Exciting times indeed, weddings galore
Summer Tuna Panzanella
150g Ciabatta bread, chopped into bite size pieces
250g Cherry Tomatoes, halved
1 Shallot, halved peeled and finely sliced
1 Yellow Pepper, halved, de-seeded and sliced into thin strips
1/2 a Cucumber, thinly sliced
160g tin of Tuna, drained
60g Rocket
35g freshly grated Parmesan Cheese
1 small handful Fresh Basil Leaves, roughly chopped
4 tbs Olive Oil and a little extra for drizzling
1/2 a Lemon
Salt and pepper
METHOD
Pre-heat your oven to 200 degrees.
Take your chopped ciabatta and spread in a single layer on a baking tray. Sprinkle evenly with grated parmesan cheese, a grind of black pepper and a drizzle of oil. Place on the top shelf of your oven for 10 mins or until the cheese is melted and the bread pieces are golden.
Meanwhile, take a large bowl and add your halved cherry tomatoes, sliced shallot, yellow pepper strips, and sliced cucumber. Add half of the olive oil season with salt and pepper and mix through.
Flake the tuna over the top of your vegetables followed by the rocket and the remaining olive oil.
When your bread is ready, remove from the oven and mix through your salad. Finish with a squeeze of lemon and scattering of basil.

Yes, the giant box was assembled at Dads, his neighbour had been busy yesterday, helping him. The scooter might be used once or twice.
B did offer to help, but I think the assembly had already been arranged with the neighbour, (who is keeping a low profile from us)

Stand down from cloak duties, they have just cancelled my PIP appointment for tomorrow, now have to wait until 17th October. :shock: :shock: :shock: Said circumstances out of their control, they would not be able to see me tomorrow, very apologetic, should blo---y think so too, STRESSED, it's like a roller coaster.

Well that explains it!!! That is disgusting Aidan! I would be fuming! What an anti-climax. I was wondering what all the shrieking was about on the crystal ball. It wasn’t of the laughing, happy variety no :shock: it was livid shrieking. :shock: :shock:
I take it Tosca was telling Sleek and Mrs Darcey the latest. It really is bad practise. All that revision for nothing grrrr!!!
The other thing I noticed was a sigh and a sort of ‘flump’ sound with a gentle jingle. It was the cloak standing down. It was this afternoon?
On better news Sleek said Mother slept through the dew collection and the nymphs were able to gently collect some valuable droplets from her whiskers. :animal_busy: Sleek hands hers over without a fuss anyway.

From what I see and read, cancelling peoples appointments is a very common thing to happen. It is unfair and bad practice, I quite agree.

Evening all
We got home Safe and sound yesterday after being caught up in a bomb scare at Gare du Nord Eurostar check in, we had got right to the stage of check in where your luggage is scanned and you walk through scanner yourself, just the same as you have to in an airport and everybody was turned back and had go right back to the start again and wait. However when we started to be allowed back we had a stroke of luck and a official saw me struggling because others were crowding in front of me so he took us straight through
business class check in, at this point I was asked if I wanted a ramp onto the train. Although I didn't have this on the journey going out as we had not booked it as knew we could manage without. But I accepted the offer because I just wanted to get through the crowd so we had our tickets changed to a new carriage, and were escorted trough the queue by the assist person, I had the ramp, and best of all was given a wheelchair area in the standard premier class and got a free meal as did Mr T. our original tickets were Standard so in fact we were upgraded with no extra charge. Well done good old Eurostar I say.
Pain level today had not been good but should be ok by tomorrow if I get another good nights sleep tonight. We then will wait for Booking.com who we booked through to ask for a review as they usually do and the a very big complaint will be going in. and if anyone visits Paris Avoid Hotel Cambrai like the plague. :x
Aidan Sorry to hear your PIP appointment was cancelled. I am lucky in that respect as I was already over the age limit that was set when it came in and had already had my DLA taken off of yearly renewals by then. so mine is still DLA not pip. the cup of tea and raspberry ripple cake went down a treat on our return.
Kath Thanks for the Hairy legged Spids after instructing them not to enter our room I set the hairy beasts free. don't worry Aidan I did send them back to Kath when we came home. oh I am so so naughty. love your poem and the yummy waffles.

Other than the hotel problems we had a good time away and saw the main sites on the tour bus and when I have got the photos on my laptop I will post some.

