    Which look lovely! Uncle was clearly a great helper. I would like a flake one please!!

    I think I said Tosca was an excellent 'Acting-Matron' nice and calm like her Daddy 2 was. Apparently she used to help out at Hogwarts - who knew? As Aidan would have said.

    Well done getting out for a walk in the m0150 nature is so good for us physically and mentally. I try to go out most days If I can.

    I am glad your bro is getting out too most day I hope his GF is free to join him. Chemo is so draining I hope this week will be better ((()))

    Barbara, Niamh's cup cakes look wonderful, does she enjoy baking with grandma - I bet she does. Oh, it was uncle.I had 6 uncles, one was into tinkering with bicycles. There were always dishes of oil with bike chains soaking in them. He also had tandems and I would ride on the back, even though I was so small my feet couldn't reach the pedals. How that would have made Aidan giggle.

    Vegan SWEET POTATOES STUFFED WITH ASPARAGUS, ROASTED CHICKPEAS AND CARAMELISED ONION

    Recipe

    4 sweet potatoes
    1 bunch asparagus
    lime/lemon juice
    handful fresh coriander

    Caramelised onions
    2 onions, any color
    1 tbsp maple syrup (or other sweetener)
    evoo
    salt

    Roasted chickpeas
    1 can chickpeas
    ½ tsp curry powder
    ½ tsp cumin
    evoo
    salt

    Dressing
    2 tbsp tahini
    1 tbsp maple syrup
    2 tbsp lemon juice
    2 tbsp water
    pinch salt


    Method

    Preheat oven to 200°C/400°F (180°C if fan-assisted). Line an oven tray with parchment paper.
    Scrub, wash and prick the sweet potatoes all over with a fork. Bake for 60 minutes or until they are soft (try then with the back of a fork).
    In the meantime prepare the chickpeas for roasting: rinse and drain, then transfer to a bowl together with 1 tbsp olive oil, pinch of salt, cumin and curry. Toss to coat.
    Steam the asparagus: cut off the sturdier ends, place in a steamer pan set (or in a strainer) over a small pot over boiling water. Let steam for about 10 minutes (or more depending on their thickness), until tender. Remove from heat.
    Make the caramelised onions: chop onions, add 2 tbsp evoo to a pan over medium heat, add onions along with a pinch of salt, stir. Let cook, covered, over low heat for about 15 minutes or until translucent. Add 1 tbsp maple syrup, stir and keep cooking for 5 mins more. Remove from heat.
    When the potatoes are ready, remove from the oven and let cool at room temperature. Slice each in half. Leave the oven on.
    Line another (or the same) oven tray with parchment paper and roast the chickpeas for about 20 minutes, stirring them once halfway through. Remove from oven and let cool at room temperature.
    Make the dressing by whisking all dressing ingredients with a fork in a small bowl.
    Serve each potato with caramelised onions, chickpeas, asparagus, more chickpeas and onions! Drizzle with the dressing, fresh coriander and a sprinkle of lime. Enjoy!

    Kath those stuffed sweet potatoes look amazing I am going to have to have a god at them.

    Tosca and Sleek are wearing their nurses outfits today so I am told Nurse Sleek and 'Acting-Matron' Tosca outfits. I have to agree Aidan taught them well and he is the only other Matron I would want too :cry:

    It is the last White House Farm on Wednesday yes Paul and I are looking forward to seeing him get his comeuppance and that vile senior police officer too :x

    Joan It was a good Call the Midwife Sue will enjoy it :) Oh how frustrating forgetting to press 'submit'. What is with us :roll:

    Right I have good news so far Miss Sleek's bloods tests all came back perfect (purfect) so only her blood pressure check to go now on Thursday then all clear for another year :animal_busy: t4591

    Toni I am so pleased miss sleek bloods have come back ok..bless and you I know how worried you were..fingers crossed for her blood pressure.

    Evening all,hope you’re all as well as can be ,I’m doing good 6 months in remission and the RA is behaving :D
    I’m after picking brains and any vegetarians I have tried 2 recipes so far for carrot and lentil soup neither were very good ,they went down the loo,so lm hoping some of you might have a tried and tested one .Love to all Mig.

    Morning everyone. Didn't have a good night last night at all awake from 4am :roll: Ah well tonight should be better I hope. Gosh I can hear the wind out there glad Paul isn't on site today.

    Mig - I am so pleased 6 months is a milestone passed t4591 t4591 I will have a chat with Kari my sister I think she makes lentil soup. I never actually have with or without carrots, but I have made carrot and coriander many times. What was wrong with it? Was it just tasteless?

    Hi Barbara I know I am over the moon my little pusskin is well I expect her BP to be fine too, but this will at least give them a baseline if she's ever ill in future bless her.

