Tra la la, t4591 just check I've left the booth clean and sparkling. I just couldn't resist the caramel pecan thigamajig. Now I can scoff some kale, egg and mushroom breakfast cups. Slurp - thanks Aidan. In return I've provided:
Chocolate Caramel Popcorn Cake (Vegan)
INGREDIENTS FOR THE CHOCOLATE CAKE
375 g self-raising flour 1/2 tsp baking powder 350 g light brown sugar 110 g cocoa powder 120 ml vegetable oil (sunflower or coconut oil work well) 680 ml dairy-free milk 2 tbsp apple cider vinegar

1/3 batch of the caramel sauce 300 g dairy-free butter (make sure it's a good tasting one! I recommend Vitalite or Earth Balance Buttery) 300 g icing sugar FOR THE CARAMEL POPCORN 1 small bag of popped salted popcorn in a large bowl 100 ml water 200 g white sugar 1 tbsp dairy-free butter
Metric - US INSTRUCTIONS TO MAKE THE CARAMEL POPCORN You need to work quickly making this so have a prepared large flat baking tray ready to set the popcorn and all the ingredients to hand. Add the sugar and water to a large pot on a medium-low heat. Don't stir but you can shake to stop it burning. Once the sugar turns a deep caramel colour, remove from the heat and add the tablespoon of dairy-free butter. It will bubble up, keep stirring until smooth. Then pour over the bowl of popped corn. Quickly transfer to the tray to set. TO MAKE THE CHOCOLATE CAKE Preheat the oven to 180C / 350F and grease and line two 8-inch cake tins. Mix all the dry ingredients into a large bowl, then whisk in the wet ingredients, leaving the apple cider vinegar til the last minute, as it will react with the rising agents to help make the cake fluffy and risen. Pour the batter equally between the two cake tins and bake for approximately 35 minutes or until a toothpick poked into the middle of the cake comes out clean. Once baked, leave to cool completely before removing from the tins. Then freeze the two layers for a few hours, so it's easier to trim. Remove from the freezer and trim the tops to make them even. Now slice each layer in half, length-ways, to create four cake layers.
TO MAKE THE CARAMEL SAUCE Follow instructions from my "5 Minute Caramel Sauce" recipe TO MAKE THE CARAMEL FROSTING Whisk the dairy-free butter in a large mixing bowl, adding the icing sugar a small bit at a time. Then whisk in the caramel sauce, working whilst the sauce is still warm and at a pourable consistency to stop it from hardening. Let the buttercream chill in the fridge for at least a couple of hours before using.
TO ASSEMBLE THE CAKE Add buttercream to the top of the first cake layer and sandwich together with the next layer, repeating and covering all layers with a generous dollop of the buttercream. Then frost the outside of the cake, starting with a thin crumb layer before adding a more generous coating. When the caramel sauce has cooled but is still a thick, pourable consistency, pour over the top of the cake, letting it run down the sides. Pile the popcorn on top and pour more caramel over to keep it in place. Leave in the fridge for a few hours to set and keep fresh, before serving

I don't like clowns at all - they give me the heebie jeebies :shock: :? too many horror films with them in (not that I have watched them, the trailers were bad enough).
The rainbow droplet t115006 is, as you say, held in the highest esteem and even in winter, there are visitors from far and wide.
Some of the ink stamps are very nice indeed. I will have to have a proper look at some point. In the meantime, it is writing the cards. All of our postie ones are finished, just local ones, neighbours, GC, T Rooms etc.

Hi Joan and Sue - we are used to wet weather here in Lancashire. The Ribble Valley is known for its rather damp climate.
So you are likely having an endoscopy Joan, sorry to hear that you have been having heartburn. Don't worry too much about it, they pass a tube, into your stomach and then take a look round as they bring the tube out. It has a camera and light on the end and they can take samples if needs be.
They always numb the back of your throat and you can ask for a mild sedative, which most people do. Just makes things a bit more comfortable for you and people normally forget anything about it, which is good. t4591 t4591 Once it is done, they let you rest on the trolley and give you a cuppa and some biscuits and quite often they will tell you what they saw on the camera.
Glad the doggies don't mind the rain too much.

It is a lot better I took your advise and stopped putting a warm wheat bag round my neck all the time just put my wrap round scarf in fridge for5 mins seems to have helped.
We have had a lamp on all day its so miserable out there.
Not going back to SW till after new year feel so wiped out and if my daughter can't take me I would have to take the bus and the way it goes is quiet a journey .
Got most of christmas shopping done thank god for a****n.

