    Mike water is good any kind of water feature is really useful for biodiversity as they say flies water skimmers etc. You are handy aren't you? Vixen is a good girl not trying to catch Fred and Ginger. Love the pusskin with the lamp 🙂

    Sleek likes fish food too really likes it I think she'd eat the whole tub!

    I am so pleased Holly is taking the girls away to Skeggy they will love it. Making memories is what it's all about. The tickets should enable them to have a really good day out. They aren't cheap! I remember my single parent days with the girls before Paul. Money is tight and I was working.

    Those biccies look lovely, but I I made them i doubt they'd look quite that good😳

    Barbara oh dear me 25 degrees?! It was pretty dismal here although today is starting off well. The pool could have stayed up that's you in trouble😯

    We went to Coventry in search of a water feature that's a bit different from the usual ones yesterday morning then Tia came over (Father's day ) and actually stayed for dinner. It was LOVELY!!!! No Mikey he was at work bless him.

    If those scary looking bugs are ladybird babies then keep them we love them 🤗

    My bro is going to help me attach the luggage rack properly on Penelope.

    Joan, we won’t find out until they turn up. A bit like my district nurse who turned up today in spite of the fact that she wasn’t due until next week. Oh well, it’s done now.

    Barbara, yes Hennifer is named after Jennifer Anniston - I’m not impressed. I hope he lets Cam name one too. He will probably pick a footballers name.

    Toni, I hope the latest blog will be ready this weekend, but now Emily is at school every day, who knows? I can’t wait to see the girls.They are good old brown eggs and she should start getting eggs from them in a couple of weeks when they have settled down.

    I’m on my iPad again, but hopefully things should be back to normal tomorrow.

    I have never had a trucker's breakfast, but think it might be like a greasy cooked breakfast?

    We did find a water feature but it's in the box until the men put it in so I ca't show you....Paul too a pic of the display model so i need to get a copy of that! Sleek will drink out of it all the time.

    It was cold here I popped the heating on for an hour yesterday, but today the sun is back out🙂

    Kath I am sure Cam will choose a hen's name too. He won't be left out....but aren't there 3 of them? I bet they are all excited to get the first eggs. Were they rescue hens I can't remember?

    Looking forward to the blog I'm sure she will get round to it when she can. She writes well like her Mum😉

    On your IPad again? That's a bit frustrating isn't it? Hopefully normal service will be resumed soon?

    My normal Tuesday has been mucked up today. My Home Help is not coming until 2pm as she has blood tests this morning and I have to be at the Surgery for 1.30pm for their third try at getting blood out of me! So we will miss out on our usual brew and natter. I have been keeping track of my blood pressures over the past week as that is something else the medics are doing today and it is noticeable that, although my pressures are sky high despite being on statins, they are noticeably lower on the days that my Home Help comes or I have a visitor!

    Joan I hope it's not too long for my neighbour but wonder whether it's because he has a pacemaker and they might want to do further tests🤨His wife has decided that either one of their sons can stay or respite she doesn't want overnight carers. ((())) xxx

    Mike best of luck for your bloods and BP check today I hope they get your blood easily this time 🤞 if they fail get them to send you to phlebotomy they know their stuff! Interesting that company lowers your BP I bet that is true of all of us. How much hidden harm has this pandemic caused eh?🙄

    Morning from Mrs T on her laptop. The reason I was on my iPad yesterday is because the District Nurse arrived unexpectedly and put Chris in a strop! So by the time he'd calmed down it was too late to put the laptops on.

    Joan, spot on as usual. That's exactly what will happen and you know who will be in another strop. I suspect his diabetes is rather active but he won't have it checked. I see Summer from Corrie has Type 1 Diabetes. Chris is type 2.

    Barbara, I've been freezing since Saturday. We did put our heating on to get a bit warm. I'm warm at the moment in my vest, T-shirt- jumper and fleece and the sun is shining through the living room window. But when it moves off the window we'll put the heating on for a while.

    Toni, Emily originally intended to get rescue hens but they are so popular, there weren't any. So she bought Hennifer and her sisters from a breeder. I'm sure there will be a blog (hen blog?) this weekend. Yes there are 3 but grandma Kath won't be asked to name one.

