    Vegan jambalaya

    By Sara Buenfeld

    from BBC Goodfood

Enjoy a delicious plant-based dinner with this vegan rice and bean one-pot. It's packed with all five of your 5-a-day, as well as iron, vitamin C and fibre

    Ingredients

    • 2 tbsp olive oil
    • 1 large onion (180g), finely chopped
    • 4 celery sticks , finely chopped
    • 1 yellow pepper , chopped
    • 2 tsp smoked paprika
    • ½ tsp chilli flakes
    • ½ tsp dried oregano
    • 115g brown basmati rice
    • 400g can chopped tomatoes
    • 2 garlic cloves , finely grated
    • 400g butter beans , drained and rinsed
    • 2 tsp vegetable bouillon powder
    • large handful of parsley , chopped

    Method

    • STEP 1
    • Heat the oil in a large pan set over a high heat and fry the onion, celery and pepper, stirring occasionally, for 5 mins until starting to soften and colour.
    • STEP 2
    • Stir in the spices and rice, then tip in the tomatoes and a can of water. Stir in the garlic, beans and bouillon. Bring to a simmer, then cover and cook for 25 mins until the rice is tender and has absorbed most of the liquid. Keep an eye on the pan towards the end of the cooking time to make sure it doesn’t boil dry – if it starts to catch, add a little more water. Stir in the parsley and serve hot.

Hi Everybody by which I mean Joan kitty toady Ar , Barbara and of course Toni how are you all today? Hi again Joan how are you and Sue doing today? weather looks a bit windy and cold where I am but I haven’t been out of the house today. Hi again Toni thanks for liking my poem and The picture of the methotrexate cake, lol, my stomach was really aching yesterday I didn’t have any cheese at all that day though I had a chicken sandwich I bought from Costa but I’m not really sure if that caused it or not also I did not eat the whole thing though anyway what’s happened is happened I’m not feeling too bad today thanks but I haven’t really eaten that much hopefully though over the worst and the stomach problem is over until next week of course as we all know 🤢. You’ve got a point there I think that bill when he does feed LA, definitely takes the easy option which isn’t really good at all is it seeing as he is his dad? My sister though it’s really good at giving LA and BR fresh fruit to eat every day and she cooks fresh food whenever she can, even though she’s an expert at gobbling up The chocolate in her skinny way, I’m so glad that she’s doing the best she can with her sons nutrition wise, I need to eat a lot more fruit myself but like with you certain things upset my stomach so it’s a complicated thing really isn’t it? Also living in a family environment is good but it can also be bad my dad has a tendency of hiding the apples right on the lowest shelf of the fridge where I can’t really reach most of the time because it hurts my back so much one his typical “nice activities “, lol. I Think you’re right about LLF thanks there can be nothing wrong with sanitising hands and using hand gel in fact most normal people and responsible people, I mean She lives in a community she goes to work she has family so if she doesn’t care about her own health that’s up to her but if she also doesn’t care about infecting other people I think that’s not good because to put it extremely mildly one oh well never mind I’m being Zen as I can be, lol, also I’m Not being rude or anything but she’s in her 60s and we all have to take care of our health especially as we are growing older anyway if she wants to eat her body weight in cream cakes and pretend she’s 25 that’s up to her but I’m not following her lack of hygiene etc whatever she decides to say about me or imply 😄. Also her doctor said she needs to lose three stone and I know nobody has ever lost three stone by eating cream cakes but I will be a silent as possible as silent as an avocado - eater 🥑 can be, lol. I understand about the psoriasis it’s it’s difficult to pinpoint exactly what triggers it I think at times mine definitely gets worse though in the summer I’m not sure which months yet but definitely hot weather disagrees with my skin plus of course hayfever, if you don’t Mind me asking Toni, how long ago did you get your diagnosis? When the doctor told me I had arthritis it was between 2 to 3 years now possibly 2 and a 1/2 years so basically I haven’t really had that much experience compare to a lot of people anyway Of being an arthritic patient so I’m just gradually finding out things about it and ways to make things a little bit easier sorry hope you don’t mind me asking that’s probably also why it took me a little while to get the folic acid routine firmly in my head because it’s not my only health problem and basically I’ve not been doing this for that long you know so anyway just thought I’d mention that, okay bye for now take care. Will post properly soon just popping on some more photos....

