was already open. Goldie had escaped again.

    "Mum!" I ran into the house startling Pongo, our eldest and most cantankerous cat who was curled up asleep on the flip top rubbish bin in the kitchen. The lid wobbled as he balanced precariously on three legs and tried to save himself. He only succeeded in tipping the whole lot over and ended up covered in potato peelings and tea bags. This excited Pedro our Bull Terrier who began snuffling around for something edible among the debris. He was rewarded by a sharp swipe from Pongo; who fled down the hall leaving a trail of tin cans and bread wrappers behind him.

    I hardly dared look at mum. She stood in her usual pose: hands on hips, right foot tapping on the floor.

    "You can just get that lot cleared up," she frowned and pursed her lips.

    "I didn't do it," I wailed, "anyway Goldie's escaped again and I've got to look for her."

    "You should have thought of that before you charged in and scared Pongo. Now clear it up - else."

    "Stupid cat shouldn't sleep there anyway," I muttered as I got to my knees. It's surprising how stinky eggshells and things can get after a few hours in a rubbish bin.

    There was no sign of Goldie in the garden and now it had begun to drizzle. I sat with Stephen next to Goldie's empty cage and wondered what to do next.

    "You don't think someone's took her do you?" I asked. Stephen looked thoughtful.

    "I doubt it, you're the only person who can handle her without world war three breaking out. Besides, why would anyone want to take Goldie when everyone knows we've got a shed full of show rabbits next door?" He had a point; Goldie must have escaped all by herself. After all, she was a bit of an expert at it.

    At that moment there was a shout from the garden four doors down.

    "That damned rabbit's escaped again!" It was Mr Rook; he spent all his time in the garden whatever the weather. His cabbages and carrots were legendary at the local garden shows. He always wore a toupee and was convinced everyone believed it was his own hair. "If I ever get my hands on it, I'll wring its neck and have it for dinner."

    "Oh no you won't!" I shouted back. Mr Rook hadn't seen me until then and startled, he jumped and caught his head on the washing line which twanged loudly and knocked his wig, which flew across the garden where Jasper - our other cat - was hiding among the bushes. He considered himself the world's best mouser and thought all his birthdays and Christmas' had come at once when he saw what he assumed to be a giant mouse land just in front of him. He pounced and grabbed the 'mouse' between his front paws, tossed it in the air once or twice, then caught it in his mouth and disappeared over the fence into the fields behind the Crescent.

    Mr Rook stood with his mouth opening and closing like a goldfish. Then he jumped again as a brown furry shape with a patch of gold on its neck dashed from his row of prize cabbages and started to burrow down among his carrots.

    "That does it!" He spluttered and stormed into his shed. He came out wearing a battered old hat and carrying a long handled landing net.

    Stephen and I scrambled over the fences to Mr Rook's garden. Holding the net in the air, Mr rook tiptoed along the rows of carrots and cursed under his breath. Then I saw Goldie emerge from the undergrowth. Unfortunately, so did Mr Rook.

    He stood poised for the kill as Goldie headed straight for him; unaware of the danger she was in.

    "Do something," Stephen whispered.

    "I can't, I might frighten Goldie then we'll never get her back."

    "What shall we do then?"

    "Wait for Mr Rook to catch her then appeal to his better nature."

    "Mr Rook hasn't got a better nature. We should do something," Stephen answered.

    The decision was taken out of our hands as that was the moment Jasper chose to come back. He jumped from a tree next to Mr Rook and dropped the limp and battered hairpiece at his feet. Then giving one last disgusted look, sauntered home with his head in the air and tail held high.

    Goldie had disappeared; Mr Rook picked up his wig and carried it dejectedly back to the house to a round of applause. Everyone in the Crescent had seen the entire episode. Some had even caught it on video. Mr Rook never got over the embarrassment and soon moved to another area. A lovely family live there now and they like animals almost as much as we do.

    Goldie never came back but sometimes on an autumn evening, just as the sun begins to set, a small bundle of brown fur can be seen racing across the bare fields behind the Crescent. I wonder if it has a gold patch on its neck?

    Vegan Sausage Casserole: Bangers & Borlotti Bean Stew

    A comforting vegan sausage stew with baby carrots and borlotti beans in a rich, tomato-ey gravy.

    Course: Main
    Servings: 3 people
    Calories: 443 kcal
    Ingredients
    2 tbsp olive or rapeseed oil
    6 vegan sausages
    1 red onion
    8 baby carrots (eg. chantenay)
    1 tsp smoked paprika
    1 tsp garlic purée / ready-chopped garlic
    400 g tin borlotti beans (drained and rinsed)
    250 g passata
    2 tbsp gravy granules (check they are vegan)
    handful baby spinach
    Instructions
    Heat the oil in a large, lidded casserole dish of frying pan, and fry the sausages on a medium heat until golden brown all over. Peel and slice the red onion and add to the pan, then trim the baby carrots and slice them lengthways into halves or quarters depending on their size. Add to the pan and cook for 3-4 minutes.

    When the onion has softened, add the garlic and smoked paprika to the pan and stir well. Drain and rinse the borlotti beans and add to the pan, followed by the passata, 250ml water and the gravy granules. Bring to the boil then reduce to a medium heat and cook for 7-8 minutes until the sauce has thickened and the carrots are just cooked through. Taste and add a little salt or black pepper if required.

    Roughly chop the spinach and stir through the sauce just a minute before the end of cooking time, and serve immediately with a baked potato, rice or mash.
