    Sorry I didn't show yesterday, we managed to catch the bus into town WAHAY. :lol: First time since about September last year. We had a wonderful brekky at Pete's Cafe, brought some new printer cartridges from Rymans, a new watch strap from the jewellery stall, a number 2 cut at the barber, then taxi home. Boy. are we suffering today.

    Martin came to do my blood test today and told us he's leaving the NHS. He's been so good over the years, now I don't know who will do my blood test. A different person every time I suppose. :cry:

    Vegan Pumpkin Cake with Cashew
    Ingredients
    Dry ingredients
    1 cup white rice flour or brown rice flour (160 g)
    1 cup ground oats (GF if needed) (90 g)
    1/2 cup dried shredded coconut unsweetened (45 g) or ground almonds
    1/2 cup coconut sugar (80 g)
    2 tbsp flax seeds or chia seeds, ground
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    Spices to taste (cinnamon, allspice)
    Wet ingredients
    240 g fresh pumpkin grated (or 1/2 cup of canned pumpkin puree)
    1 cup plant milk (240 ml)
    1/4 cup sunflower seed butter or any other nut/seed butter (60 g)
    2 tbsp maple syrup or agave syrup (40 g)
    1 tbsp lime or lemon juice
    1 tsp vanilla extract
    Cashew cream (optional)
    2/3 cup cashews (100 g)
    1/4 cup plant milk (60 ml)
    2 tbsp maple syrup or agave syrup (40 g)
    1 tbsp lime or lemon juice
    1/2 tsp vanilla extract
    Instructions
    Cover the cashews in a jar or small bowl with hot water and allow them to soak for 30-50 minutes (then discard the water)
    Preheat oven to 375 degrees Fahrenheit/190 degrees Celsius
    Put the dry ingredients in a bowl and mix until there are no clumps (you can also sift them)
    Process all the wet ingredients in your blender or food processor until the mixture is smooth
    Add the wet ingredients to the dry ingredients and stir with a spatula or whisk
    Put the dough into an 8-inch baking pan (either greased or lined with baking paper) and bake for 40 minutes until a toothpick comes out (nearly) clean from the center. Let the cake cool down
    Mix all ingredients for the cashew cream in your blender until the mixture is creamy. Spread about half of the cream on the cake (you can save the remaining cream for another dessert). Enjoy this delicious vegan pumpkin cake. Store leftovers covered in the fridge.

    Evening all
    Wow 2 days running I have managed to post whatever happened :? :? had a good day at knitting today I was a bit naughty today though as three of use were talking the same thing the 3 being myself my friend and another member about lots of shop in our local high street closing down and what was replacing them, and of course even though said friend dose not live in the area she was saying why and what was replacing them :roll: (how she knows I don't know) and I kept jumping in and giving the correct information as told to me by the shop staff in the relevant shops. Don't think she liked it :shock: oh I am naughty ha ha :lol:.

    Aidan the toasties were lovely at breakfast time. the heating did turn on when it was supposed to today so it looks like the batteries were the problem. well I sincerely hope so or I will very likely scream as it is always me that has to do the call out because Mr T will always say the contract you ring cos the contract is in your name. And of course I had to miss my weigh in because he was out in the morning so was not a happy bunny yesterday. The chip buttie was actually a seeded bap but it had 5 fish fingers and baby gem lettuce.


    Joan I agree with you about the chip buttie 100% I so enjoyed it and did not feel guilty at all.



    Barbara yes heating all working ok think the engineer who came out yesterday hit the nail on the head when he changed the thermostat batteries as it has gone on twice at the correct times.


    Wow Kath sounds as though you had a very busy day. that Vegan pumpkin cake just asking to be eaten.

    ToniYes it was the nightmare that drove me to find solace in the chip Buttie. to be honest the engineer yesterday was not at all impressed that the meter fitter had taken 2 hrs to do the job on Monday.

    The sealant is really good, it has all been over painted now, with the exterior paint, all looking good, nice and watertight again. Park homes tend to expand and contract a little, only a mm or so, but it is enough to get little cracks in the joins at the window edges.