Cut holes slightly smaller than two of the pots in some liner (P used to use pond liner but Paul has some weed control fabric so I used that) large enough to fill your planter

Put in planter with pots poking through

  • frogmorton

Then fill the pots with soil/compost this is your wick then fill the whole liner/planter with soil/compost

Then trim your liner to size and staple it to the sides( not actually necessary) before filling with soil before poking your larger tube down one corner between the liner and planter

    Hello all..

..I can haz Green Village cake? All gone I expect 😉

Just a VERY quick one to post the pics I promised and to thank frog for Toni's Tutorial, which is brilliant!, I expected a hasty snap or two but this is marvellous stuff, I am absolutely coming back to it to give it proper attention 😍 but thank you thank you. Do hope the Green Village Sat. went well, joking aside.

Quite sunny but COLD. If it stays bright tomorrow I will take pics for Bulbwatch as it must be a month up since I last did.

Joan well done for keeping your dentist appointments you are braver than me, good to hear it's all being done safely, I'm sure it is at mine too I'm just v nervous - I would have to get transport so that's another worry (but I will sort it out sometime, thanks again frog).

Gool Peran Lowen to you too Mike, I wish I'd had more of a chance to explore my (half) Cornish roots - we never lived there after my parents left apart from a couple of years in Plymouth, after that, it was just a matter of visits but when still a child; I would have loved to go back later but, old story, nobbled by ill health. I do have lots of anecdotal history & influence, & I know my Menheniot from my Merrymeet, just don't have the connection I would like unfortunately.

Anyway here are pics of my dear cat (no longer with us sadly), being a soft old thing here; fondly known as 'rabbit', and was an absolute sweetheart - sorry they are not better/larger, they are from pre-better camera days but can be clicked up a bit on the imgur page

    Love to Barbara 😘

    and to Kitty xx

..and bosh, will say hello properly next time :) xx

    Morning everyone 😊

Mike I hope you are doing ok Just today and tonight to get through now. I hope I am not giving you too much information just trying to help you be prepared. What time are you at haematology tomorrow? We will all be there with you. Expect a fair bit of sitting around of course and more blood letting. ((())) xxx

Kitty me duck how the diddly are you? Any joy looking into care companies? not much will happen of course over the weekend, but hopefully sooner rather than later. Any delays have a word with Hannah she will probably be quite successful at chasing the other agencies up.

You've done it now I am going to be singing the Carpenters all day. 'Jambalaya(on the Bayou)'!!! Seriously though thank you the recipe looks scrumptious.

Hope today is a good one for you.

Morning Joan I hope the self watering planter works - time will tell. All being well it will P used to make them all the time around the village it saves watering and saves water too so fingers crossed. What will we do with no 'Midwife' to watch tonight 😕 woe after a week with barely any Corrie too....love to you both ((())) xxx

Barbara I have news! My lovely neighbour (him) has a date for his hip op THIS MONTH!! She is going into respite (her choice) so the secretary is going to do her best to make sure if anyone gets cancelled it isn't him due to the knock on effect on her.🤞

Hi Reshmi! I am glad your stomach is settling I had an off day yesterday so hoping for a better one today. I ended up having a greggs vegan sausage roll😮Oh but it was NICE! don't tell anyone....🤫

Your sister is good feeding the boys properly even if she herself lives on chocolate. Do you remember that programme about one skinny one overweight person who swapped diets for weeks to gain or lose weight? Very often the underweight one ate loads of chocolate, but when you look at what they do they were often skipping actual meals.