    She said that she was watching her waistline before going to the vets and that's why it looked like she'd lost weight. Anyway winter and not so many mice to eat :mrgreen:

    Call the Midwife is just heartwarming isn't it? Whitehouse Farm is really good I think though I don't think I enjoyed the first episode much if I remember rightly. I was too busy enjoying life when it actually happened in real life so I don't remember it at all :oops:

    It was tasteless I followed the recipe it said to put a pinch of ground cumin in which I did maybe should have put some curry powder in. Off to knit and natter. Mig

    Vegan Caribbean bean and rice soup
    Filling and hearty.

    Ingredients
    1 tbsp sunflower oil
    1 medium onion, chopped
    2 garlic cloves, minced
    2 stalks celery, chopped
    2 carrots, chopped
    2 bay leaves
    4 tsp paprika
    3 cups (710ml) tomato juice
    1 tbsp tomato puree
    2 - 2 1/2 tsp dried thyme
    1 small green bell pepper, seeded and chopped
    1 small red bell pepper, seeded and chopped
    3 cups (710ml) vegetable bouillon
    1 (15-oz) can coconut milk
    ½ cup (100g) long-grain rice
    1 (15-oz) can red kidney beans
    sea salt and black pepper for the croutons
    3 cups (150g) day-old bread cubes
    2 tbsp olive oil

    Method
    Heat the oil in a large saucepan, then add the onion and cook over medium-high heat for 5–7 minutes until the onion is soft. Add the garlic, celery, carrots, peppers, bay leaves, and 2 teaspoons of paprika, and cook for another 5 minutes.
    Stir in the tomato juice, tomato paste and thyme leaves, then cook for 5 minutes. Add the bouillon, coconut milk, and rice. Bring to a boil, reduce the heat, cover, and simmer for 30 minutes.
    Add the kidney beans and cook for another 15 minutes. Remove the bay leaves and season to taste with salt and pepper before serving garnished with croutons.
    To make the croutons, toss the cubes of stale bread with the olive oil, 2 teaspoons of paprika, and thyme. Spread in a single layer on a baking sheet, and bake at 375°F for 4–5 minutes until golden brown. Enjoy with crusty bread

    Evening all

    4 days to youngest Gd 18th Birthday and her party and I have got the startings of a cold lucky me. It shouldn’t stop me from going though. As it is not that bad.
    Won’t be seeing my friend at our knitting group tomorrow as she sent me a Message saying she has a cold. My reply rather sarcastically was ok I’ve got a stinking cold too but I shall be going knitting. Oh dear not nice of me but she hasn’t had much sympathy for me over the last couple of weeks with my knee so I just could not resist it :? :? :lol:
    Been busy over the last few days yesterday Mr T and myself went to Kingston to a large shopping area near to us. Which made a change.
    Have dr appt for my annual blood test on Friday it should have been today but the surgery cancelled it no reason give just told me it have been cancelled and to ring a book a new appt. I also have a hairdressers appt to have my hair cut.

    Toni Hopefully the Lucy and Charleys grandads funeral went well, they are very hard times to get through. I can’t believe that in 8 days time my auntie has been gone for 1 year it has gone but so quickly. I am still trying to get used to forum without Aidan it seems so odd. Hope Bill is doing ok. And I know sleek is keeping an eye on Tosca. Good to hear Sleeks test are all ok. Sleek and Tosca in nurses uniforms well they do take their duties seriously you know.

    Barbara Niamh’s cupcakes look yummy. It was windy here too today. But it was dry.

    Well I must go and potter a bit so the knee doesn’t seize up that is when it becomes more painful. I have brought a special knee cushion fo the bed at night and If I get it in just the right position it is working quite well at the moment.

    Charley and Lucy's Grandad's funeral went well it was actually rather lovely and really about him if you know what I mean. Charley did very well and managed her eulogy without actually breaking down although you could see she was very close. She speeded up towards the end! I was very proud.

    We were helpful as usual nipping people (who had been in funeral cars) back to get their cars and taking the flowers back.

    Paul and I see the solicitor about our own wills today.

    Joan thank you I am always happy when everyone is well especially my cat as she can't tell me she feels rough :animal_busy: ((()))

    mig I hope you enjoyed your knitting and yes I was actually going to suggest some curry powder...cumin is part of that isn't it? garlic always helps with tasteless stuff. Have you found the chemo has affected your sense of taste?

    Kath that Caribbean soup looks amazing! I have to try that. I love Caribbean food.

    I think everyone did appreciate charley doing a eulogy and I know her Grandad would have been very proud. She also did the thank yous at the wake and a toast to her Grandad. She has certainly grown up.

