    It's wonderful what 'they' can do isn't it? for cancer - one day I know there will be a cure and no need for all these dreadful treatments. People will be shocked that we had to loose our hair and get so ill to get better. Your bro and others like him are moving things forward for a better future for future generations.

    What great news for your neighbour all the furniture too! I hope she has a little equity for herself for a start for her and the children when she gets rehoused. Will she keep in touch so you know how she's doing? Hang on a mo could she get housing benefit and rent her own place back?????? One of my friends actually did this!

    Tesco are stopping the plastic wrapped multipacks (I hope the actual offer will still exist though. It's the actual food companies too isn't it? Remember that poor turtle with beer can plasticky stiff wrapped round it's neck? Dreadful. Matron did NOT like that at all :(

    Miss Slimkins AKA Sleek is at the back of me playing with my dressing gown belt!!! I think she's been busy this morning over to see Tosca and also to check there's no fighting over by Kath's. Tommy thumb came here last night worried about his Mummy who has an infected impacted wisdom tooth and was in pain.

    She is Kari's DIL so Sleek took him back through his gate (when did he get that :shock: ) and put a sleeping potion on his mummy's pillow so all was well. She's back at the dentist on Monday to be referred to the B'ham Dental hospital for extraction :?

    **** it's a mouse not my dressing gown :shock: Heaven help me!!!

    Joan, Chris and I are waiting for the bin men - one of our worst jobs. :? I only ring dad on Sundays, but if all goes well, he will be off to the Friday club tomorrow to meet all his pals. :D

    Toni, we heard that when the individual tins go through the till, it automatically recognizes it as a multi pack. But you have to make sure you have the correct number of tins that the multi pack has.

    OK, I've been waiting for my laptop to get Windows Updated. It goes through the motions but it always fails - GRRRR Anyway I decided to start a new post rather than edit the old one.

    Toni, last night we heard a cat fight again, but we didn't see anything. :o.A MOUSE! Sleek was playing with a mouse? I can ear as many fried eggs as I can get hold of, so thanks for those.

    Babs, that was quick, but it makes things easier for your neighbour. My laptop was being slow and I couldn't get things sorted. Plus I had a sleepless night so kept snoozing.
    Yes, Aidan will always be missed and to remember him brings us such joy and comfort.

    Anyway, a recipe for Carol's birthday-

    Vegan Carrot cake

    Ingredients

    3 batches flax egg (3 Tbsp flaxseed meal + 7 ½ Tbsp water as original recipe is written)
    1/3 cup melted coconut oil* (or sub other neutral oil)
    1/4 cup maple syrup
    1 scant cup unsweetened applesauce
    1/2 cup organic brown sugar* (or sub coconut sugar)
    1/4 cup cane sugar* (or sub coconut sugar)
    3/4 tsp sea salt
    1 1/2 tsp baking soda
    1 1/2 tsp baking powder
    1 tsp ground cinnamon
    3/4 - 1 cup plain unsweetened almond milk* (or other non-dairy unsweetened milk)
    1 1 /2 cups loosely packed grated carrot
    1 1/2 cups almond flour*
    1 1/2 cups gluten-free flour blend*
    3/4 cup chopped raw walnuts* (if preferred, omit, or sub 1/2 cup (70 g) raisins)
    FROSTINGS optional
    Vegan Cashew Buttercream Frosting (2 Ways)
    Vegan Buttercream Frosting
    Vegan Cream Cheese Frosting
    Coconut Butter or Coconut Yogurt
    Coconut Whipped Cream

    Instructions
    Preheat oven to 350 degrees F (176 C). Butter and flour two 8-inch, 1 9x13-inch, or 3 6-inch round pans with coconut oil or vegan cooking spray and dust with gluten-free flour (adjust number/size of pans if altering batch size). Shake out excess. Set aside.

    Prepare flax eggs in a large mixing bowl. To flax eggs, add oil and maple syrup and whisk to combine. Next, add applesauce, sugars, salt, baking soda, baking powder, and cinnamon and whisk to combine.
    Add lesser amount of almond milk (3/4 cup or 180 ml as original recipe is written // adjust if altering batch size) and stir. Add grated carrot and stir. Then add almond flour and gluten-free flour blend and stir. The batter should be thick but pourable. If too thick, add remaining almond milk 1/4 cup or 60 ml as original recipe is written // adjust if altering batch size). If adding walnuts, add at this time and stir.

