Oh Aidan lovely that breakfast bake looks fabulous! That will set Lucy and I up nicely for our train journey to see Dr Tim this morning.
The cloak will pick you all up when we are ready to go in I think although it is very cosy inside the cloak it's nearly Christmas so you'll all be very busy

A chilly start here today very icy so Sleek picked Tosca up via the gate and the same up to Pendle a fair bit of crunchy sparkly frosted dew duly taken to the nymphs. They stopped in at the café for a warm up and peep at the rainbow droplet (Sleek sent a message to Pepe on it I'm not sure if it will work, but she felt better for doing it). Cat milk consumed before coming home.
Well my vest is on and my Starbucks reusable cups are ready in my rucksack for our journey across town.

Oh Barbara, I hate it when they call on spec asking if you'd like to take a cancellation! I have to book patient transport to get me there, and you can't always do that at short notice. :shock:

Aidan, I am stuffed with vegetable and cheese overload breakfast, and I've lost count of how many Peach Frangipan cake slices I've had. (burp :oops: )
So, these are called biscuits but they look more like scones to me.
Vegan Red Lobster Cheddar Bay Biscuits
YIELD: 12 Biscuits / ACTIVE TIME: 15 Minutes / COOK TIME: 12 Minutes
INGREDIENTS (Biscuits)
(2) cups – all-purpose flour
(2) teaspoons – baking powder
(½) teaspoon – baking soda
(1) teaspoon – granulated sugar
(¾) teaspoon – salt
(½) teaspoon – garlic powder (recommend Spice Islands)
(¼) teaspoon – cayenne pepper (recommend Spice Islands)
(1) cup – cheddar style shreds (recommend Daiya)
(1) cup – plain unsweetened almond milk + 1 tablespoon lemon juice
(½) cup – vegan butter, melted (recommend Earth Balance Buttery Sticks)
INGREDIENTS (Topping)
(2) tablespoons – vegan butter, melted (recommend Earth Balance Buttery Sticks)
(½) teaspoon – garlic powder (recommend Spice Islands)
(¼) teaspoon – parsley (1 teaspoon fresh)
INSTRUCTIONS
Preheat oven to 475 degrees °F. Line a baking sheet with parchment paper or a non-stick baking mat; set aside.
In a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt, garlic powder and cayenne. Stir in the cheddar style shreds; set aside.
In a medium bowl, stir together the almond milk and melted vegan butter until the butter forms small clumps.
Add the almond milk mixture to the flour mixture and mix gently with a rubber spatula just until a dough forms and no dry ingredients remain. Use a greased ¼-cup measuring cup to scoop out portions of dough. Place on the prepared baking sheet, leaving a little more than an inch between biscuits.
Bake until the biscuits are golden brown, about 12 minutes. While the biscuits are in the oven, stir together the 2 tablespoons melted vegan butter, garlic powder and parsley. Remove the biscuits from the oven and immediately brush with the topping mixture. Allow to cool for at least 5 minutes before serving. Leftovers can be stored in an airtight container or zip-top back at room temperature for up to 3 days.

Hi Kath - how dreadful someone cold calling about an "end of life plan", too right block the number. You can put the number into Google and usually the site "who calls me" comes up and you can add the number and tell them it is cold calling spam, or harassment etc. Grrrrrr, these sort of companies call Dad and we tell him, just put the phone down, don't get into a conversation with them, they are rip off merchants.
Goodness, the plates are quite empty, you did enjoy the goodies at least they are free of calories etc so we can stuff ourselves daft

Thank you for being under the cloak....what did you think of our new clinic? Very smart isn't it, Dr Tim is adorable in his carry today bless him. I know he is very proud of Lucy. Regarding her frequent cold he said her immune system is o...k...but will take years to be as good as others of her age.
We also saw some of the nurses up on the ward and the click sargent Social Worker. He reckoned he still hasn't got over me annoying him with Lucy's pink bunny. That wasn't me - it was the bunny!!
Did the cloak the pick us all up again...for Barbara next?? What's going on? Fill is in Barbara please.
I asked the nurse about when Lucy gets the official 'All clear' for Joan. she said we will go to 6 monthly bloods next then annual. Then after that so a bit longer. Not so worried as we used to get these days though. 4 monthly check ups at the moment.

Hi Toni, yes, the new Clinic is very swish, Dr Tim was as personable as ever. We were all listening intently, even though Barbara was singing on and off Thank goodness the cloak is sound proof.

Lucy's immune system will take some time to boost itself back up to normal levels.
Echinacea is a good natural immune system booster, that you can take at the first signs of a sniffle / cough / cold. Can be in tablets or liquid.
As is Vit C, we take mega doses of the effervescent ones, mainly because we smoke and smoking destroys vit c, so we top up :? :?
Vitamin D3 is good for the immune system too.
4 monthly check ups are getting there quite nicely. As you say, a bit longer yet. They are very good at following up, which is excellent.

