    Oven roasted breakfast tatties lovely very Scottish Aidan thank you very much :)

    Glad you made extra Damson crunch cake for the others - we finished off the whole tray bake :shock: :oops: I cannae believe it :shock:

    Today the tiles are going up in the kitchen then the mess will be over I hope :roll: I have had to add more heating!! it's getting urgent the tiler's left the door open to do his cuts.

    Oh yes the pusskins have pendent crystal balls as well as 'their' larger ones. Sleek said that really Tosca's is Daddy 1's :? She was out early doors only took Oreo so he could get some practise in. She mentioned Harry and goodness me, but Oreo was quaking in his boots! They took your advice and tried out the Chase and yes she is confident he will make an excellent quidditch player :D

    Then all kits collected and off to Hogwarts for this next half term. they will be back tonight having done a 7 weeks Hogwarts time, but their parents won't even have missed them.

    Thank you for the healing energy I wafted some Paul's way and think it helped. He was off at 4 am today can't remember where :?

    I want that bed at the hotel - with my own pillow though.....yes I though the same about the cig. Would they have got 'caught' I wonder...

    What a day. Winders been cleaned, so problems for Chris unlocking and locking the back gate. Haven't seen Holly as it's half term and I wanted to check if she will pop to the shops for us tomorrow but I can't get over to her flat. And the lovely Julia brought my eye drops over. Only 2 weeks late - not Julia's fault. :o

    Barbara, nice to see you bright and early today. Glad to hear you brother is in good spirits and hope he remains as well as can be through his treatment trial. How is Niamh today? My cough isn't too bad thank goodness. I hope she enjoys the GC. I really miss popping in Bon Marche. I now shop at George online, they do trousers in different leg lengths too, which is good for us shorties. :lol:

    Toni, are Dog's Trust drivers a bit like the AA? Do they salute each other when passing by? I remember the AA even saluted drivers with a members badge on their car too. Dad was a member of the RAC because I liked the badge better. :lol:

    Vegan Mushroom and ale pie
    Ingredients
    15g/½oz dried mixed mushrooms
    250ml/9fl oz just-boiled water
    4 tbsp sunflower oil
    300g/10½ oz shallots, peeled and cut in half if large (try and keep the root intact, so they keep their shape)
    1 medium onion, thinly sliced
    2 garlic cloves, crushed
    400g/14oz mixed mushrooms, chestnut, button, shiitake, portabello, sliced or quartered if large
    330ml/11fl oz pale ale (vegan)
    1 vegetable stock cube
    2 tbsp tomato purée
    2 tbsp redcurrant jelly
    1 tbsp soft light brown sugar
    1 tbsp fresh thyme leaves or 1 tsp dried thyme
    2 bay leaves
    3 tbsp cornflour mixed with 3 tbsp cold water
    180g/6oz cooked and peeled chestnuts (vacuum packed is fine)
    flaked sea salt and ground black pepper
    For the vegan pastry
    300g/10½oz plain flour, plus extra for rolling
    1 tsp fine sea salt
    100g/3½oz sunflower oil
    5-6 tbsp cold water
    1 tbsp aquafaba (canned chickpea water) or plant-based milk, such as soya or almond milk
    Recipe tipsHow-to-videos
    Method
    Put the dried mushrooms in a small bowl and pour the just-boiled water over the top. Set aside.

    Heat 2 tablespoons of oil in a large non-stick frying pan. Fry the shallots and onion over a medium heat for 10-12 minutes, or until softened and lightly browned, stirring occasionally. Add the garlic and cook for a few seconds more. Tip into a bowl and set aside.

    Heat the remaining oil in the same frying pan and fry the mixed mushrooms for 5 minutes, or until lightly browned.

    Stir in the soaked mushrooms and their liquor, the ale, crumbled stock cube, tomato purée, redcurrant jelly, brown sugar, thyme and bay leaves. Add the shallots and onions back into the pan. Season with a good pinch of salt and lots of ground black pepper.

