Sleek is loving it :animal_busy: she's not long back from her trip out with Tosca collecting mists. Mother was awake this time and loved the sunrise(that was early!) Plenty of rich quality mists collected but the fishy breath makes your eyes water!
Hope the family have a good journey home after visiting Dad's home and that you all enjoy the GC

I'm sitting in my chair on the laptop, the sun is pouring over me but am I warm? Not one bit - I'm so cold, but my temp is normal. Mince Pies (smothered with some of Toni's cream.)
SERVES: 12
Ingredients:
75g (2.6oz) dried dates
75g (2.6oz) sultanas
50g (1.7oz) cranberries
A medium apple
A large carrot
300ml (10.5fl oz) orange juice
1tsp ground ginger
1tsp mixed spice
1/2tsp cinnamon
2 tablespoons breadcrumbs
1 tbsp ground almonds
3 sheets of filo pastry
Directions:
Roughly chop the apple and carrot (no need to peel the carrot if it has been scrubbed and is organic). Put them in a food processor along with the dried fruit, juice and spices. Pulse until the mixture resembles fine breadcrumbs.
Transfer the mixture to a small saucepan and simmer gently for 20 minutes, stirring occasionally. The mixture should thicken up and smell slightly caramelised. Take off the heat and stir in the breadcrumbs and almonds. Allow to cool. You can keep the mincemeat in the fridge for 2-3 days or in the freezer for up to 6 months.
Lay the three sheets of filo pastry out on a large board. Cut the sheets into 12 squares using kitchen scissors (this should give you 36 individual squares when you separate out the layers).
Spray the entire top layer with oil spray and then peel off each individual square of pasty and press, oily side down, into a muffin tin. Spray the next sheet with oil and repeat the process but stack the square at an angle so you are forming a star shape. Repeat with the final layer.
Fill the pastry cases with a heaped teaspoonful of the mincemeat and bake at 180C for 10 minutes or until the mince pies are golden.

Morning all sorry this will be short they are not moving our BIL..and have stopped the fluids in his drip but they will still give him pain relief..our Nephews has been there all night ...so we are off to consle his daughter ..she lived with him and has social phobia and many other things so she is scared ..

Talking of which, the farmers have been very busy in the fields between here and Skipton, absolutely soaking them in slurry - oh my, I was nearly Dad said, oh, the lovely smell of the countryside :shock: :shock: :shock: :shock:
We went round to Dads, then family arrived, had a quick natter, then hugs and kisses and they were on the way home. I bet it takes them nearly 6 hours..................going down the M6, which can be a pain at the best of times............. :? :? :roll: :roll: Won't see the kids till October BIL will be up on his own in July though.
The GC was very busy outside, room to spare inside, so that was good. I had curried sweet potato soup, oh it is wonderful - brought me out into a lather though............. :roll: :roll: :roll: with chips, then a scone, with Rhodda's Dad had soup and an Eccles cake, B had his fav, scrambled eggs on granary toast and chips
Two very strong coffee's each.............I had to waft myself by this point :roll:
Ice cream cake is just the job. We bought some magnum's in Sainsb (their own make).

Time I was pottering about. Hot weather plays havoc with the bones / joints.........tramadol increase on the cards.
Sleek and Mother are going out in the dark, to gather dew, whilst under the orange moon..........they will wait until we are all asleep, then Sleek will pick Mother up, with her broomstick on silent mode.
Apparently the orange moon has very magical powers - the light coming from the moon has to pass through more of the atmosphere, which gives it the colour change. Mother gave me a lecture on the moon, its formation etc etc :shock: :shock:

Still no temp, and I'm not cold. I think I'm just having a massive flare but I can't decide what's flaring. RA, Sjogren's, Vasculitis or maybe it's somthing I don't yet know about - Fibro maybe? Most of my pain is in my muscles around my hips and ribs.
Oh those Baked Broccoli Patties look so yummy. I don't actually like Quorn, Chris likes Quorn coctail sausages - yuk - although I quite enjoy Quorn mini eggs. But fish fingers - bleugh.
Soicy caulifower and chickpea tews
1 head cauliflower, cut into bite-sized florets
4 Tbs. olive oil
2 1/2 tsp. ground cumin
sea salt
1 large onion, finely chopped
2 cloves garlic, minced
2 Tbs. tomato paste
1 tsp. ground turmeric
1 tsp. ground cinnamon
1 tsp. fennel seeds
1 tsp. cayenne pepper
2 cups cooked (or canned and rinsed) chickpeas
juice of one lemon
black pepper
1/4 cup chopped coriander, to serve
1/2 cup crumbled feta cheese, to serve
Preheat the oven to 200°C/400°F. Toss the cauliflower florets with 2 tablespoons of the olive oil in a large baking pan. Sprinkle with 1/2 teaspoon of the cumin and a pinch or two of sea salt and roast for 20-30 minutes, until very tender and starting to brown all over. (Stir once or twice to ensure even roasting.)
Meanwhile, heat the remaining 2 tablespoons of olive oil in a large non-stick saucepan and add the onion. Cook for 8-10 minutes over medium heat until soft and golden. Add the garlic and tomato paste and continue cooking for another minute or two, then add the remaining cumin, the turmeric, cinnamon, fennel seeds and cayenne. Cook for about 30 seconds until the spices are very fragrant.
Add the chickpeas, lemon juice and about one cup of water. Cover and simmer over low heat until the cauliflower are done; when they are, add to the pan and bring everything to a low boil. Using a potato masher or the back of a wooden spoon, try to crush some of the chickpeas and cauliflower to thicken the sauce- you may need to add more water to achieve a “stew-like” consistency.

Funny how some of us find the warm weather helps ease the ouches, whilst us two, for starters, are the complete opposite. My GP always thinks I will be better in the summer. No, worse, but onward and upwards................

Hi Joan and Sue - don't worry, I am just not a big fan of very warm weather. Due to the damage to my heart, it doesn't pump as efficiently as it used to, therefore not enough blood can be circulated, to allow the natural cooling process; :roll: :roll:

Hi Kath, not quite sure which one to say. I am guessing fybro, which I can totally sympathise with. Morning all my husbands BIL passed away this morning at 3.30..Easter Sunday has well....hubbys sister died around 12 years ago now quite young with Parkinsons..
Aiden thankyou .. so glad your family arrved home safe and sound..it would have been awful being stuck in traffcie in this heat..

Toni, I wonder that too - I think it's because we're an island and all the water around us mkes it too humid.
Aidan, thank you for the wonderful scoffs. Yesterday was such a noisy day here. Two tenants in the flats took over the whole court. They covered the flats with balloons and the trees on the green too. They hired a huge bouncy castle and every child for miles around came around. They also played music full blast. Looks as though they have a smaller bouncy castle there today. :roll:
Summer fruit galette
Ingredients
Crust
1 1/4 cup all purpose flour (I used 1 cup all purpose flour and 1/4 cup whole wheat flour)
1 Tbsp sugar
1/4 tsp salt
1/2 cup chilled coconut oil (or non-hydrogenated vegetable shortening)
1/4 cup ice cold water
1-2 Tbsp of maple syrup (for brushing crust)
Filling
1 medium peach, sliced or diced
1/3 cup blueberries
1/2 cup diced strawberries
2 Tbsp + 1 tsp sugar
1/2 tsp cinnamon
1 Tbsp lemon juice
1 Tbsp cornstarch
pinch of salt
Instructions
Preheat the oven to 375 degrees (F).
In a food processor, add flour, sugar, and salt. Pulse until ingredients are combined.
Add chilled coconut oil and pulse until the mixture has a crumbly consistency.
Add the ice water, 1 Tbsp at a time, and pulse until the dough just holds together. Be sure to not over process the dough. *I used 1/4 cup of water, but you might not need the full 1/4 cup. Adjust as needed.
Form the dough into a ball, wrap in plastic wrap, and refrigerate for 10 minutes.
Remove the dough from the refrigerator and unwrap it. Roll the dough between 2 layers of parchment paper to about 1/4 inch thickness.
Using a sharp knife, cut the dough into a large circle to remove the rough edges.
Place in the refrigerator while you prepare the filling.
To make the filling, combine all ingredients (peach, blueberries, strawberries, sugar, cinnamon, lemon juice, corn starch, and salt) in a medium bowl. Gently mix until well combined and fruit is fully coated.
Line a baking sheet with parchment paper. Remove rolled out dough from refrigerator and place on baking sheet.
Place the fruit in the center of the dough round, leaving about a 1 inch border to the edge.
Fold the dough over, making sure to maintain the round shape of the galette.
Brush the dough with a bit of maple syrup and sprinkle with sugar (optional). Bake for 35-40 minutes or until the crust is lightly browned.