MMMM potato and cheese balls. Very tasty. As for the blueberry gateau, I just sat gazing at it for half an hour then I saw Toni sidling up to it, so cut a huge slice before she snook off to the booth with it. A lovely Jewel fruit tart ( for Lucy's immune system)
Crust:
2 cups walnuts
2 cups raisins
Filling (optional but recommended):
1/4 cup almond butter
1/4 cup melted coconut oil
1/4 cup maple syrup or 1/2 cup date paste
1/2 teaspoon cinnamon
Water, if needed
Topping:
3 cups frozen berries (or however much you want)
1/2 cup goji berries
To make the crust: pulse the walnuts in your food processor until they become a rough flour. Add the raisins and process until it stick together, forming a rough dough. Press into a tart tin. Put in the fridge and let it set for about 2 hours (this is preferable but not absolutely necessary).
To make the filling: blend all the ingredients until smooth. Spread gently into the bottom of your tart crust and then let it harden in the fridge for 30-60 minutes. Now top the tart off with all the berries, slice and serve!
Add any cream too. Toni will know which is best.

Evening all
Been a bit of a chilly day here today but not too windy.
had our fortnightly church meal witha slight difference it was in our church secretarys house instead of a restaurant. dinner out today with Mr T. did not meet my friend after as I was due for a dental appointment to adjust my lower denture have waited 2 weeks for it , and guess what yes you guessed it about 5 pm last night they rang to say the lower room wasn't available at 11.10am and would it be possible for me to use the upstairs surgery ( 3 floors up and no lift) my answer was definitely no so it had to be rearranged for 1.20pm I usually meet my friend at 1.30. so I had to put her off. but at least denture has been now and hopefully I will have no more problems with them. I must admit they did feel a bit better more comfortable this afternoon. Ordered all our food shopping for Christmas except our turkey when I got back home today (goodbye money) made a nice hole in my private pension but at least we will eat well over Christmas. and up to the new year. glad you all like the picture of our beautiful GGD's.
Well time has run out on me hopefully I will be able to get on tomorrow and speak some more.

I wrapped some yesterday as some friends will be here later for exchange and then to see a show in the next village organised by this village.
Before that though I must immaculise the house (and myself :? ) early because my neighbours (50yrs married) are picking me up (and Barbara??) to go carol singing at a nursing home. Then off it's carols around our village tree at 5 then friends at 6 then show at about 20 past :shock: Heaven help me!! Thank you for the parmesan baked eggs that should help

Hi to all on a VERY stormy night, the wind is roaring and the rain is torrential - BBC said moderate breeze - really :shock: :shock: :shock:
Visitors stayed till about 4.30, by which time we were a bit jaded. Nice to see them though. They had been to KFC with Dad then came in for tea coffee and cakes.
It was pouring when they were here and when they went and it is still like being in a washing machine. Now we find out it is storm Dianne I think.

We have taken large doses of Vit C for many years now, read about it a long time back and just continued to take it.

There was supposed to be 'carols round the tree' in the village too, but we had to sing inside Church instead with the almost torrential rain. Yes Mother, people shrieking is called singing The sisters and Barbara came to the nursing home to help us sing. Some of the people resident there joined in and one started us off!!!!
We managed ok and Paul 'cooked' also known as dominoes! Sometimes a curry or chip shop. He cooks quite well really!!
Friends came and the evening do was a great success. Over £200 made on the raffle alone (yes guess who helped sell tickets?) for Church funds
Nice to see visitors isn't it, but a bit tiring too :roll: I hope all has been re-immaculised???
The cats were up early Mrs D in her new jumper had fetched Tommy Thumb Sleek picked them both up and they came to yours. I hope they were quiet and Tommy behaved. He usually does for Mother? She only has to give him a 'look' :shock:

Vegan Pumpkin flan
Ingredients
6 tablespoons Brown sugar
1 cup water
12 ounces silken tofu (drained)
3⁄4 cups pureed pumpkin (approx ½ of a 13 ounce can)
1 cup soy milk (unsweetened, plain, vanilla or lite vanilla)
2 1⁄2 tablespoons tapioca starch (or cornstarch)
1⁄2 cup Brown sugar (¾ cup if you want it sweeter)
1 teaspoon vanilla extract
salt
1 tablespoon pumpkin spice (optional - nice touch for holidays)

Instructions
To make Caramel:
boil sugar and water in a small saucepan until it is thick. You will know it’s ready when the caramel does not drip from a spoon.
pour caramel into a pan/mold and manipulate the dish to spread the caramel on sides of pan and then make sure caramel is evenly covered on the bottom of pan
Set aside to let caramel cool and harden in pan at room temperature
To make Flan:
Preheat oven to 350 degrees.
Place all filling ingredients in a food processor fitted with a metal blade and process until smooth and completely combined.
Scrape into the caramel lined pan. Gently smooth top
Place the pan/mold in a larger roasting pan and fill the surrounding area with hot water until it reaches up to the same height as the flan mixture.
Bake for 45 minutes
Allow flan to cool in pan completely before refrigerating it for at least 4 hours (ideally overnight) covered with foil or saran wrap.
To unmold the flan, simply run a knife around the sides, place an upside down serving platter over the flan then invert really quickly.