    Bring the liquid to a gentle simmer and cook for 15–20 minutes, stirring occasionally. Mix the water with the cornflour in a small bowl until smooth, and stir into the mushroom mixture. Cook for 1–2 minutes or until the sauce thickens, stirring. Stir in the chestnuts and season to taste.

    Spoon the mushroom mixture into a 1.5 litre/2½ pint pie dish and leave to cool before topping with pastry.

    Preheat the oven to 200C/180C Fan/Gas 6.

    To make the pastry, mix the flour and salt in a large bowl. Add the sunflower oil and rub into the flour first with a fork and then with your fingertips until the mixture resembles breadcrumbs. Don’t let the mixture come together in a ball, it should remain in damp, flaky pieces.

    Add the cold water and mix with a fork and then your hands until the dough comes together and forms a smooth ball.

    Dust a work surface with flour. Dust a rolling pin with a little more flour, then roll out the dough until around 7.5mm/⅜in thick. Cut a circle of pastry that is around 3cm/¼ in larger than the pie dish containing the filling. Reserve the trimmings for decoration.

    Brush the rim of the pie dish with a little aquafaba or plant-based milk and place the pastry on top. Press the pastry edges firmly to seal and trim off any excess with a knife. Brush the pastry all over with aquafaba or milk.

    Use the trimmings to make decorations for the pie. Brush with more aquafaba or milk.

    Bake the pie for 45–50 minutes, or until the pastry is pale golden brown and the filling is hot. Serve with freshly cooked green vegetables and mash.

    Recipe Tips
    You can use a sheet of ready-rolled dairy-free puff pastry instead of the homemade shortcrust pastry if you like.

    So Oreo is in awe of Mr Potter, he is really kind, but respect where it is due of course.

    I think all they can do in a hotel is kindly ask people not to smoke, there is a fine as far as I know, but no one really gets into that much trouble. Owners of bars etc can receive a fine, if they allow smoking indoors.
    I wonder what make of bed it was, in the hotel?

    Dads own GP is off until Thursday, the receptionist (who is our fav one) booked him in for Thursday morning - no bleeding for 24 hours plus.
    She could see from his notes that Dr R wanted to see him, so she made an "executive decision" :o to open up an appointment (one that they normally keep aside for urgent cases) well, bleeding is urgent, so that's fine :D:D

    The GC was very nice, busier than normal, with it being half term. I had a cauliflower cheese pot - which was cold in the middle - so that went back, they made a fresh one, by which time B and Dad had finished their meal :roll: :roll: very rare they get things wrong.
    Then I had a Ferrero Rocher Cake - OMG it was amazing, here is a picture of it

    Evening all
    Just a little update on life here we have had quite a bit of this stuff t111055 t111055 t111055, so ouchies are a bit more than usual at the moment but I still plod on. We have still our usual busy selves. Should have had the usual monthly church meal out last Thursday but a husband a wife who usual come we’re away on holiday, Mr then got a text from another guy who said he couldn’t get there, so we were left with Mr t myself and one other lady. So Mr T cancelled with her. Mr t was crafty though because if we had cancelled the table he would have had to pay £10 per head that would have cost him £50 so he changed the booking to 2 people and we had an extra meal out on our own. It made a great change. Knit and natter and coffee with Friend went ahead as usual.
    I will post pictures of Lille with her medals and trophy when I have sorted them on my i-Pad also the cardigan for Rubie when I have sorted that one out too.
    I am loving the Autumn pictures Aidan. Sorry to hear Dad is still having bleeding. That cake looks good I like Ferreo Rocher Kath Sorry to hear you are not well (((()))).

    Mr T has just 3 days till he goes to see Kian. He goes on Thursday morning and comes back Friday evening. So I have 2 days to myself . However they will still be busy as Will be at the local MS group with the cards Thursday afternoon and I am treating youngest daughter to a meal out in the evening, and of course knit and coffee with friend Friday afternoon.

    Carol I had a tiny feeling you might enjoy a little 'me time' while Mr T is away in Margate :wink: When Paul is on site I don't mind for a day or two after that I start to miss him :shock: You'll be busy at any rate with the MS group and treating your youngest to a meal out.