    I am over the moon that Sleek is doing so well thank you for caring too t4591 . Tosca is I think 21 Sleek a mere baby at 10, but things can go wrong. Miss Sleek's Dad died at 7 so the vet keeps an extra eye on her.

    Barbara I think veggies gravy and something like sausages will do for Niamh she's like Lucy used to be with her veggies so all good :D

    That wind yesterday was awful! I hope your OH was ok putting the fence back up? He is silly not letting you see the Dr with him - men!! It's not even March (March winds) so what was that about?! :roll:

    I did sleep better thank you fit-bit says 'fair'. I sometimes get 'good' sometimes 'poor' never excellent. Paul always gets 'good' or 'excellent' :x

    Carol yes it won't be long now until you are off on your travels again. The knee I see is doing ok if you are careful and with the special pillow too. What is the pillow like may I ask could be useful to know...?

    There was a shooting on one of the streets in LE close to where our son and his family live. :shock: Children in the nearby school were kept indoors until the police had got everything under control. According to the local paper "Derbyshire police said a 49-year-old man has been arrested on suspicion of possessing a firearm following the incident." Scary.

    Vegan Potato Bake
    This hearty vegan potato bake (potatoes au gratin) with pumpkin and lentils is a great fall recipe. It's a wonderful comfort meal and perfect for dinner or lunch. The potato casserole is furthermore gluten-free, and easy to make.

    Ingredients
    2 pounds potatoes peeled and sliced
    3 cups pumpkin chopped into 1-inch cubes
    1 heaping cup dry lentils (I used brown ones)
    2 cups of vegetable broth or water
    1 tbsp vegetable oil divided
    1 large onion diced
    3 cloves of garlic minced
    1 batch of vegan cheese sauce or 7 oz vegan cheese of choice
    2/3 cup vegan cream cheese
    1/2 tbsp onion powder
    1 tsp garlic powder
    1 tsp ground cumin
    1/2 tsp ground nutmeg
    1/2 tsp smoked paprika
    1/4 tsp red pepper flakes
    Sea salt & black pepper to taste
    Fresh herbs to garnish (e.g. parsley or thyme)
    Fried onion rings to garnish (optional)
    US Customary - Metric
    Instructions
    Rinse lentils under running water. I prefer to soak the lentils for about 10-15 minutes in lukewarm water because they are better digested this way (this step is optional). Drain the water afterward.
    Meanwhile, peel and slice potatoes about 0.25 inches thick (0,6 cm). Cook in salted water for 12 minutes or until fork-tender (but not too soft).
    Chop the pumpkin, onion, and garlic.
    Heat 1/2 tbsp oil in a pot, stir in the onion and fry for about 3-4 minutes over medium heat. Add garlic, all spices, the lentils and 2 cups of vegetable broth. Bring to a boil and let simmer for about 15 minutes or until there is no water left in the pot.
    Preheat oven to 390 degrees F (200 degrees C).
    While the lentils cook, you can prepare the vegan cheese sauce (or use store-bought vegan queso instead). Next, add the vegan cream cheese to the vegan cheese sauce and stir with a whisk.
    Toss the pumpkin with the other half tbsp of oil and fry in a pan for 3-5 minutes.
    Add a layer of the cooked potato slices into a greased baking dish.
    Then add the cooked lentil mixture.
    Now pour about half of the vegan cheese sauce/cream cheese mixture on top.
    Add the pumpkin cubes and the remaining potato slices.
    Finally, pour the other half of the vegan cheese sauce/cream cheese mixture on top.
    Cook in the oven for about 25 minutes. Garnish with fresh herbs (e.g. parsley). Enjoy!

    Our wills are all written just got to be typed up properly by the solicitor and signed on Friday afternoon then all done. Filling in paperwork now to pay for our funerals too. Don't want the kids to worry about anything at all when we go :(

    Evening all
    .I met my niece for tea for two..it was a Christmas present for oh and me..but he said take your niece.. we did enjoy it ..but now thanks to Niamh I have a cold and a cough....
    Carol I see you are coming down with a cold...hopefully it will ease off before your gds 18th..hee I rember it well.. :lol: hope you enjoyed your knitting group..so your friend stayed away..never mind...more talk time for you..((()))

    Evening all

    It was foggy here this morning and it lasted until about 11am it was all clear when I went out around 11.30. It wasn’t windy today but we are supposed to have up to 90mph winds on Saturday and Sunday. I know we won’t be here at the weekend we are due back on Monday but the forecast there is the same.

    Will have to be careful when coming out of our hotel as it overlooks the harbour. :? :? hopefully I won’t get blown over or end up flying away like Mary Poppins with me walker :lol::lol:

    Today is our Lillie’s 8th birthday cannot believe she is 8 they really grow up so quickly. Mind you I just cannot believe little Kian is 6 months in 2 days time. Where does time go.