    Divide evenly among cake pan(s). Bake for 40-50 minutes or until deep golden brown and a toothpick inserted into the center comes out clean. When you press on the top, it shouldn’t feel too spongy, so don’t be afraid of over-baking! The gluten-free blend just takes a little longer to bake. Also, note that the size of pan you use will vary baking time.
    Remove from oven and let rest in the pans for 15 minutes. Then carefully run a knife along the edges and gently invert onto cooling racks to let cool completely.
    NOTE: This cake needs to cool completely. It benefits from plenty of airflow, and the flavors develop as the cooling process goes on. If short on time, you can speed the cooling by placing the cakes in the refrigerator or freezer until very cool to the touch.
    Once cooled, you can serve as is or frost! For frosting, you have several options! See options above.
    Store leftovers at room temperature, covered, for 2-3 days, in the refrigerator for 3-4 days, or covered well in the freezer for several weeks. However, it's best when eaten fresh.
    Do note that, if using vegan cream cheese or yogurt in the frosting, the cake should be stored in the refrigerator. From the refrigerator, let set out for 10-15 minutes before serving so it warms a bit and becomes more tender. Let thaw completely from the freezer.

    If anyone needs to know flax egg is flax seeds ground and water makes a sticky gunk which can be used in place of egg in cooking :)

    I love the poem it's a bit relevant too ATM as me and Paul are doing our wills and sorting out a prepaid funeral plan so the girls don't need to worry. With all the poetry you've written you have definitely done good t4591

    Sleek was there for the cat fight apparently and broke them up. She is very cross with them both and might well bring Tosca over to have a word - then they'll know about it :x

    It has been one very busy day will fill you in later as we have our monthly meal out with our church tonight and don’t want to be rushing around. Knee is not too bad at the moment.

    Evening all

    Well after lots of messing around with telephone calls from dr I had a face to face appt this morning with the results of the X-ray I hand done on Friday all is ok no infections or any thing nasty I have wear and tear damage worse on the inside of my knee than the outside. So the plan aims physio first which has already been put in for. And if I need stronger pain killers I can just ring her. She wants me to keep as active as poss but also being careful as I told her I have been doing. So now to wait for physio.

    I have had a great birthday even at our church meal. tonight it was celebrated too as when I had my lemon tart dessert it came with a chorus of happy birthday being sung to me and the tart had a cake candle in the middle and happy birthday written around the edge of the plate in chocolate. And instead of wine mr t ordered a bottle of champagne no co-dydramol fo me tonight so hopefully the pain levels will be ok in the morning. I think the best thing today was the telephone call this morning after my drs appt, from my youngest granddaughter whose Usual answer on face book or text messages is I’m fine when you ask her how she is. But I had a 15 min conversation with her this morning after she had wished me happy birthday. She is all very excited at the moment being it is her 18th birthday next weekend on the 8th February.

    Barbara of course there is enough cake as Aidan always used to say as we eat more appears untel we have all had our fill.

    Toni Nooooo not a mouse I would have frozen I hate them with a passion. I think it is their tails :lol:

    Hi Barbara yes I can understand your neighbour might want a fresh start, but you will miss her and she you. 4 miles isn't too far though at least I hope she can keep in touch and she gets a little equity out of the house for her new beginning. How lovely her parents doing that for you :)

    Carol, could your knee damage have been caused by kneeling for prayers? I kneel very low so I can stretch my back. That takes pressure off both my spine, and my knees. But my prayers aren't terribly long. Tried saying them in bed, but I always ended up falling asleep before the Amen. :roll:

    Babs, Chris just read that 2 cases of Coronavirus have been confirmed in the UK, but they're not saying where. They are trying to make a cure for it but I do wonder how many more deaths there'll be before that happens????

    Vegan Chocolate banana bread
    This recipe is a delicious alternative to a classic banana bread, using cocoa and coconut to give it extra depth. Serves 8.