    I know the space/time continuum malarkey the cats all understand it but we don't need to apparently. I think it's best that Oreo is respectful to Mr Potter. Sleek dropped the kits off and had another coffee in the staffroom (a takeout for Tosca) and told 'Harry' all about Oreo :wink:

    Of course bleeding is urgent! I am very pleased your 'contact' sorted an apt out for Dad for Thursday :)

She brought us a HUGE homemade cheese and onion pie, from the Deli - will be having that today, for supper. There will be enough for two meals - mmmmm, with some chips - gorgeous. Very kind of her t4591 :D:D

    I am told the glowing drink was to ease your elderly pusskin's bones as well as to give her bee yew tea full dreams :D

    A fire-side picture is just perfect I almost lit ours myself yesterday I hope today is a little warmer, but suspect not. :?

    The lane is very muddy and slippery ATM with the pumpkins being ready for families to come and pick so loads of extra cars making a mess from the field to the lane :roll: Now if that gets icy..... :?

    I rang dad this morning, no reply. So I thought he might be in the garden, I'll give him a few mins then try again. Still no answer. So I rang Anita. He's in hospital! :shock: His blood test results seemed to indicate he has a kidney problem so they rang him to tell him they were sending an ambulance. He rang Anita, who said I'm coming over, if they arrive ask them to wait a bit until I'm there and I'll come with you. She had plenty of time as they took 4 hours! :roll: This was yesterday, Anita went with him and they admitted him to a ward immediately. As Anita didn't get back until late she didn't ring me. When I rang her this morning she was trying to get through to his ward using her mobile. I'm waiting for her to get back to me when she has some news. :?

    Toni, the spid world is a very close community, so I expect they do know Flo and Clarrie. It's half term this week, but dear Holly still went to the shop for us, bless. Her dad took her in the car. She had the little'un with her. She had teething problems which made her feel as though she had a cold. I found out her name is Lavay, but Holly calls her Vay.

    Carol, gentle (((()))) for the ouchies. The damp and rain really seeps in where you don't want it to seep. :cry:

    Aidan, I'm drooling over the cake, it'a wonder there's owt left mi duck. Holly came back at 5pm yesterday so she might have had the day out with family. She was taken to the shop by her dad this morning. I gave her a hug for being so kind. You'll have got me FB post about me dad. b0015.gif


    Asian Noodle Salad with Peanut Ginger Sauce
    This Asian Noodle Salad is loaded with so much flavour and is amazing for an easy lunch! It's tossed in a creamy peanut ginger sauce!
    INGREDIENTS
    Noodle Salad
    8 ounces noodles (soba for gluten free)
    1 medium green or red bell pepper (96g), thinly sliced
    1 large (106g) carrot, thinly grated
    ⅓ cup (51g) red cabbage slices
    Peanut Ginger Sauce
    1/2 teaspoon fresh ginger
    1 tablespoon maple syrup
    3 tablespoons liquid aminos
    3 tablespoons warm water
    1 tablespoon rice wine vinegar
    1/2 teaspoon sesame seeds
    1/3 cup natural peanut butter (smooth)
    1/4 teaspoon crushed red pepper flakes
    Juice ½ lime (optional)

    INSTRUCTIONS
    Peanut Ginger Sauce
    Whisk all the ingredients together in a deep bowl until combined. Set aside until ready to use.
    Noodle Salad
    Allow a pot of salted water to come to a boil. Add the noodles and cook and drain and cool according to your package's directions. Allow noodles to cool completely, and drain off as much water as possible.
    In a large bowl, add the noodles, veggies and the peanut ginger sauce and toss together to combine. Taste and adjust flavour according to your liking. Serve and enjoy!

    A belated hello to all. I feel that I'm getting to know you and have been thinking of you lots along with the different difficult issues so many are currently facing.

    We're just back from a week chilling out in the Wolds, north and south of the Humber - an area we didn't know at all well. Took my trusty battery-powered wheelchair in its little trailer so enjoyed peaceful walks with husband and hound and did some interesting exploring. Now getting back to 'normal' with a large pile of washing almost finished.