    It is a good job we are not coming back home until Monday as we will not see any of the GGC at the party as it is pub and children are not allowed. so we will probably arrange to see them on the Sunday or Monday morning before we come home. We would not have seen Lillie at the party anyway as she has a Baton twirling competition on Saturday and will not be back until early evening.

    Toni So glad to hear that the funeral went well and that Charley managed to get through her eulogy alright not an easy thing to do.
    I will take a picture of the knee pillow I have If you would like I got it off amazon there are lots of different ones. Mine is called the big ant knee pillow and it is certainly worth the money as far as I am concerned. I am ok about the cold it’s not bad just a bit sniffly and I don’t feel unwell with it so hope that continues like that. I did have a nice knitting group today as I didn’t have to worry about being interrupted when talking to others. Well of course at 21 acting matron Tosca needs her extra sleep. That cake is yummy.

    Kath it’s ok I don’t feel at all guilty about being sarcastic with friend after all 2 days after the start of this flare up I have at the moment with the OA she wanted to go some where else further away from were I would be before meeting her. Said I needed to exercise it and walk more :roll: :roll: so no don’t feel guilty at all.
    :wink::wink: the cold is not too bad feeling ok so hopefully it stays that way.

    Barbara yes typical about the cold but I don’t get to many bad ones so hopefully this one will ok by Saturday just hope Mr T doesn’t get one. I think I eat so much fruit that my vitamin c Intake is probably quite good.
    Yes knitting group was very good today and yes less interruptions for me. Oh dear you have a cold too hope you are better soon.



    Ok it is now time for me go and give the knee a little exercise and do a couple of little jobs before going to bed.

    Carol I hope you have a safe journey down to Margate in the windy weather and yes 'be careful' on the front we don't want to hear you being blown away on the news!!

    A 'no children' pub! Wow that's unusual these days, but you can catch up with all the GGC another day while you're there :)

    Good to hear the cold is under control don't want you ill down there, but Mr T had better not catch it :shock: pack some vicks and some lemsips and extra tissues just incase :?

    I had a feeling you might enjoy knitting more without the interruptions :wink: Yes please post a pic of the pillow I know this sort f thing can be individual, but a recommendation from someone you trust goes along way.

    Also doing Lasting Power of Attorney too incase I don't die just loose me faculties (very likley :lol: ).

    Toni, we have settled our funeral plan (with the Co-op). but no wills - yet. WOOOOO, mushroom omelette. I'm all ovverit mi duck, ta muchly. :lol: .

    Baked chilli arancini balls


    Ingredients
    1 medium red onion (thinly sliced)Baked Arincin balls
    3 cloves garlic (crushed and chopped)
    2 handfuls of spinach
    400g tin of chopped tomatoes
    400g tin of mixed beans (drained and rinsed)
    1 vegetable stock cube
    1 tbsp thyme
    2 tbsp smoked paprika
    2 tbsp brown sugar
    1 tbsp ground coriander
    Fresh chilli (preferred amount to taste, seeded & chopped)
    200g risotto rice
    80g breadcrumbs
    Olive oil
    Salt & pepper to season
    Method
    In a large pan sweat the onion, garlic & thyme with olive oil. Once the onion is soft add the paprika, chilli, coriander, beans and spinach and cook until the spinach has wilted slightly. You may need to add a tablespoon of water to help.
    Add the tomatoes, stock cube & sugar. Fill the empty tomato tin with water and add to the pan.
    Cook for 10 minutes then add the rice. Bring them an to the boil and reduce to simmer until the rice is al dente (a slight bite). Season and allow to cool, the rice should be soft & firm once cooled.
    Shape the cooled rice into balls.
    Put the breadcrumbs into a small bowl and roll your risotto balls in breadcrumbs so that they are evenly coated. The breadcrumbs should stick easily to the rice. Continue to the roll the balls in you hands until they are evenly shaped. Refrigerate for ten minutes.
    Bake for 20 minutes at 180C then remove from the oven. Drizzle olive oil over the balls and turn them over. Return to the oven for a further 20 minutes until the risotto balls are golden brown. Remove and serve with a fresh side salad and a dipping sauce of your choice.

    Hi Joan Tia has had lots and lots of PUPPIES in!! Very large litters of them. She loves her job very much. Just rehomed a dog in the next village the one which tries to beat us in Best Kept Village!

    Well done doing your wills. So long as you sort out for the dogs you have nothing to worry about and each other. Mirror wills is a good idea.

    Kath wow that poem is powerful! Made me all goose-bumpy!

    We have White House Farm taped ready not watched it yet can't wait but choir practise tonight :roll: Anyway Paul is on site overnight.

    We are going with the Co-op too it's ideal really they are everywhere even if we ever move which we Will NOT! :)