Evening all
after a very crazy mixed up week of plans being changed. the last change has come today as Graycie is poorly with the flu and her party has been cancelled as she is not really interested in anything and doesn't want to do anything and it was planned for 5-7pm and GD will dose not want to take her out that late being unwell as it gets cold. However we will still make our trip as we have the Christmas presents to take down, and if we cancel our hotel stay we will lose our money anyway . but we will still meet up with them all on Saturday during the day at some point. hats and scarves are all finished last bit done this morning. I have taken a photo of them and will post it on here on Saturday or Sunday when I'm back home.
Dr appt on Tuesday was ok with medication review as expected blood was a bit up but she took it three times and on the second and third times it had come down. All as I can say is what dose she expect after this crazy week and the whit coat syndrome and Mr T being moody :roll: :roll: its is no wonder it is not sky high.
I have now been asked to consider having a 24 monitor done in the new year. question is will it really be any different I will still know it is there.
when I am back normal service will be resumed as far as forum post are concerned

Hi Carol - A week of changes indeed. Now poor Graycie is poorly and won't be able to have her party. Glad that you are are still going, with present for Christmas and have a night away too.

Vegan mushroom and ale pie (this should warm the cockles.)
Ingredients
15g/½oz dried mixed mushrooms
250ml/9fl oz just-boiled water
4 tbsp sunflower oil
300g/10½ oz shallots, peeled and cut in half if large (try and keep the root intact, so they keep their shape)
1 medium onion, thinly sliced
2 garlic cloves, crushed
400g/14oz mixed mushrooms, chestnut, button, shiitake, portabello, sliced or quartered if large
330ml/11fl oz pale ale (vegan)
1 vegetable stock cube
2 tbsp tomato purée
2 tbsp redcurrant jelly
1 tbsp soft light brown sugar
1 tbsp fresh thyme leaves or 1 tsp dried thyme
2 bay leaves
3 tbsp cornflour mixed with 3 tbsp cold water
180g/6oz cooked and peeled chestnuts (vacuum packed is fine)
flaked sea salt and ground black pepper
For the vegan pastry
300g/10½oz plain flour, plus extra for rolling
1 tsp fine sea salt
100g/3½oz sunflower oil
5-6 tbsp cold water
1 tbsp aquafaba (canned chickpea water) or plant-based milk, such as soya or almond milk
Recipe tipsHow-to-videos
Method
Put the dried mushrooms in a small bowl and pour the just-boiled water over the top. Set aside.
Heat 2 tablespoons of oil in a large non-stick frying pan. Fry the shallots and onion over a medium heat for 10-12 minutes, or until softened and lightly browned, stirring occasionally. Add the garlic and cook for a few seconds more. Tip into a bowl and set aside.
Heat the remaining oil in the same frying pan and fry the mixed mushrooms for 5 minutes, or until lightly browned.
Stir in the soaked mushrooms and their liquor, the ale, crumbled stock cube, tomato purée, redcurrant jelly, brown sugar, thyme and bay leaves. Add the shallots and onions back into the pan. Season with a good pinch of salt and lots of ground black pepper.
Bring the liquid to a gentle simmer and cook for 15–20 minutes, stirring occasionally. Mix the water with the cornflour in a small bowl until smooth, and stir into the mushroom mixture. Cook for 1–2 minutes or until the sauce thickens, stirring. Stir in the chestnuts and season to taste.
Spoon the mushroom mixture into a 1.5 litre/2½ pint pie dish and leave to cool before topping with pastry.
Preheat the oven to 200C/180C Fan/Gas 6.
To make the pastry, mix the flour and salt in a large bowl. Add the sunflower oil and rub into the flour first with a fork and then with your fingertips until the mixture resembles breadcrumbs. Don’t let the mixture come together in a ball, it should remain in damp, flaky pieces.
Add the cold water and mix with a fork and then your hands until the dough comes together and forms a smooth ball.
Dust a work surface with flour. Dust a rolling pin with a little more flour, then roll out the dough until around 7.5mm/⅜in thick. Cut a circle of pastry that is around 3cm/¼ in larger than the pie dish containing the filling. Reserve the trimmings for decoration.
Brush the rim of the pie dish with a little aquafaba or plant-based milk and place the pastry on top. Press the pastry edges firmly to seal and trim off any excess with a knife. Brush the pastry all over with aquafaba or milk.
Use the trimmings to make decorations for the pie. Brush with more aquafaba or milk.
Bake the pie for 45–50 minutes, or until the pastry is pale golden brown and the filling is hot. Serve with freshly cooked green vegetables and mash.
Recipe Tips
You can use a sheet of ready-rolled dairy-free puff pastry instead of the homemade shortcrust pastry if you like.

Glad you have almost done with the cards and are now sorting tips for the bin men and the postie. We don't see our bin men, as the large bins are all taken up to one area on the park, on a Tuesday, for emptying then the groundsman brings them back on his tractor.

Hi Joan and Sue, it is Suesday of course. No, I have not had any more hypo's thank goodness.
I didn't remember you had had an endoscopy before. They likely want to check why there is still acid coming back, could well be reflux, or a small hiatus hernia, which can be treated with meds. Lanzoprazole is quite an effective drug, just might need a top up with something else for a while. We will all be with you when you have to go to the hosp.
Hope you are keeping warm and dry, maybe not venturing out if the weather is blowing a hooly.