    Took laptop with us so I've continued to read and be inspired by your news but have reached the conclusion that I don't really have anything of value to add just now so I won't try to contribute regularly to your online conversations although I will still read them - and tuck into the cafe's delicious calorie-free cakes!

    It's amazing how much I learn about positive attitudes to life from your writing and I'm glad to be able to read it all - and to thank you! It certainly helps keep things in proper perspective whilst knowing there is an underlying acceptance that, to a greater or lesser extent, we are all in the same ouchie boat.

    I'm fortunate in that my daily life is pretty full but can see that, in time, if my mobility is further compromised I shall be more than pleased to be a regular part of a chatty thread on the VA website.

    To those who have continued to think of me that is much appreciated. I don't yet have final result of the MA course but have been awarded an encouraging mark for my dissertation so all should be well. I feel very pleased to have completed it as a 73 year old with no first academic degree. (I qualified as a PE teacher just before the BEd was introduced at 'my' college and never felt the need to return later for the extra year.) I've also had two shoulder ops - thankfully both on my non-dominant side - during the three years of the course so it hasn't all been plain sailing but I have ended up with a new, more serviceable joint to add to the mix.

    After that it's odd to have no major project underway so I'm rather a rebel-without-a-cause at the moment 'tho I've no doubt that something will soon come along to rock my boat! There is plenty in this world that needs challenging!!

    Even if you don't hear much from me please be assured that you are in my thoughts.

    We are all indeed, sailing in the same boat, with varying degrees of ouching.
    All of us have been and continue to go "through the mill" and day to day life can be very difficult to contend with. But, that inner voice keeps us moving forward, even on the darkest of days.

    It is good to hear that your days are pretty well occupied and long may that continue.

    Having an encouraging mark for your dissertation is excellent - You will have made top grade and all credit to you both. Having two operations on your shoulder, whilst carrying on with the course work - wow, that's amazing.

    You are quite right, there is so much that needs challenging in this world and I have no doubt that you will embark on a new venture. I do love your writing style, it is very amiable and engaging. :)

He helped with one and has given her a tip where to go for another.... :? How did she get through that mist :shock: it's a real pea-souper!

    Sue, oh my goodness! They're stopping your D.A.R.That is a lifeline to you and probably many others. Mind you I'm not surprised, ours came to an end some years ago. We were fairly able bodied then, so never used it any way. But if we had, and become dependent on it, we would have been devastated. I hope Joan's appointment is a success, is it about her ankle?     I rang the hospital to ask how dad was. He's been moved. :roll: So I rang Anita as she will be visiting him later, so now she knows which ward to go to. The nurse went to ask him and he says he's all right. She also said he could be in for 2-3 days, so perhaps things are improving. Anita will find out more later.

    Toni, yes I was so pleased to see Holly heading our way. I gave her a hug. We've organised an Amazon order to our house for chocolates, crayoning books and crayons. And we already have a Countryfile calendar too. I have one every year so I ordered 2 this year. :D
    Dad will be 89 in November, so just like Aidan's DIL, anything is a worry at their age. He has a urinary infection and is dehydrated as he is passing too much urine, but no blood thank goodness. But he sis have a prostate op a year or so back. I hope you don't have too long to wait for the leccys.

    Asian Garlic Tofu
    Asian Garlic Tofu is a vegetarian meal full of salty, sweet, and spicy flavor.

    Ingredients
    1 package super firm tofu
    1/4 cup Hoisin sauce
    2 tablespoons soy sauce
    1 teaspoon sugar
    1 teaspoon freshly grated ginger
    2 cloves garlic, minced
    1/4 teaspoon red pepper flakes
    1 tablespoon olive oil
    1 teaspoon sesame oil
    green onions for garnish
    rice for serving
    Instructions
    Remove tofu from packaging. Place about 4 paper towels on a plate. Set tofu on top of plate and cover with more paper towels. Place a cast iron pan or something else that is heavy on top. Let sit 30 minutes.
    In a medium bowl, stir together Hoisin sauce, soy sauce, sugar, ginger, garlic, and red pepper flakes.
    Cut tofu into bite-sized pieces. Place in bowl with sauce and toss to coat. Let sit 30 minutes.
    Heat olive oil in a medium cast iron pan over medium-high heat. Once really hot, add tofu. Once nicely seared on the bottom, flip over. Continue to cook until seared on bottom.
    Drizzle with sesame oil and remove from heat.
    Sprinkle with green onions and serve with rice.