We are getting a black out blind for our side window, that seems to cook the lounge :shock: :shock: Awnings are good too, but we get some fierce winds here, so we will try and block out the heat from inside.
Heat is very different abroad. Well, on the west coast of the USA, it was super hot, but super dry, so it felt hot, for sure, but the humidity was very low. m0150 m0150
East Coast, that is a TOTAL kettle of fish, hot and super humid, you just melt, the minute you step outside. I did, every day.
Being an island makes a huge difference too, humid, poor air quality at the moment, pollen levels up through the roof. I guess it has been nice though, to have a full holiday week end, with good weather. I am being very generous I look forward to autumn already :? :? :roll:

Sri Lanka devastating news I am so very upset. I think Tia Paul and Charley stayed in one of those hotels (5 star!!) not me and Lucy we were in the hospital. I can picture it now and imagine how busy it will be there. I have had enough of this wickedness you know

Not as sunny today, but certainly a lot quieter. Aidan, thank you for Sleek and Mother's spells, all is quiet and peaceful. Two days of street parties with bouncy castles and hordes of kids. :roll: If we were the sort who enjoyed sitting in the sun - which we aren't - I'm with you on that Aidan. Our weekend would have been torture. But as we stayed indoors in the relative quiet, it wasn't too bad. But telly was so boring. We loved the Raspberry and peach breakfast.
Toni, the awful explosions in Sri Lanka (such beautiful and peaceful people) was really heart breaking. How can people do such terrible things.

Vegan Peanut Butter Cake
Ingredients Dry 1 cup white whole wheat flour or use whole wheat pastry flour 1/2 cup unbleached white flour or all purpose flour 1/4 tsp salt 1 tsp baking powder 1/4 tsp baking soda Wet 1 cup non dairy milk 2/3 cup coconut sugar or other vegan sugar use a few tbsp more for sweeter 1 tsp vanilla extract 1/4 cup oil 1 tbsp flax seed meal 2.5 tbsp cocoa powder 3 tbsp smooth peanut butter or almond butter or other creamy nut or seed butter vegan mini chocolate chips or chopped walnuts US Customary - Metric Instructions Preheat the oven to 350 degrees F / 180ºc.
In one bowl, whisk in all the dry ingredients. In another bowl, mix the non dairy milk, sugar, vanilla, oil and flax and mix until sugar is fully dissolved. Add dry to wet and mix until just about combined. Transfer half of the batter into the other bowl. Sprinkle cocoa powder to one bowl and mix until just combined. Add 2 tbsp chocolate chips (optional) and fold in Soften the nut butter on stove top or microwave, then add to the other bowl. Mix to combine. Grease or line a medium loaf pan (8.5 by 4.5 inch) with parchment. Add half the chocolate batter and spread with a spatula to cover the base. Then add the peanut butter layer and lightly spread with the spatula. Then chocolate then peanut butter. Sprinkle chocolate chips or walnuts on top if you like. Bake at 350 degrees F / 180ºc for 45 to 50 minutes or until a toothpick form the center comes out clean.

Aidan I could smell the icecream and peachy muffins thankyou..sorry you had to keep getting up to check the alarm of dads..gosh that must be so scary... :shock: ..hopefully all is well now..and you were off to the GC like you say most will be outside..we did get our MP to write a letter for our nieces PIP and her gp..this was on her appeal but to no avail..she did have a social worker but she stopped her coming so that didnt help..there must be so many people with these sort of problems going through the same.. :x

I bet you have had a long day, you will be exhausted and worrying too.
Your poor Niece, being so frightened of living on her own. Does her Brother live nearby? I know it is early days, but maybe a referral from her GP, back to Social Services, or the community mental health team, would not go amiss.
A willingness to let people help, will be a great benefit to her, slowly to build her confidence, after what is a life changing event.
PIP can be approached at a later stage. Shocking, as you say, just how many people with mental health issues, go under the radar and are not able, or cannot get the help, to fight their case. Makes me so upset. So many disabilities are invisible to others.