BAKED SALMON WITH PARMESAN & PARSLEY CRUST INSTRUCTIONS
Preheat the oven to 200C/400F/Gas 6. Season both sides of the salmon fillets and place on a greased baking sheet or roasting tin. Mash the cream cheese with the garlic, salt and pepper and lemon rind. Divide into six and spread on top of each salmon fillet. Mix the breadcrumbs, parmesan and parsley in a small bowl and season. Sprinkle on top of the cream cheese mixture and dust with paprika. Bake in the oven for about 15 minutes. To tell when the salmon is done, it will have changed from translucent to an opaque pink. Serve immediately, garnished with chopped parsley.

6 x 150g/5oz salmon fillets, skinned
salt and freshly ground black pepper
150g/6oz cream cheese
small clove garlic, crushed
½ lemon, grated rind only
25g/1oz fresh white breadcrumbs
25g/1oz fresh, coarsely grated parmesan

Well, there was always a lot of debate about senior nurses, knowing as much as Drs. I would say that they junior Drs when they came to the wards, twice a year, relied on us so much, to actually teach them the ropes of looking after the person as a whole, not just a diagnosis. At that time, we were not allowed to diagnose, but we were right, 99% of the time.
Of course, when you get to a Consultant level, then they are specialists in their field and know whatever speciality inside out and back to front. But, they all rely on the nurses to keep them informed, keep the prescribed treatments going, night and day, react to any emergencies and know exactly what to do.
So, all in all, yes, there are many nurses who know as much as a lot of Drs and of course, nurses have their intuition to guide them.

Neck is still sore but not as bad thing is I started with a chesty cough had to go on my emergency antibios for bronchiectasis so every time I cough it hurts my neck :roll:
Daughter made veg stir fry for tea tonight now I am a meat eater but it was delicious and filling.It was shredded savoy cabbage, peas,green beans,brocolli,onions and grated carrots and some garlic granules and chilli flakes.

We always said stand by your beds, when the word was out that Matron was on her rounds. If things were not "in order" she would let it be known, loud and clear. (Most of them were wonderful and kind really, but had a steely look when needed).

She loved the birthday cake thank you ! There is one already at the Balti house (your order is in ready too - 18 now at the table!) they were with us as it were throughout Lucy's treatment. Paul was fetching her favourite curry and we were freezing supplies in the fridge at the hospital it was all she ate for many weeks.

My step grandson Alex (Jonathan's stepson) was knocked off his bike yesterday. Dawn is so upset, he spent a little while at the hospital getting checked over. Mainly cuts and tissue damage but his bike's a write off and the incident has been reported to the police. The driver offered £10 for a new wheel, then drove off and left the scene. Disgusting. :x
Sri Lankan braised roots stew coconut dhaal with dumplings
Method To make the curry powder: In a dry frying pan, toast the rice until it’s browning, then add all the spices and toast for 3-5 mins until darkish brown but not burned. Blitz it all in a spice grinder, or crush with a pestle and mortar, then pass through a sieve into a jar or airtight container. Will keep for 2-3 weeks.
Heat the oil in a wok. Scatter in the mustard seeds and curry leaves. When they sizzle, add the onion, leek, garlic, chilli, celery and a pinch of salt, and cook, stirring, for 8-10 mins until the onion starts to colour. Add the curry powder and cook for 1 min more, then add the tomatoes, veg, coconut milk, a tsp of salt and 200ml water. Bring to the boil, cover and simmer for 10-15 mins until the veg are tender.
For the dumplings, boil the lentils in a pan of water until just cooked, then drain. Melt the coconut oil in a pan, then add the mustard seeds and curry leaves and cook until sizzling. Remove from the heat and allow to cool slightly. Put the lentils, flour, chilli, onion, spices, desiccated coconut, lime juice and 1 tsp salt in a bowl. Mix with your hands until combined, then add the coconut oil and aromatics and mix to a dough. Form into 12 dumplings, then put on top of the stew, cover with a lid and cook on low for 5 mins. Top with pepper, coriander and spring onion to serve.
Ingredients 1 tbsp coconut oil 1 tsp mustard seeds 6 curry leaves 1 onion
, finely sliced 1 leek
, finely sliced 3 garlic cloves, 1 sliced, 2 minced 2 chillies
, deseeded and finely chopped 2 celery stalk, diced 1 tbsp roasted curry powder (see below) 400ml can chopped tomatoes
2 raw beetroot
, peeled and cut into batons 3 parsnips
, sliced 3 carrots
, sliced 400ml can coconut milk
For the dumplings 100g split red lentils 1½ tbsp coconut oil 1 tsp mustard seeds 1 tbsp curry leaves 75g self-raising flour ½ green chilli, finely chopped ½ red onion, finely chopped 1 tsp turmeric
1 tsp red chilli powder 80g desiccated coconut ½ lime
, juiced For the Sri Lankan curry powder 10g basmati rice 20g coriander seeds 15g cumin seeds 10g black peppercorns 5g fenugreek seeds 3g cloves seeds from 3g cardamom pods To serve sliced spring onion