    Curried Hummus Flatbread

    with Roasted Cauliflower & Olive Date Relish



    MAIN INGREDIENTS

    1. 4 oz cauliflower florets
    2. 1 lemon
    3. 1 can garbanzo beans
    4. 1 tbsp tahini
    5. 1 tsp curry powder
    6. 2 pieces naan
    7. Fresh parsley
    8. 0.75 oz Castelvetrano olives
    9. 3 Medjool dates
    10. 3 tbsp Kite Hill vegan ricotta
    11. 1 oz baby arugula
    12. 2 tbsp + 2 tsp olive oil*
    13. Salt and pepper*
    14. *Not included
    15. **Allergens: Wheat, Tree Nuts

    TOOLS

    • Food processor
    • Baking sheet

    INSTRUCTIONS

    1 Roast the cauliflower

    Preheat the oven to 425°F. Cut the cauliflower into even smaller florets. Transfer to a baking sheet and toss with 1 tsp olive oil and a pinch of salt and pepper. Roast the cauliflower until tender and browned in some places, about 15 to 18 minutes.

    2 Make the hummus

    Halve the lemon. Drain and rinse the garbanzo beans. Measure out ¾ cup of garbanzos (reserving the remainder for the Fabcakes recipe). Add to the food processor along with the tahini, curry powder, and juice from half the lemon. With the motor running, slowly add 2 tbsp olive oil and blend until smooth, scraping down the sides as necessary with a spatula. Season hummus with ⅛ tsp salt.

    3 Naan time

    Place the naan in the oven directly on the rack. Bake until lightly crisp, about 7 to 9 minutes.

    4 Prepare the relish

    Finely chop the parsley leaves, Castelvetrano olives, and dates. Add to a small bowl and stir relish to combine.

    5 Assemble the flatbread

    When the naan is toasted, spread each piece with half of the curried hummus. Layer on the olive date relish, roasted cauliflower, and dollop with bits of the Kite Hill ricotta. Pop the flatbreads in the oven to warm, about 3 minutes.

    6 Finishing touches

    Remove the flatbreads from the oven and top with arugula. Sprinkle with salt and drizzle with remaining lemon juice and 1 tsp olive oil. Bon appetit!

    Kath I am sort of with Chris I hate unsolicited callers, (unless it's long lost friends), they just catch you out don't they? If his diabetes isn't right he may well feel rattier than normal too.

    Now you have a dilemma - you actually want the scaffolding up and the roof fixed! can you cope with a stroppy Chris again?

    Sleek is going to take some of his blood while he's asleep and let you know what his sugar is doing....🤫

    I am so glad to hear that all the rescue hens are sorted and on the up-side Hennifer and her sisters will lay quicker than rescues who can take a bit of recovering and settling.

    Ah yes Paul hasn't sent me the pic yet I will try to get it off him before he goes to work this morning.

    Today I am going to start to load up the motorhome ready for our trip this weekend. I paid the balance at the caravan site yesterday so feeling almost ready to go!

    It is very odd they are sending my neighbour so quickly he is really confused, but i think it's because Mrs is so very poorly they need him fit to look after her. I know he isn't going private he is a staunch socialist. They never X ray before physio these days probably because most aches and pains are soft tissue and treatable by exercise. Must make their job 100X harder🙄 Poor Mr B and you being postponed a bit too.

    Poor Niamh. If she was a fully vaccinated adult she might not have had to self isolate at all. Or have I misunderstood that new rule?

    Mike how did it go? Was it 3rd time lucky? and did you actually see your home help at all?

    Third time lucky indeed! The Nurse was the same one as last time and despite the failings then she still insisted on trying to get blood out of my arms a few times using a butterfly instead of an ordinary needle, having prodded around for a while she did resort to the back of my hand again and this time, after more wiggling around, managed to get about a quarter of a vial out which she thinks will be enough for the tests. When I got home Sue my Home Help was still there and immediately downed tools for a brew and a natter which was greatly appreciated.

    It's back lit so he can see the time in the dark. I bought it from Smile Amazon. but I can't remember which charity I chose. 😯

    Amazon are making things so difficult for those who don't use Prime, which we don't.

    lemony basil creamy vegan pasta with broccoli & sundried tomatoes

    DESCRIPTION

    Creamy vegan pasta made in 25 minutes or less!!! Perfectly al dente vegan pasta tossed with sautéed bell pepper, broccoli, sun-dried tomatoes, & an easy homemade lemony basil creamy vegan pasta sauce made from cashews. The easiest healthy pasta recipe – totally dairy-free, vegan & filled with veggies!

