    I cannot believe how well your bro is doing :) I think this new drug will help many people in the future as well as it has him. He has already done much better than your older brother did hasn't he?

    Yes cats are very clever and of course they love and miss us (that's the only thing I hate about holidays :cry: ) poor Tosca. Poor Bill too I bet he just doesn't know what to do with her on his own :cry: Well the vet will no doubt have some ideas.

    Your head must be all over the place so don't you worry cos we understand.
    The wind is blowing hard here now and its pouring downed its going to get worse.Next wednesday I have a appointment at ENT my left eardrum is not working properly feels blocked all the time but there's no wax there, could be the RA that's damaged it or unlikely my haematologist has said that the chemo has done it.
    So we are going read only for a while,im feeling quite excited about it all.

    It's very windy out there and noisy but not as bad as I feared...so far!

    I am quite exited about our 'new' updated forum too. We'll cope just make sue we are all here when it re-opens!

    Oh dear me what a night! About 8 last night we had a power cut (luckily I had just lit the fire so could 'see').

    Phone emergency number - 105 if anyone doesn't know also works from mobiles - and was told it would be looked into.

    It seems naughty Dennis took down a power cable and Western power rang me back with an update! Impressive service.

    My neighbour who uses a wheelchair was ok already upstairs so didn't need to use the stairlift. The one next door whose husband recently died did not have a power cut I went round to check on her and she was fine. 37 properties did we were one.

    All is well today.

    Very saddened to hear of the death of Caroline Flack yesterday. The ins and outs don't matter other than to say she must have been so desperate as she took her own life. Tosca and Sleek are very very upset as they are huge Love Island fans. They have black paw-bands on :( RIP Caroline and thoughts with her family and partner.

    It's still raining here I hope everyone is ok and no damage done? I bet Barbara's fence is down again and hope no more trees at Carol's :?

    Shall we have a warming breakfast today? Some porridge?

    Broccoli Quinoa Casserole
    Healthy broccoli quinoa casserole which is vegan, gluten-free, grain-free and easy to make. This creamy cheesy broccoli bake is perfect for dinner, especially on weekends.

    Ingredients
    Quinoa
    1 cup (170 g) quinoa
    2 cups (480 ml) salted water or vegetable broth
    1 cup (240 ml) dairy-free milk
    1 15 oz can chickpeas rinsed and drained
    Spice mix: 1 tsp onion powder, 1 tsp ground oregano, 3/4 tsp paprika, 1/2 tsp salt, pepper to taste
    Broccoli
    1 medium-sized head of broccoli
    1 tbsp oil
    A pinch of salt
    Homemade "breadcrumbs":
    3 tbsp oats (gluten-free if needed)
    1 tbsp nutritional yeast flakes
    1/2 teaspoon onion powder, 1/2 tsp paprika, a pinch of turmeric, 1 tsp soy sauce (gluten-free if needed), a pinch of smoked paprika, salt, and pepper to taste
    1 tbsp oil
    Cheese
    1 batch vegan cheese sauce or 7 oz (200 g) of store-bought cheese
    Instructions
    Prepare quinoa
    Bring a pot with 2 cups of salt water or vegetable broth to a boil and preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
    Rinse quinoa thoroughly under running water and put it into the water/broth as soon as it boils. Simmer for 15-20 minutes until no water is left and the quinoa is cooked.
    Prepare broccoli
    Cut the broccoli into florets, spread on a baking tray (lined with parchment paper) and drizzle with 1 tablespoon oil and a little salt. Toss with your hands and bake the broccoli in the oven for about 15 minutes. Meanwhile, prepare the vegan cheese sauce according to this recipe (CLICK). Skip this step if you use store-bought cheese).
    "Breadcrumbs"
    Put all ingredients for the "breadcrumbs" (except the oil) into a small bowl and stir with a spoon.
    Heat the oil in a saucepan over medium heat, add "breadcrumbs" and fry on low/medium heat for about 30-60 seconds.
    Assemble Casserole
    Add 1 cup of dairy-free milk, the spice mixture, the chickpeas and half of the cheese sauce (or store-bought cheese) to the quinoa and stir.
    Transfer the quinoa mixture into a lightly greased casserole dish, add the broccoli florets and spread the rest of the cheese on top. Sprinkle with the "breadcrumbs".
    Reduce the heat of the oven to 350 degrees Fahrenheit (180 degrees Celsius) and bake the casserole for about 15-20 minutes. Enjoy!