Finally, a little time out. Now that Carol is back, we will have to take a trolley and gather some spare time from the shed of many hours.
Hi Toni, a bit strange feeling first thing in the morning, after all the anxious times getting ready for pip f2f, then it being cancelled, then they send a text first thing, saying ring this number straight away, regarding your assessment :shock: :shock:

I never got to choose any candles, we did not go to the department store, decided that Dad would be better off going to Homebase, next to Sainsb, for a huge padlock :?
We always have colder temps than in Clitheroe, it can be like a winter wonderland here and not a flake of snow or any frost, less than 2 miles away.
Kind of Mrs Darcey to have a chat to Mother, she seems a bit calmer today, the occasional shrieking session, but otherwise settled.

It is so commonplace for peoples pip appointments to be cancelled, you read of such horror stories, sometimes best not to read too much.
I hope that the new appointment is not changed, or B will be taking the phone from me and telling them straight. :shock:
Coffee and cakes were very nice, just what was needed. Sadly no candle shopping, but there is always another day
I still have not had chance to look at whatsapp, I will do, promise. I can imagine they are having a wonderful holiday, with lots of pictures and chatting. All free, a bit like messenger or google duo, snapchat, face time........skype too. We are so well connected these days. t4591 t4591

No flu jabs at the surgery? Are they on rations :shock: I think the ones for those under the tender age of 75, are a quad vaccine and those over said age, have the triple vaccine, so I have heard. Quite why there is a difference, not sure. There must be different strains of flu that they are targeting, dependent on age.

To have the far from pleasant hotel, then, to top it all off, a bomb scare in the station :shock: :shock:
How kind of the station official to guide you through the thronging crowd, change you tickets to premier, make sure you were in the more accessible seating area and then have a nice meal each, on the way home. As you say, well done Eurostar.

I am sure the pip saga will rumble on a while, I won't really feel easier until the face to face is over with, then you have to wait for weeks, until the "powers that be" make their decision. :? I remember there was a cut off date, when it changed from DLA to PIP, for those under 65.

Aidan I read (on the British Lung Foundation site) that the different jabs are for their 'risk' levels! I would have thought we were all the same! Under 65s aren't even on the list if we aren't at risk are we? :roll:

Another successful trip out this morning catching harvest mists on whiskers! Tomorrow Mrs D is going to get up early and help out. She will be all togged up though. Tom-thumb is a bit naughty and says her broomstick is 'old fashioned'. Cheeky boy!! He needs to be careful or Mother will give him one of her looks!

I when up the hospital yesterday about my cyst I had a scan it's filled with water and measures 10 cm I have to wait for my next appointment.

All the hairy spids are back thanks Carol. Being in France has given them airs and graces as they've moved out of the bin shelter and into the empty house next door. Serves them right for leaving the window open last time they came. Loud music all day, in French and piano accordians too. ZUT ALORS! Such bad language!!

I fancied this today, hope you'll try it. Roasted Pollock with green beans and tomatoes. t4591
4 medium red skinned potatoes with skin, cut into eighths
1 Lb green beans, snapped and cut into 1" pieces
2 tomatoes, seeded and chopped
4 garlic cloves (2 whole and 2 thinly sliced)
1 Tbsp whole rosemary or thyme leaves
1/4 cup olive oil
1/4 cup dry white wine
1 Tbsp butter
4 pollock fillets without skin, 6-8 oz each
Salt and pepper
Set a rack in the lower third of the oven and preheat the oven to 450F (high temperature will crisp the potatoes and cook green beans fast enough to keep them green).
Season potatoes generously with salt and pepper and mix with 2 Tbsp olive oil, rosemary, and 2 whole garlic cloves in a 9x13x2 baking dish. Roast for 15 minutes in the lower third of the oven.
Season green beans with salt and add to potatoes. Drizzle with another 2 Tbsp olive oil and continue roasting 10 more minutes.
Add tomatoes, sliced garlic, wine, and a pinch of salt to potatoes and green beans. Mix it all up, and continue roasting while preparing the fish. If you prefer not to bother with browning the fish, season it with salt and pepper on both sides and proceed to step 6.
Set a non-stick or cast iron skillet over high heat. Add 1 tsp of butter. Season fish fillets with salt and pepper on both sides. When the pan is hot, place fish in the skillet (if substituting fillets with skin, place them in the skillet skin side down). Sear 3 minutes or until nicely browned.
Remove the fish to the dish with roasting vegetables placing it browned side up. Top with remaining 2 tsp butter, some vegetables and juices from the pan. Finish cooking in the oven for the total cooking time (searing + baking) of 8 minutes per inch of thickness.
To test for doneness, separate the flakes of the thickest part with a fork. Fish is done when only a trace of translucency remains in the center."Women and cats will do as they please, and men and dogs should relax and get used to the idea." Robert A Heinlein