LLF should think about other people when it comes to hygiene full stop now we all know about it so much better after COVID! So many less people got flu last year didn't they and the year before because we were all wearing masks and sanitising! She can imply whatever she likes you are doing the right thing

    zen her out

Hot weather is absolutely going to make your skin dry and prickly but I'm sure allergy season plays it's part well for me anyway in flares. This whole thing kicked off for me about 14 years ago so suppose I am a bit of an old hand really. My back started even longer ago. You are doing really well it only being 2 or 3 years ago Reshmi getting informed and tuning into your body and what it needs.((())) xxx

Toady thank you I forgot to say you must bodge holes in your downward facing pots (downward facing dog????) not the ones which form the base, but the wicks to help water absorb into the soil.

'Rabbit' looked adorable❤️ such a sweet smiley face. You never stop missing them do you sadly 😕

The Green village cake did go down well. It was perfectly acceptable if a tiny bit stodgy but it did have oil in it's recipe so understandable will post a pic. I just wish they were consistent and not so hit and miss. Ah well.

We watched a plastic video - well a video about the harm plastic does which provoked a lot of chat so that was good and had a cuppa some cake and a natter.

I finished my planter with headphones on - next door was hosting yet another party - for her Grandaughter this time (9 I'd say). Loads of kids bouncing on the trampoline waving to me the mad woman in overalls wearing a woolly hat and headphones😁 Please do update 'bulbwatch' when you can. I have loads of snowdrops but no actual flowers yet.

You need to do what i right for you as far as the dentist is concerned, but i would give them a quick call so they know you still want to be on their books for now at least.

A quick wave to Arthuritis if he happens by 👋

Hi Froggie, don't worry I am grateful for the info, I didn't know about the thermometer so have ordered one along with a few cool pads just in case. My appointment is at 0815 tomorrow morning so baby sis is coming here at 0700 so I can get there in time. According to the MacMillan forum they will take a fair bit of blood for various tests but on the plus side I should know what stage I am at along with an indication of when chemo will start and a prognosis. I am not taking my amitriptyline tonight so will not get much kip but at least I will not (should not) have a foggy head when I get there!

Morning all, please forgive any typos, I’m having trouble reading. Trying to watch telly but can’t see people’s faces! Feeling a bit squiffy too (tiredness?). I’ve been trying to drink more water because we’re both dehydrated. But Chris only drinks fizzy pop! We somehow managed to cut each other’s hair T 3 o’clock this morning. Tara for now. Xxx

Hi Toni how are you today? I am not too bad thanks had a very refreshing walk in the morning and didn’t even go to the cold spare room well actually only just to dump some clothes there. Thanks for your nice supportive message I may not reply at all points trying not to spend too much time on here today partly because of the neck of course and secondly I’m in the middle of watching this French language programme on Netflix called inhuman resources kind of a thriller but not boring at least not in my opinion and also interesting for me of course because of the French language element. LA did enjoy the brownies very much indeed thanks for asking even BR had some brownies which I didn’t realise not really ideal for little babies they were high-fibre brownies but at least they didn’t upset his stomach so that’s the main thing aww bless. Thanks for the info about psoriasis I didn’t see that programme about the skinny person and the large person sounds interesting though what’s it called please? exactly skipping meals is extremely bad for anyone regardless of size there is no doubt there a bit like my sisters megabrain best pal shes has gone back to eating lunch at teatime 4:30 or something like that I tried to gently say really not a good idea no wonder you’re getting headaches and stomachaches but people only listen to what they want to so I didn’t press the point anymore. There is some quite funny news LLF has somehow “blagged” herself a job as a supply art teacher, but the thing is she’s not qualified in art not the type of art that people learn in schools it’s more architecture in that type of thing that she is highly qualified and so that was a bit weird but never mind, lol, I Tried to ask about it discreetly but I could see that I was just about to hit a raw nerve and she was just about to have a toddlers tantrum on the floor of the café but luckily Roger saved the day in his diplomatic and peacekeeping way and said Sue is talented in every single aspect of art and then I heartily agreed, lol, she is really acting like a toddler at times, she needs constant praise even though not all of it is genuine or deserved, lol. Maybe I’ll get a job teaching Arabic or something like that after all French and German are more or less the same right? one language is much like other? haha. My stomach seems to have recovered thank goodness at least until next week thanks I must admit I did eat a chocolate bar today that was not dark chocolate or any type of healthier choc version, but never mind at least I don’t do it all the time, know what you mean about Chai lattes I almost had one the other day but luckily there was a lot of traffic or something like that so there wasn’t time to get one so the traffic situation saved me, lol, I read somewhere though that some of these drinks have more sugar than a can of Coke oh dear anyway of course everyone is different but I know my teeth aren’t my strong point so I’m trying to be careful as much as I can, your cake looks great by the way well done looks really professional to me. How are you today Toni? did you manage to walk? how are your aches and pains? I’m more or less okay but I think I have to stop now take care enjoy the afternoon. Xx