    Ingredients

    1 ¼ cups (165g) self-raising flour
    2/3 cup (79g) cocoa
    1 tsp baking powder
    1 tsp ground vanilla beans
    2 bananas, mashed
    3/4 cup (251g) agave or maple syrup/liquid sweetener of choice
    1/3 cup (76g) melted coconut oil
    1 tsp apple cider vinegar
    Shredded coconut, to garnish
    Method
    Preheat oven to 175 degrees Celsius and line a loaf tin
    In a large bowl, combine flour, cocoa, baking powder and vanilla beans
    In a separate bowl, combine banana, agave, coconut oil and vinegar
    Combine wet and dry ingredients
    Pour batter into prepared loaf tin and top with coconut
    Bake for 30 minutes or until mixture bounces back when pressed

    Kath another good poem..only sad..I dont think I will ever come to terms with things..I always think back to the things I used to do..
    Never mind we are hear to talk to one another..
    I had to laugh at you falling asleep while praying..same here and I feel so guilty.... :( I dont kneel down anymore..this virus is awful..just hope its fades away soon... :shock:

    My nighbour will they a bit of equity..and the money off the furniture..she is training to be a councellor..and just a year to go now..so fingers crossed she will get a good job...I hope Paul can get his physio soon..sometimes it's better to see a private one..then you can see how they are rated..or by word of mouth

    Hi everyone

    I am off to the Community Centre to see Bohemian Rhapsody with Paul and our lovely neighbours later so rushing a little.
    Have been to ex MIL's it's her birthday and so tough with ex FIL still to be laid to rest :(

    Barbara you enjoy Niamh she will make you all smile :) I hope you found the M&S in Warrington at least and got the roast dinner for her :?

    Your neighbour will do just fine and get a really good job that will be one in the eye for her ex and good role model for her kids :)

    Paul went to physio today and was told he needs to exercise as he's wasting his muscles on that knee.

    Kath that is a good poem well written nicely paced, but as Barbara said a bit sad. Thes things that get worse over time are very hard to adjust to aren't they?

    Miss Sleek was very upset. She has had her jabs then a blood test and is having her BP tested as an in-patient on Thursday. She has lost weight so a tiny worry :( She said thank you for her mackerel latte and for Tosca's too. She washed up so Bill didn't have to.

    Good Morning everyone

    Bohemian Rhapsody was fabulous last night I really enjoyed it :) Has anyone else seen it? Even better being in good company with my lovely neighbours. Pom couldn't come as she has her G'daughters with her this weekend.

    Paul and I have every intention of being VERY lazy this weekend with the possible exception of now! I must get dressed and nip to my ex MIL's to drop off a photo and letter Lucy has written to go in the girls' Grandad's coffin which is being sealed this morning.

    But first we must have some breakfast...hmmmm…..what shall we have?

    Joan, I meant Queen, the rock band, not HRH the Queen :D My opinion of the Royal Family isn't very high really. Although I pity the Queen with all she's had to put up with.

    Toni, I hope you find today's poem more cheerful. t is rather apt bearing in mind how cold it is today. How is Sleek today? I've sent her a cod and Plaice casserole with crab stick pate for after. Not too smelly I hope.
    That take away looks yummy.

    Barbara, We were disturbed by fireworks at 11pm last night - how silly, just because we've left Europe.

    Carol, I hope this icy wind isn't causing more pain in your knee. BTW I made several cakes so plenty to go round.

    Joan I totally agree..my neighbour will she her ex ..she has been a teaching assistant but he made her give it up..she will get there..and he will never find happiness..I adore our Queen and really feel for her..she has never let us down.. (((())))
    Kath I have just spotted your banana bread..thankyou..and another good poem..I would never be able to think of 2 never mind all yours.

    Kath the Brian May actor was fabulous!

