    Evening all..late again I fell asleep twice today ... :animal_busy: Joan Niamh gave me this bug..there are quite a few people around here with it..I wont go to the doctors like this its not fair.. so will ring them tomorrow if no better...I hope you a.Sue and the doggies are ok..keep away from anyone coughing..(((())))

    Toni, mushrooms are toadstools so excellent. Also 7/10 and a star. Yes the story was based on the time my pet rabbit Goldie escaped and me and dad chased him through the gardens with an old landing net, watched by all the neighbours who watched us through their bedroom windows. :lol: Only Mr Rook was fictitious. How Aidan would have roared with laughter at the idea. Thank you for the fried egs on waffles, yum yum.

    Classic Vegan Cheeseburger
    A delicious healthy plant based take on the classic cheeseburger.

    Prep Time 10 minutes
    Cook Time 10 minutes
    Total Time 20 minutes
    Servings 6
    Ingredients
    400 g black beans
    1 cup breadcrumbs
    1/2 cup fresh parsley
    1/2 tsp fennel seeds
    1/2 tsp chilli powder
    1 tbsp oregano
    1 flax egg
    1 brown onion
    2 cloves garlic
    6 burger buns
    1 beef tomato
    6 leaves little gem lettuce
    3 tbsp olive oil
    Instructions
    Drain and rinse the black beans and add to a food processor along with the breadcrumbs, parsley, chilli powder, oregano, onion and garlic.
    Crush the fennel seeds and add to the blender.
    Make the flax egg by mixing 1 tablespoon of flax egg with 2.5 tablespoons of water. Allow to sit for 5 minutes before adding to the blender with the rest of the ingredients.
    Blend ingredients together for a few minutes untill a smooth consistency is reached.
    Remove the mixture from the blender and shape into 6 round balls on a chopping board. Coat balls with some olive oil and allow to sit for 5 minutes.
    Heat a griddle pan with some olive oil and squash each ball down into thin burger patties ready to transfer to the pan.
    Cook the patties for 6 minutes on 1 side.
    Flip the patty over and add thin slices of vegan cheese on top. Cover with a cloche or the lid of a frying pan and allow to cook for another 6 minutes.
    Once cooked, remove the patties from the pan and build the burgers with cooked patty, slice of beef tomato and some lettuce. Feel free to add a sauce of your choice.

    I need to have a go at those burgers because when we go to the France next time me and Kari want to cook a vegan BBQ for the lady who looks after he house. Her and her husband always treat us to one.

    I felt there was some truth in the Goldie story! Yes Aidan would have loved it Kath. I can totally picture you and your Dad trying to catch Goldie with a net. Rabbits eh :wink:

    Evening all

    Weekend went well the party was good we managed to see all the great grandchildren too over Sunday and Monday. Sunday’s weather was very windy and also raining part of the day but we managed to get to see granddaughters new house and get back to the hotel safely.
    I think when we arrived home yesterday was more stressful than the whole weekend even though we had both developed colds before we went away we had enjoyed the weekend.
    However when we got off the second train at our local station There was no one there with the Pre ordered ramp for me to get off easily so had to do it with mr T help. We then get on the bus and we get to our bus stop to find bus stop closed. So had to go on to the next stop and walk back.
    Last night just before bedtime I developed a very watery eye and my nose was running like a tap. I did sleep which was good but I still have the itchy watery eye and the nose problem. Did go to the chemist and spoke to one of the pharmacist who says it is due to the cold affecting my sinuses. And advised some eye drops for me. So hopefully it sorts itself out soon.

    Kath I too would have agreed with snow frost and mushrooms.

    Sorry this is short but my eye getting a bit sore now and I have to keep closing it. Hopefully it will be a bit better tomorrow

    I rang the doctors this morning to say shall come there.. I hated the idea of spreading these germs..anyhow the doctor rang back and said she would call on her way home..and she did..I never ever send for doctors.. anyhow ABs for this chest and throat..so watch this space... :)
    Joan I will be fine..and dont like bothering the doctors ..but ended up doing..my niece has it now ..but it's her ears and chest..but we are better off than the poor people with the sars.. you look after yourselves (((()))

    We had a little white rabit that used to escape..the neighbours would bring it back..it had the run of 5 gardens..

    Vegan vegetable soup

    DESCRIPTION
    Healthy homemade vegan vegetable soup recipe with all sorts of yummy harvest veggies, including butternut squash and kale. Paleo, vegan, and gluten-free.


    INGREDIENTS
    ¼ cup extra-virgin olive oil
    1 large diced onion
    ½ teaspoon salt
    6 cloves finely chopped garlic
    3 carrots, diced
    1 cup diced celery
    1 tablespoon Herbes de Provence
    ½ cup dry white wine
    6 cups Imagine No-Chicken Broth or reduced-sodium chicken broth
    10 dashes Tabasco sauce, or to taste
    1 4-inch sprig rosemary
    1 small butternut squash, peeled and cubed (about 1 1/2 pounds or 4 ½ cups)
    4 cups finely chopped kale leaves (no stems)
    1 large tomato, diced (about 1 large) peeled and seeded if desired

    INSTRUCTIONS
    Heat oil in a heavy-bottomed soup pot or Dutch oven over medium-high heat. Add onion and salt, and cook, stirring often until the onion is softened and starting to brown, 8 to 10 minutes. Add garlic and cook until fragrant, 30 seconds to 1 minute. Add carrots, celery and Herbes de Provence. Cover and cook, removing lid to stir often until the vegetables are starting to brown and sizzle, 5 to 8 minutes.
    Add wine, increase heat to high, and cook, stirring until the wine is almost completely evaporated, 3 to 5 minutes. Add broth, Tabasco sauce and rosemary and bring to a boil. Add squash, and return to a simmer. Reduce heat to medium-low or to maintain a simmer, and cook until the squash is tender, but not falling apart, about 12 minutes.
    Add kale and tomatoes and stir until the kale is wilted into the soup. Cook until the kale is tender, 4 to 5 minutes longer. Remove rosemary sprig before serving.