Hi all, just popping in with some garden pics: lots going on in my tulip pots since last time 😊 and found a snowdrop I didn't know was there, a little stowaway in a pot of grape hyacinths, to the right in pic. The other little pot of bulbs is my 3 puschkinia libanotica (not the best time to be a Russian snowdrop.. not their fault poor things) - all now up, couldn't get a good contrast of the flower against the background but they are on their way out, honest.

Frog thank you again for the instructions, I have read all, & I comprehend 😊 (and that was a token one 'post thanks' for all, obvs, all much appreciated!). I may not get to it this year but I can see me doing this because I will be reworking my cold frame area and this would fit in perfectly. And encourage me into salad things which at the moment I don't much (and save me the price of supermarket lettuce - can't even get a round lettuce in Tesco). One (silly?) question, where does the little bit of hose fit in? Glad you had a bit of fine-ish weather to get it done, even if you did have an 'audience' 🤨 I am more than happy with the look of that cake by the way 😍 I wish I could channel my inner zen kitty like that fabulous cat, what a picture! but sensibly kitties don't have Lists of Things To Do, which has a lot to do with whether you can chill out in windowsills. (Yes all cats I have owned or known are much missed. 💗 Could do with a nice big black tomcat to come over my way, & see off next door's cat.. fetch its own meals.. generally take over the running of the household.. Yes, a little optimistic, sadly. 😂 )

Barbara glad you could get out in the garden in the sun 😊🌞 it was a cold wind so I did not do much 😳but I cleaned out the bird bath and took some bulb photos. I know we've all seen daffodils before but that little trio wanted their picture taken as well, if everyone else was. 😉 Sitting on your glasses, oh no 😂 I do try not to, I have no spares.

Kitty I hope if you can all drink enough rehydrating should help shouldn't it but it's remembering to do it and water is not that appealing in the winter is it. How are the haircuts, I have cut my own before but I have not tried it at 3am.💇‍♀️

Joan yes it was a nice day today thank you, very handy having your surgery etc nearby, they are moving mine further away soon. Have a good Sunday xx

bosh just wanted to say I didn't realize you were fairly recently diagnosed, it's a lot to process early on isn't it - I wondered if you are seropositive or negative (it is my pet question! as I am seronegative I'm always interested). Glad you had a nice walk & have a good Sunday too xx

Love to all and sending very best to Mike for tomorrow 👍️ virtual hot sweet tea available at all times xx

Morning everyone. We'll all be on edge today hoping all is going well with Mike. I can picture all too well clinic and the process. I know Kitty can too.....

Joan it is fabulous my lovely neighbour will soon have his operation. He has waited such a long time. On the plus side the consultant is happy that his other hip should give him a couple more years yet. Love to you and Sue ((())) xxx

Morning Kitty😸 would the big prit help you read the words better too?

You drink as much as you can. Fizzy pop isn't great for Chris, but it is better than nothing I suppose. Get it down him if you can. To be fair paul was as bad when we met. All diet coke. Now he drinks squash, (lemon and lime is his favourite), and will even have a cup of tea.

Well done at least doing each others' hair, but at 3am thinks are a bit out of cynch aren't they? ((())) xxx

Morning Reshmi. Walk later? It's not going to be a bad day maybe still a chilly wind though. I hope you are doing well today healthwise and HV is stable.

Best to protect your neck from too much leaning forwards I agree and avoiding cold rooms helps too of course. The French film sounds like a nice challenge which is always good. The French will be coming along nicely. I better start brushing mine up n'est-ce pas?