    Pepper cutlets with potatoes and roasted spinach actually I think the potatoes might be roasted!!! I think anyway. Between us Aidan and I would have got that :D Looks amazing :)

    Yes that poem was lovely I felt the chill, but also the uplifting you feel with new growth - snow-drops :)

    Joan I heard the coronavirus was in York maybe but someone else said Scotland :? Poor Tosca eh? Poor Bill knowing his pusskin feels as sad as he does :(

    Barbara yes Freddie mercury had a truly wonderful voice bless him such a loss to us all. He was a borderline genius In my opinion.

    Yes sealing the coffin feels final doesn't it? Tuesday will be the worst though :( Today ended up busy! Charley appeared with her new GF so we all went out for lunch to Frankie and Benny's. We had a lovely catch-up too was really good. t4591

    Morning everyone - it's proper raining Sleek has come in soaked twice already :roll:

    Watched the last Deadwater Fell last night - was anyone else watching it? It was a bit of a weak ending I thought I was most disappointed. Enjoying White House farm though :)

    The Friend(?)

    She ignored dark circles round my eyes
    as she looked me up and down.
    Didn't see my lack of eyebrows.
    But suddenly she frowned.

    She looked directly at my chest,
    and noticed one side was flat.
    You still having chemotherapy?
    I pointed at my hat.

    So are you better now then?
    Has your cancer gone?
    It's good they found it early,
    you are a lucky one.

    Yes, lucky because of the poison
    that keeps making me feel sick,
    lucky to have constipation
    while chemo makes me seem thick.

    So excuse me if I don't smile
    forgive me for looking so sad,
    and I'm sorry my lack of gratitude
    just makes you feel very bad.

    You call yourself a neighbour,
    but you're just a fair weather friend.
    I know you don't really care,
    so you don't have to pretend.

    Joan, Freddy was rather flamboyant, but he was a musical genius and you know what they say about genius, it's close to madness. I quite like Westlife AND Meatloaf. Another flamboyant singer, big man, big voice, BIG talent. We all have our favourites. t4591

    Aish Baladi - Egyptian Flatbread Recipe
    Ingredients
    2 1/2 cups (10.6 ounces) whole wheat flour
    1/2 tablespoon instant yeast
    1/2 tablespoon salt
    1 1/4 cups warm (about 100 degrees F) water
    Wheat bran for coating (optional)
    Instructions
    In a large bowl, whisk together the flour, yeast, and salt. Add the water, mix with your hand or a dough whisk, and cover the bowl with plastic wrap. Let sit for one hour.
    Set a baking stone on the middle rack of the oven, and preheat the oven to as high as it will go.
    Turn the dough out onto a lightly floured surface, and divide the dough into 8 equal pieces. Cover with oiled plastic wrap.
    Sprinkle two pieces of parchment paper with wheat bran. Working with one piece of dough at a time, roll each into a ball, and then flatten each into a 5 inch round. Sprinkle the top with more wheat bran.
    Cover with tea towels, and let rest for 30 minutes while the oven is heating, until puffy.
    Using a pizza peel or the back of a baking sheet, transfer the parchment sheets to the baking stone, one sheet at a time, and bake for 8 minutes. Transfer to a wire rack to cool briefly, and then serve immediately. You can stuff with any salad vegetables you wish.

    Sleek said to me BP needs taking when we're well rested. She was happy with yours took it to discuss with Tosca who is 'acting-Matron'.

    As for the poem I totally get it. Not many fo. They think you should be grateful you're alive (of course you are!) But they don't understand what you've lost nor how gruelling the treatment is.

    Ah well I pray they never find out.

    Joan I also like Meatloaf and a lot of Westlife songs too. You and Sue have good taste.

    Evening all..its been a nice sunny day here.. so we had a little potter to the flash.has they call it...so many swans and different birds and ducks..think they are enjoying this mild weather..
    Toni it will be hard for you all on Tuesday..we will be thinking off you all..(((())))
    So Charley came with her new GF..you just want them to be happy ...and healthy..of course.. I think they have closed our F&B i used to like going there..
    My brother is very tired..but they get out and about most days...thanks for asking...Tosca is a good stand in matron...very paws on....
    Kath I love the poem about life being under the first.. cant wait for spring..and your other poem ..I suppose people just dont realise what they are saying sometimes..such an ordeal for you to go through..but you got there...(((()))in your own way...