    Everyone here is well thank you. Tia has a barking mad lab cross puppy at hers who needs to be taught to behave before he can be homed. My poor neighbour so recently widowed if she had power off might have been frightened I was worried about her.

    Kath I am scared of those meany little people :shock: not like Aidan's nymphs at all :? :shock: They seem rather evil :shock: Hopefully Sleek and Tosca would protect us all.

    I had the latest Inspire magazine today and it has vegan recipes in it, but it's not online yet so I can't use them. So here's one I found earlier. :lol:

    CHICKPEA FRITTATA WITH ROASTED RED PEPPER SAUCE
    yield: 10 PIECES prep time: 15 cook time: 45 total time: 1 HOUR
    PRINT RECIPE


    INGREDIENTS:
    For the Frittata

    1/4 cup + 2 tablespoons extra virgin olive oil, divided
    3 cups finely chopped kale (approx. 1 small bunch)
    1/2 cup finely chopped carrots (approx. 2 large carrots)
    1/2 cup chopped green onions (approx. 1 small bunch)
    3 garlic cloves, minced
    1 teaspoon salt
    1/4 teaspoon pepper
    2 cups garbanzo bean flour (I love Bob’s Red Mill)
    2 and 1/2 cups water
    For the Roasted Red Pepper Sauce

    12 ounces roasted red peppers, drained
    1 tablespoon dried oregano
    2 tablespoons extra virgin olive oil
    1 garlic clove

    DIRECTIONS:
    Preheat the oven to 400°F. In a 10-inch skillet, warm two tablespoons olive oil over medium heat. Add the chopped carrot and green onion then cook for 2 minutes. Add the garlic and the kale and continue to cook for another 5-6 minutes, until the kale begins to wilt. Allow to sit over medium heat while you prepare the batter.
    In a large bowl, combine 2 cups garbanzo bean flour, 1 teaspoon salt, 1/4 teaspoon pepper, 2 and 1/2 cups water, and the remaining 1/4 cup olive oil then whisk until smooth.
    Pour the mixture into the skillet and allow to cook for 5-7 minutes, until the edges begin to firm. Transfer the skillet to the oven and cook for 25-30 minutes, or until the top appears firm. Set the oven to broil and cook for 5 more minutes, until light golden brown on top. Remove from oven and allow to cool for at least 10 minutes. It’s important to let it cool for proper texture. If it seems too wet inside, let it cool all the way then reheat it in the oven or in the microwave (using a microwave safe dish) when ready to eat.
    Meanwhile make the red pepper sauce by combining the roasted red peppers, 1 tablespoon dried oregano, 1/4 cup olive oil and 1 garlic clove in a food processor or a blender. Blend until smooth.
    Serve chickpea frittata warm with pepper sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.

    Toni yes all is well with us mr t got a bit harassed today trying to sort out the insurance for our cruise in June he spent an hour with one company questions questions questions many times put on hold he gave up in the end but found another company this afternoon so now he is happy. He is not very good on the phone at the best of times because of his hearing problem. See you on the other side, quite looking forward to seeing the new forum. Naughty Dennis bringing down the power lines it’s amazing how much havoc these things cause.

    Joan yes I am ok just been busy with a few things and the hours have just gone.

    Kath I may not have posted a lot recently but I have been following what has been going on and I love all the poems and recipes you post for us.

    I have not seen my friend since last Wednesday as she called me on Friday morning letting me know she had a cold. I must admit I rather enjoyed my Friday afternoon coffee all on my own. Oh I am so naughty he he. Weather has been windy and rainy here but no where near as bad as many others. Sunday was really horrible weather all day rain and I said I would not go to church if the weather was bad but mr t said if l got my usual Mini cab to get to church he would pay for one home so I did go.

    Good to see you are ok and hear from you before we all go AWOL!!

    Glad Mr T finally got the cruise booked. I don't blame him dealing with some companies is really frustrating - added to that a hearing problem :(

    How kind of him offering to pay for the mini cab that is sweet t4591

    Why not enjoy a break from your friend - no doubt her cold was FAR (yeah right!) worse than yours and you'll hear about it next time you meet up but enjoy the peace now!!