    INGREDIENTS

    • 8 ounces whole wheat pasta (see Recipe Notes)
    • 3 cups broccoli florets
    • 2 tablespoons olive oil
    • 1 medium yellow onion, diced
    • 1 medium red bell pepper, diced
    • 3 ounces sun-dried tomatoes, sliced (see Recipe Notes)
    • 4 ounces arugula (a few handfuls)
    • Kosher salt and ground black pepper

    lemon basil cashew cream sauce:

    • 1 cup roasted, unsalted cashews
    • 3 cloves garlic
    • ½ lemon, juiced
    • 1 cup packed fresh basil
    • 1 cup water
    • ½ teaspoon Kosher salt

    INSTRUCTIONS

    1. Boil the pasta: Bring a large pot of water to a boil. Once boiling, generously salt the water. Add in the pasta and cook to al dente, according to package directions. About 2 minutes before the pasta is al dente, add the broccoli florets to the pot to cook with the pasta as the pasta finishes cooking. Reserve 1 cup of the starchy pasta water. Drain the pasta and set aside.
    2. Make the lemon basil cashew cream sauce: Add all listed ingredients to a high-speed blender. Blend until smooth and creamy. Set aside, or store in an airtight container in the refrigerator for up to 1 week.
    3. Cook the veggies: Add the olive oil to a large skillet over medium heat. Once hot, add in the onion and bell pepper. Season with 1 teaspoon Kosher salt and ½ teaspoon ground black pepper. Cook, stirring occasionally, until the veggies soften slightly, 3-4 minutes. Once softened, add the sun-dried tomatoes and arugula to the skillet. Cook, stirring occasionally, until the sun-dried tomatoes soften and the arugula wilts slightly, 1-2 minutes.
    4. Finish the creamy vegan pasta: Once the veggies are ready, add the drained pasta & broccoli to the skillet. Pour the lemon basil cashew cream sauce over top. Toss to combine, adding a little of the reserved starchy pasta water as you go to reach your desired consistency. Taste and season additionally with salt or a squeeze of fresh lemon juice, as desired. Serve immediately. Enjoy!


    NOTES

    • Pasta: Obviously, to make this pasta vegan, use your favorite vegan pasta. I love DeLallo’s whole wheat pastas – they’re totally vegan-friendly. While I prefer a textured short noodle for this lemony basil creamy vegan pasta recipe (it clings to the sauce really nicely – pictured here is rigatoni), you can use whatever shape you like best.
    • Sun-dried tomatoes: I find 3 ounce bags of sliced sun-dried tomatoes at Trader Joe’s & they work really well for this recipe. You’ll want to make sure to use dried sun-dried tomatoes for this recipe, not the kind that comes packed in oil, to ensure your creamy vegan pasta doesn’t get super oily.

The Surgery phoned yesterday to say that they were concerned about my BP results, in fact they are so concerned that they have booked a GP telephone appointment for me .................sometime between midday and 6pm NEXT Tuesday!

    I saw a piece on TV about white cabbage and Coleslaw being good for our digestive systems, and as you know I have problems with mine. So I found this recipe you might like to try.


    The Best Vegan Coleslaw (Quick & Easy)

    Description

    A quick & easy vegan coleslaw recipe just like what we remember digging into growing up. It’s creamy and crunchy with the perfect amount of bite, plus it only takes 10 minutes to make!

    Ingredients

    • 3 cups chopped cabbage
    • 2 green onions, chopped
    • 2 medium carrots, shredded
    • 1/4 cup chopped parsley
    • Salt and pepper, to taste

    Dressing

    • 1/2 cup vegan mayonnaise (we use Follow Your Heart)
    • 1 tablespoon maple syrup
    • 1 teaspoon celery seed
    • 1 tablespoons apple cider vinegar plus more to taste
    • 1/2 tablespoon Dijon mustard

    Instructions

    1. In a large bowl, whisk together all of the ingredients for the dressing until uniform. Add in the remaining ingredients and mix together until well combined and uniform. Season with salt and pepper to taste.
    2. Place the coleslaw into the refrigerator for at least 3 hours to set. Enjoy!

    Mike, I'm glad they managed to get some blood, let's hope they sort your blood pressure out. I take 3 types of BP tablets, Felodipine, Doxasosin and Ramipril.

    Thanks. I am on Simvastatin for my BP. Had a call from the surgery today, they want to repeat the blood tests next Tuesday week!! At least this time they have booked me in with the Senior Nurse Practitioner.

    Mike gosh yes they do need to see you urgently don't they?🙄 Still my ex MIL has an urgent one for the 7th so I think it's a countrywide issue. Honestly what is going on with GP surgeries??? My parents both took simvastatin. Don't forget to tell them how company makes a difference to your BP I think it's really interesting that fact.

    Joan the poor carers - how long do they think they will have to work to rule before things get sorted out for them? They must be heartily sick of it all😕 All ready to set off probably after lunch let Paul go into work this morning if it makes him happy. Love to you and Sue ((()))

    Kath I LOVE coleslaw and make a 'pink' coleslaw? Tesco sell it it's coleslaw but in a sort of vinaigrette dressing ? Now I can have it like 'proper' coleslaw Thank you so much.