I think the programme might have been supersize to superskinny. My hairdressers sister in law was on it once as a skinny. She liked being skinny in real life and lived on skipped meals and chocolate I think and maybe cigarettes. They had to swap diets and the 'overweight' people always lost more than the skinnies could put on. maybe your sis is a superskinnny eating lunch at .30 is just weird😯

I am so pleased LA loved his brownies. I bet especially as his beloved Auntie Mimmi had made them for him. Did he mind BR having some hmmmm..🤨

Well LLF she is a good blagger to bag a supply job like that I bet she is pleased with herself even if she isn't really qualified in fine art. High maintenance that's what she is🙄Good job Roger pouring oil on troubled water. Yes you can teach Arabic and I can teach ballet of course we can😆

Thank you the cake certainly looked ok, but like most vegan cakes it was slightly heavier than 'normal' ones. Still it tasted fine.

Thanks for asking I am pretty good just the usual aches the knee is slowly recovering I think or I am getting better at protecting it maybe🤔

Barbara isn't it great news about my neighbour? He is such a lovely man and has had a really tough time. She has chosen residential over having carers overnight which was an option. Not sure how long he will need once it's done we are all so different. Now let's see if Mr B beats him with his date. Then we can watch bothe of their recoveries can't we?

I forgot something vital about the planter and failed to take a pic 😖 if your planter is wooden (like mine) the inside MUST be lined or the water will seep straight out anyway. I used the same liner as Paul had lying around from his weed control under some bushes.

I see your dentist apt is getting closer I hope before MR B gets called in for his op🤞I bet you can't wait ((()))

Morning Toady how are you today?

I am seroneg! I expect Bosh is too as psoriatic arthritis usually is. Doesn't make diagnosis easy does it?

Please reassure your little russian snowdrops that they are still welcome in your garden I doubt mr P knows they are here in our country and they don't look particularly aggressive. Love the little stowaway too! Lots happening at yours. On the subject of the planter i forgot something vital if your planters are wooden they must be lined with anything waterproof I did not take a pic of that so silly of me. sorry. No rush though if you won't be doing them this year.

The little bit of hose goes in the side low down into the water reservoir I am waiting to borrow Paul's drill. It is to make an overflow if that makes sense? I better get on to that as he is in Scotland later this week and it will no doubt go up there🤨

I never thought - cats do not have a list of jobs to do - no wonder they are more relaxed than we are🙄 maybe a nice tomcat will find you? Who knows?

    Right breakfast anyone?

    potato pancakes...

Morning all, I've decided to type in large print so that I can read it. Shame I can't do the same with my keyboard! Things are either too dark or too bright and I can't fpcus properly. To think I used to be a touch typist.

Today we will have a perching chair and a pressure cushipn delivered from Medequip. Things are taking some time to set up and Chris is getting agitated and worrying about silly things, like when the settee is moved, who will vacuum the place where it stood? We will have to have a cleaner in as I can't vacuum with my spine!

Then I think of those in Ukraine, and my problems don't seem as bad.

Toady, we have some cordless hair clippers that are charged via USB but standing up is difficult for both of us. Our day is upside down, I go to bed at 2:30 in the afternoon and get up at 6pm.Chris prepares our meal for the next day and then we have coffee and a snack and try to settle down for bed (Chris on his settee) at 8pm until 3 in the morning when we have dinner! You can see why we need carers. Your plants look lovely.

Reshmi, your news is always so interesting and amusing.

Barbara, I hope Mr B has news of his op soon.

    Joan, thank you x

Mike, akk the best for your appointment.

Antoinette, yes, large print would help 😀 I don't know when Kitty's Memories will appear, but when you have read all the poems, turn to the next page for Sleek's appearance. I fear it will be my last one. 🤔

Kale salad with roasted butternut squash, pomegranate molasses and almonds

     from Olive magazine

This kale and butternut squash salad is easy, ready in 35 minutes, vegetarian and, best of all, under 300 calories. It's so packed full of flavour from the sweet butternut squash and crunchy almonds though, that you'll forget you're being virtuous.