    My first attempt at knitting was a grey jumper for me. By the time I had finished you could fit a family of four in it :lol::lol::lol: The total opposite of your size 6 :lol::lol:

    Dad is not doing too bad. He enjoyed the T room visit, he had scrambled eggs on toast, B had a toasted T cake and I had my usual scone with all the trimmings, plus lots of coffee of course :D:D
    We picked up his prescriptions, which are now in weekly blister packs, makes things much easier for him.

    Not really into Gok or David, think I'll stick with the lovelies in the wildlife park. The Manatees and Dugongs are getting on quite well, although they are quite reserved (unlike our Meercats and Bushbabies).

    Martin has been head hunted by a private clinic. He was on a higher pay grade, but they've changed the pay scale so now he is being paid the same amount as cleaners. :o So I don't blame him.

    Can't believe that lady has never felt any pain - ever. She can swap with any of us if she fancies trying it for a while. Form a queue behind me. :lol: :shock:

    Trout kedgeree Category: Main meal, Breakfast | Serves: 2

    Prep time: 25 minutes | Cooking time: 40 minutes

    INGREDIENTS 2 eggs

    150 brown basmati rice

    1 tsp medium curry powder, or to taste

    1 tsp smoked paprika, or to taste

    1 low-salt vegetable stock cube, dissolved in 600ml boiling water (Use a gluten-free stock cube if following a gluten free diet.)

    2 shallots, peeled and diced, or 1 small onion, peeled and chopped

    100g frozen peas

    50g fresh shredded kale

    260g trout fillet, skinned and cubed

    60g cherry tomatoes, halved

    2 tbsp 0% fat Greek-style natural yoghurt

    1 tbsp fresh parsley, chopped

    1. Bring a pan of water to the boil, gently lower in the eggs and simmer for seven minutes, drain and place under cold running water for two minutes. Peel and set aside.

    2. Place the rice in a pan with the curry powder and smoked paprika. Stir well, then add the stock and diced shallots. Bring to the boil, reduce the heat, cover and simmer for 20 minutes. By this time a lot of the liquid will have been absorbed.

    3. Add the peas and kale, and stir well. Cook covered for a further five minutes, toss in the cubed fish and halved tomatoes, and cook for a further five minutes. If freezing, pack into a suitable container and freeze (then add the yoghurt, parsley and eggs when you have defrosted and reheated the dish).

    4. Remove from the heat and gently fold in the yoghurt and parsley. Divide between two dishes and top with quartered boiled eggs to serve.

    Tickled you did it Toni, my gigantic jumper. It started off fine, fitted ok at the top and the shoulders, then it went into a huge bell shape and the sleeves were long enough to be troosers :lol::lol::lol:

    I did get better, my Mum loved the cardigans I knitted for her, she wore them all the time t4591 t4591 One of the ladies on nights, she used to sew up for me.

    That's ok Kath, you like to paddle with the manatees and the dugongs in the big pools, they do get on very well together, lots of room to swim steadily along. They are very quiet and contemplative, very soothing to the soul.

    I was reading about the lady who does not feel any pain. Not a condition I have come across. Neuropathy is the nearest, which I have in my hands and feet, but not to the point of feeling no pain at all.

    Hi Barbara - I have been looking up about the condition where a person does not feel pain. Congenital analgesia - needless to say, as children, they are at a super high risk, as they break bones and are not aware, as there is no pain. It is a rare condition without a doubt.

    You are very welcome to the oaty breakfast and the white chocolate cake - enjoy.

    Sorry, feel really yukky. Can only blame MTX but why now after all these years, and such a low dose, I only take 3 tablets/ Used to have 25mg injections. Anyway, can't stop as feel really rotten sorry my lovelies.

    She's back from Lytham they had a great time collected some sea spray (not sure why they were too late for mist).

    She's supervising Bessie Bott who had been poorly due to the work done in the garden garage summerhouse etc. Because the grass is long she keeps banking bless her.