    Those ABs should start to kick in very soon Barbara, but gosh you must be poorly to be struggling to stay awake in the day. I went to Pom's on Monday and she has given me her cold!!! As you know I hardly ever get them, but had one over Christmas :cry: So I'm frantically taking vicks first defence :roll:

    Joan it's only right that Lucy gets on with her life and doesn't worry about me that's what I want. The other two have been able to get on with their lives. Kari will be here and my brother too if Lucy needs anything while we're away, but you know I will still worry!!!

    Toni, I got an email but have already forgotten the dates, so I'm glad you've post them here. That breakfast was perfect, ta muchly. A sex goddess, MOI? Are you wearing Sleek's specs again.

    Babs, if you need to sleep, then sleep. The ABs will work better. I'm typing in semi darkness (it's raining) AGAIN! So I keep making trypos. :lol:

    More soup for Barbara I think.

    VEGAN FRENCH ONION SOUP (onions are good for colds)
    Slowly caramelising the onions gives this rich vegan French onion soup loads of depth of flavour, with just a hint of sweetness.


    Ingredients
    5 tbsp olive oil
    10 medium onions peeled and thinly sliced
    2 tsp sugar
    10 cloves garlic (large, fat ones) peeled and thinly sliced
    250 ml white wine (alcohol-free if necessary)
    1.5 litres vegetable broth
    1 tbsp cornflour (aka cornstarch) + 2 tbsp water
    freshly ground black pepper and sea salt to taste
    Metric - US Customary
    Instructions
    In a large heavy-bottomed pan, gently fry the onions for 5 mins or so over a medium heat until they begin to go soft.
    Stir in the sugar, put the lid on the pan, turn down the heat a little, and let the onions caramelise for about 35 minutes.
    Add the garlic, stir, replace the lid, and continue to cook for another 10 minutes.
    Stir in the wine and the hot stock.
    Make a thin paste by mixing the tapioca flour with 2 tbsp water, and add to the soup, stirring all the time to ensure no lumps form.
    Keep stirring until the soup has thickened slightly, then grind in some pepper, and add a dash of salt. Taste and season more if desired.
    Replace the lid, and allow to simmer for another 25 minutes.
    Serve immediately. This French onion soup can be kept in the fridge for around 3 days, or in the freezer for up to 3 months.

    I contacted Bill just to check he is doing ok. He is although he is understandably still struggling and sees the DR tomorrow.

    Tosca is going to have o go to the vets because she needs de-lugging and her nails clipped which was always a two-Daddy job.

    She is still shrieking at night too bless her. :animal_busy:

    Willow
    Kath

    So fair and graceful, the Willow Tree,
    its beauty and gentleness, all can see.
    Its slender boughs trail by the waterside

    Tofu curry
    Serves four, easily freezable.

    Ingredients
    1/2 broccoli head (or 1/4 broccoli, 1/4 cauliflower)
    1 onion
    1 red pepper
    250g firm tofu
    1 tin coconut milk
    3 tsp tomato puree
    1 stock cube in 1/2 cup of water
    2 tsp tumeric and/or 2 tsp curry powder
    Method
    Press the Tofu for at least 15 minutes, cut into cubes and fry until brown and crisp on all sides.
    Cut and fry the onion until browning in a saucepan.
    Add the tumeric and curry powder to the saucepan and fry for a further 3 minutes.
    Cut and add all other vegetables. (Add anything else here that you want to use)
    Add the coconut milk, tomato puree and stock in water.
    Add the tofu and cook until ready till each (at least until all vegetables are cooked).

    Tofu curry! Sounds very tasty to me. I'm going to take some to try now and if I like it might cook a load up to freeze :) Thank you very much. I know you love your eggs so today's breakfast was geared towards you having a tough day.

    I think Barbara's bro was having a rest from chemo but I would be interested how he's doing too xxx

    Sorry, me again. :roll:
    I forgot to mention that dad had his catheter removed the other day but was in so much pain the nurse ad to put it back in again. Anita and the nurse explained that his muscles in his bladder WOULD hurt, because they haven't been used for so long. He couldn't cope with it though but if he doesn't try to put up with the pain, he will NEVER be free of the catheter. He says the pain prevents him from emptying his bowels (apologies) He thinks Anita will "be alright" with the cancer and still be able to run round after him. NO DAD! I feel so cross with him as he's a typically selfish old man and he needs shaking up. Grrr rant over.

    Yes Toni I do have a granddaughter called Willow, the only girl among 6 boys - well men really. Youngest is 18 - eldest is 32. :shock: Now I feel ancient.