    Hi to all - time has run away with us today. Went shopping with Dad, came back, B swept up all the leaves from Dads steps, patio's etc, so when it rains, it is not slippy for him.

    While he was doing that I was "immaculising" in Dads kitchen - you enjoy your fish (from the chippy) while I make a coffee for us all - during which time I had done the worktops, filled the washer, started that on a hot wash, sanitised everything in sight, then made coffee - He kept popping in, that's enough now, you will have had enough, rest - no Dad, we stop when things are done. You rest.

    Anyway - all leaves sorted, kitchen ok, washing done :) Happy bunny :D:D

    Then come home and start again :shock: :shock: :roll: :roll: Housekeeping was in early, aka Bill, beds done, washing all but done - it's all go..................

    Hilde was going to have a polish, but, neither of us have got the oomph, I am already having payback with the facet joints screaming at me. But, these things you have to do

    We have to get a BP machine, but there is no rush, his BP is fine at home, he has had two 24 hour tests and they were perfectly normal.

    They keep my pulse at around 50 ish, with all the drugs. :roll: :roll: it has been down to 35 which did cause some ALARM :shock: :shock:

    By the time I had sorted the wifi on Hilde, she gave me a 3 minute warning, start the engine or the system will turn off :? :? :roll: :roll: oooh, get you :lol::lol::lol:

    Not long until the electickery things are done, then the furniture and the finishing off bits, which you will love doing :):)

    Mother was very grateful to Sleek and Silver for the Unicorn Hair, kindly given by Silver, to add to the spell - Mother let is slip, about that ingredient.

    The next addition, has to be gathered from Platform 9 3/4 apparently - your guess is as good as mine :shock: :? :?

    Sleek has the all seeing eye on her broom, "didn't we know" said Mother, "don't you have one in the Karr"? Errrrrm, well, kind of, sort of, the car knows where we are and where we are going and can see things in front of her - she wasn't impressed, hoomans she said, so far back in time, compared to puskins :o:o:lol::lol: She's a right Granny grumps sometimes - bless er t4591 t4591

    Hello all sorry I have been missing again..Niamh has gone home now, and is away for a few days with mum..she loved the GC its so big though so I ended up getting one of the buggy's..and Niamh on my knee..I promise I did read every post has I always do but cant remember it all :? :?

    VEGAN PHO RECIPE
    When seasonal cold finds you unprepared with no emergency cans of noodle soup on hand, this is the soup to turn to.

    It’s a light, Asian-inspired pho made with fresh veggies, noodles, broth, and a few toppings.

    HOW TO MAKE PHO SOUP VEGAN
    Step 1. chop and sauté veggies (mushrooms, cabbage, onions, celery, garlic, ginger)

    Step 2. add water and simmer 20 minutes

    Step 3. strain broth

    Step 4. remove veggies (optional)

    Step 5. pour over cooked noodles

    PHO SOUP RECIPE INGREDIENTS
    white or brown rice noodles (I used Soba here)
    oil
    green onions
    mushrooms (chopped)
    reduced-sodium vegetable broth

    HOW DO YOU MAKE PHO?
    Step 1. soak or boil noodles

    Step 2. saute veggies

    Step 3. add broth to veggies

    Thank you everyone for asking about me I have had a sore throat for a few weeks so I have to have an Endoscopy where a camera is put down your throat I've had it done before I had a build up of acid.
    I hope everyone is having a reasonable day.

    All ok, Dad was ok at the Drs, more bloods done and referral sent for physio and OT to assess, regarding falls that he has - even though he says he rolls like a parachutist :shock: :shock: :shock: :?

    We had a nice time in Skipton, it was lovely, all our fav chairs in Nero's and staff that we have known for years, so all good.

    Just run out of time.