    Glad you enjoyed the eggy bread, with tom sauce, wonderful. Any tomato sauce is good for us, less sugar the better, but all contain lycopene which has significant health benefits :)

    The puskins had a lovely time at Lytham, gathering sea spray and some seaweed, for the nymphs. Mackerel latte's and a stroll around the boating lake, taking in the air. Mother has been quite vocal, saying how "spechall" the sea's are.

    Bessie bot is not having a good time then :roll: :roll: :? with recent works upsetting the patch of cutting and preening. Sleek will keep an eye on her :? :? :? :animal_busy:

    Hope the washing dried to perfection, a quick whizz in the tumble dryer, to "air" ones delicate garments :)

    Ingredients for Peach Pie

    1 (15 ounce) package pastry for a 9 inch double crust pie1 egg, beaten5 cups sliced peeled peaches2 tablespoons lemon juice1/2 cup all-purpose flour1 cup white sugar1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1/4 teaspoon salt2 tablespoons butterAdd all ingredients to list

    Preheat the oven to 450 degrees F (220 degrees C).
    Line the bottom and sides of a 9 inch pie plate with one of the pie crusts. Brush with some of the beaten egg to keep the dough from becoming soggy later.
    Place the sliced peaches in a large bowl, and sprinkle with lemon juice. Mix gently. In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt. Pour over the peaches, and mix gently. Pour into the pie crust, and dot with butter. Cover with the other pie crust, and fold the edges under. Flute the edges to seal or press the edges with the tines of a fork dipped in egg. Brush the remaining egg over the top crust. Cut several slits in the top crust to vent steam.
    Bake for 10 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C) and bake for an additional 30 to 35 minutes, until the crust is brown and the juice begins to bubble through the vents. If the edges brown to fast, cover them with strips of aluminum foil about halfway through baking. Cool before serving. This tastes better warm than hot.

    Hi Joan and Sue - the EU have decided that the clocks will not change, by 2020 in Europe, just Britain that is keeping the changes, all to do with daylight hours, brighter in winter, for schools etc. It was done for the war as I recall, to give more daylight for farming etc.

    Oh, the GTN sprays, well it is something from the GP, if I use a spray more than 4 times a week, I have to go see him. Some weeks I don't need it, some weeks I need more, Angina is a very unpredictable creature. I will get to see him next week, by hook or by crook......... :D:D

    10 years younger was great. Have you seen the new SYTTD Lancashire with Gok. A very emotional one on Friday. Just watched one from the states, DRAG me down the Aisle. Amazing, if you can get it on catch up, well worth watching.

    B is busy sorting the tv in my bedroom, our neighbour had a tv box, gizmo thing........whatever it does, he bought it then could not work it out, so we said we would have it, now, getting it to work...............another matter, slowly getting there..................

    Glad to hear that Niamh was there with Daddy, then off to the fair, how wonderful. Does the noise bother her at all, just wondered, as they can be pretty rowdy places.

    Dad can fall asleep on a washing line, always has done. How I envy people who can do that............ :roll: :roll: the endless nights of laying awake, ran into months and years of barely sleeping at all.
    I am uber grateful that the GP and Cardio are more than happy for me to be on night meds.

    I cannot remember the last time I had eggy bread, it must be decades ago.

    Aiden thankyou for the lovely mothers day breakfast much appreciated.. :D Niamh is home now..we sent her with pancakes she wanted to make mum them this morning..she is so lovely..she has head phones for some noise but its strange she takes them off when on the fair..it just goes to show what distraction can do..the excitement overrides the noise :) I am glad to hear you are not poorly ..and can imagine how unstable angina is..
    Now SYTTD I will have a look on catchup ..sounds so good having them both together :D
    Thankyou for all the hugs and sparkles..our BIL is very poorly..he has had the prostate cancer for over ten years now I think him being stubborn kept him going..his daughter has had something wrong with since she was born...and been turned down for PIP twice..she is on medication and does have a social worker...I do love the photo you put on facebook of you all.. :D