    Ingredients

    • butternut squash 1 small, seeded and cut into small wedges
    • olive oil
    • pomegranate molasses
    • kale 250g, tough stems discarded and roughly chopped
    • whole almonds 20g, chopped
    • lemon ½, juiced
    • spring onions 2, finely sliced

    Method

    • STEP 1
    • Heat the oven to 200C/fan 180C/gas 6. Toss the squash pieces with 1 tsp oil, 1 tsp pomegranate molasses and season. Tip onto a baking tray and roast for 25 minutes until tender and starting to turn golden.
    • STEP 2
    • Blanch the kale in boiling salted water for 2 minutes, lift into very cold water to stop the cooking, then drain well and pat dry with a kitchen towel. Toast the almonds in a dry frying pan until golden, then roughly chop.
    • STEP 3
    • Whisk 1 tsp oil with 1 tsp molasses, the lemon juice and season. Mix the kale with the dressing, stir in the spring onion and tip onto plates. Top with the squash and chopped almonds.

h t thanks for your nice message, my sun was okay thank you, honest didn’t really understand the terminology “seropositive” and “seronegative”, I have psoriatic arthritis if that helps, not rheumatoid. Yes I think you’re right it is difficult when diagnosis is on the fresh side as i remember having to go to so many different doctors in the hospital before I was diagnosed did you go through the same kind of long process? Or did the diagnosis happen fairly quickly for yourself? Hope your day isn’t going too badly I’m more or less okay today thanks skin is feeling a bit prickly though take care. Xx

hi Toni nice to hear from you by the way this is a public voice controlling session. I’m glad you’re not feeling too bad today I too went for an early walk too today I’ve got the coat right so that was something, lol, nasty wind though no doubt there, I think LA may have minded about BR’s consumption of brownies but he was busy being pampered by grandparents so lucky him, lol. He Reprimanded my mum on the phone a couple of days ago for not buying him the stinky socks book whatever that means, lol, he’s really getting quite naughty though he kicked a carer in the nursery garden and a complaint was made he was meant to apologise his parents rehearsed the apology with him but he just stayed silent oh dear, I too find certain people annoying but I have stopped short of kicking them, lol, though sometimes I do wonder if Kicking LLF will be the ultimate physio, haha that’s interesting that a relative of someone you know was on that programme yes I agree it’s definitely stupid to eat lunch at 4:30 in the afternoon that was actually my sisters best friend Louise, though to be honest I wouldn’t be surprised if sis does same thing, I know my sister doesn’t like to eat cereal in the morning, I think possibly she does occasionally now people can be very strange can’t they really? set in their ways. Are you protecting your knee when you walk with compression bandage? I Was thinking of buying one for my upper leg type area because when it was really windy not that long ago when I was inside the house I’d get sudden really painful twinges and I almost couldn’t walk is this something that you suffer from yourself? If you do do use a compression bandage on the joint connecting and the upper leg and I guess it’s the hip? Or Do you use a brace? Or if anyone else has any advice on this I’ll be really grateful if you let me know thanks. It Was unusual thing for me because my mobility has improved a lot since first diagnosis so this was a new kind of problem and I was just wondering what’s the best way to deal with it. It’s funny when you said that Paul’s takeaway bags were at the back of the cake, haha. I just wanted to say that my sister sent me a really funny video of bill Pretending to go after LA to eat his brownies and then LA got really worried and put every single tiny bit of brownie on his plate straight into his mouth just for safekeeping you understand, lol, apparently everyone ate the brownies that day I didn’t realise that otherwise I would’ve made more I couldn’t eat any myself because I was having a metho hangover, but that’s probably just as well, lol. Okay bye for now Toni Hope you have a nice evening take care. Xx

Hi Toni sorry just wanted to make something clear my anatomy knowledge is so rubbish yeah I think basically the pain was in the connecting area between hip and upper leg, ok, I’d better stop waffling now because I know a vegan waffle is not as good as a vegan cake heavy or not, lol, ok, Tc. Xx
